1/4 pound (1 stick) unsalted butter
5 cups fresh yellow corn kernels cut off the cob (6 to 8 ears)
1 cup chopped yellow onion (1 onion)
4 extra-large eggs
1 cup milk
1 cup half-and-half
1/2 cup yellow cornmeal
1 cup ricotta cheese
3 tablespoons chopped fresh basil leaves
1 tablespoon sugar
1 tablespoon kosher salt
3/4 teaspoon freshly ground black pepper
3/4 cup (6 ounces) grated extra-sharp cheddar, plus extra to sprinkle on top

Steps:

  • Preheat the oven to 375 degrees F. Grease the inside of an 8 to 10-cup baking dish.
  • Melt the butter in a very large saute pan and saute the corn and onion over medium-high heat for 4 minutes. Cool slightly.
  • Whisk together the eggs, milk, and half-and-half in a large bowl. Slowly whisk in the cornmeal and then the ricotta. Add the basil, sugar, salt, and pepper. Add the cooked corn mixture and grated cheddar, and then pour into the baking dish. Sprinkle the top with more grated cheddar.
  • Place the dish in a larger pan and fill the pan 1/2 way up the sides of the dish with hot tap water. Bake the pudding for 40 to 45 minutes until the top begins to brown and a knife inserted in the center comes out clean. Serve warm.

1/2 cup milk
1/2 cup heavy cream
1/2 cup white cheddar cheese, shredded
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees F. Grease casserole dish.
  • Shuck the corn and cut all kernels off with a knife into a bowl, making sure to keep all of the runoff juice from the corn. Reserve.
  • Mix together the milk, heavy cream, cheese, cayenne pepper and eggs. Add in the reserved corn, cheese, cayenne, salt, and pepper. Pour mixture over reserved corn.
  • Pour into casserole dish and bake for 35 minutes or until set.

2 pounds frozen yellow corn, thawed and drained
3 tablespoons maple syrup
6 large eggs
½ cup milk
3 teaspoons kosher salt (cut in half if using fine salt)
¼ teaspoon cayenne pepper
¼ cup all-purpose flour
1 teaspoon baking powder
1 ½ cups heavy cream
½ cup melted butter, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with a silicone pad. Place an 8x11-inch baking dish on the pad.
  • Place corn in a blender or food processor. Add maple syrup, eggs, milk, kosher salt, cayenne pepper, flour, and baking powder. Mix briefly with a spatula to push down the dry ingredients.

6 ears of sweet corn
Sea salt
2 pounds very ripe tomatoes
2 cups tightly packed basil leaves
3 sheets gelatin
1/3 cup olive oil
Freshly ground black pepper
Basil sprigs for garnish

Steps:

  • Make the corn pudding: slice the kernels off the cobs with a knife into a bowl. Scrape the length of the cobs with the knife to collect the ''milk'' remaining on them. Pass the liquid and kernels through a juicer. Place the corn juice in a nonreactive saucepan and slowly heat it up, stirring frequently. As it gets close to a simmer, season with a pinch of salt. The juice will begin to thicken like custard because of the natural cornstarch. Continue to stir until it completely thickens, then remove from the heat, strain and cool. Cover the top with a piece of plastic wrap so it does not form a skin. Refrigerate.
  • Make the tomato jelly: roughly chop the tomatoes and place in a bowl. Tear 1 cup of the basil leaves. Mix the basil with tomatoes and season generously with salt. Pass through a juicer or purée in a blender. (You might have to do this in batches.) Pour the juice or purée into a nonreactive bowl lined with a kitchen towel or several layers of cheesecloth. Gather up the corners of the towel and tie with string. String the bag up carefully to the bottom of a shelf in the refrigerator so it hangs over the bowl and allows the tomato water to drip slowly into the bowl. (Do not squeeze the cloth.) Drain for 6 hours. Taste the water and adjust the seasoning with salt. Ladle out 3 cups of the tomato water into another bowl. Place 1 cup of the remaining tomato water in a saucepan and add the gelatin; let stand 10 minutes, until completely soft. Slowly heat this mixture, stirring constantly, until the gelatin is dissolved. Stir the gelatin mixture into the remaining tomato water, cover and return to the refrigerator to set overnight.
  • Make the basil oil: place the remaining cup of basil leaves in a strainer and blanch in a saucepan of boiling salted water for 10 seconds. Plunge the basil into ice water to chill completely. Remove and squeeze out the water. Slice the basil thinly and then place in a blender and turn on a low speed. Slowly drizzle in the olive oil and blend for 2 minutes. Pour the basil oil into a strainer lined with a kitchen towel and allow to drain a clear, emerald oil. Refrigerate.
  • To assemble the salad, have ready 6 martini glasses. Spoon 2 tablespoons of corn pudding into the bottom of the glass so it fills approximately 1 1/2 inches of the bottom. Spoon on top 1 tablespoon of the basil oil. Next, gently spoon on a layer of the tomato jelly about the same thickness as the pudding. Season with a grind of pepper. Garnish with a basil sprig.

2 tablespoons cornmeal

2 egg yolks

  • Heat oven to 350 degrees F.
  • Generously butter a 4 cup low baking dish (gratin dish).
  • Scrape your corn off the husks- To do this you run a paring knife down the middle of each row of corn, hold the ear over a large bowl and with the back of a spoon scrape the ear from top to bottom- this removes the juice and pulp but leaves the tough skins of the kernals behind.
  • You should have apprx 1 1/2 cups of corn pulp.
  • In a bowl whisk the flour, cornmeal& eggs until very smooth.
  • Whisk in the egg yolks, milk, butter salt& hot pepper sauce.
  • Stir in the basil& corn pulp.
  • Pour into the baking dish bake 30-35 minutes or until a knife inserted into the center comes out clean.

3 tablespoons extra-virgin olive oil, plus more for serving
2 large white or yellow onions, chopped (about 4 cups)
Kosher salt (Diamond Crystal) and black pepper
6 large garlic cloves, peeled and left whole
4 cups corn kernels (from about 8 ears)
2 cups sliced squash blossoms (from about 18 blossoms, optional)
Handful of fresh basil leaves, for serving

Steps:

  • Put 3 tablespoons olive oil in a heavy-bottomed pot or Dutch oven set over medium-high heat. When the oil starts to look wavy, add the onions and season well with salt and pepper.
  • Let onions cook, stirring, until they begin to soften, about 4 to 5 minutes, then turn heat to medium and continue cooking until onions are quite soft, about 15 minutes more.
  • Add the garlic and corn kernels, and stir to combine. Add 6 cups water and bring the mixture to a boil. Reduce heat to a gentle simmer. Taste the resulting broth and adjust salt to taste. (It should be well seasoned.) Cook for about another 10 to 15 minutes, until the kernels are tender. Stir in squash blossoms, if using, and turn off heat.
  • Working in batches, purée the soup in a blender. Pass the puréed soup through a fine-mesh strainer and into a large bowl, pushing down to press all the liquid out. Discard the fibrous debris left behind.
  • Check consistency and seasoning, and adjust as needed. (Add a bit more water if the soup seems too thick.) The soup can be made up to a few hours ahead up to this point, and tastes best the day it's made. Reheat, if needed, before serving.
  • To serve, ladle into individual bowls. Drizzle about a teaspoon of olive oil over each serving. Quickly chop the basil, and sprinkle over to finish.

1 1/2 cups sugar
1 teaspoon salt
2 teaspoons vanilla

Steps:

  • Preheat oven to 350°.
  • Grease a 10x15" baking dish.
  • Blend the corn and flour together, and set aside.
  • Whisk together the milk and eggs in a large mixing bowl.
  • Beat in the butter, sugar, salt and vanilla.
  • Stir in the corn mixture.
  • Pour the custard into the prepared pan.
  • Bake for 45-60 min.
  • until the pudding is set and golden.
  • Cut into squares and serve at once.
  • 8-10 portions.

I think everyone has their own 'corn pudding' recipe. This is mine, it's been adapted from a recipe I saw years ago in the Taste of Home magazine. It is a family favorite and a Holiday staple in our house.

1 medium onion
1/4 cup butter
2 cups sour cream
1 (15 ounce) can creamed corn
1 (15 ounce) can whole kernel corn
2 eggs
salt & pepper
1 (8 1/2 ounce) package cornbread mix, i use the 'jiffy' one
1 medium jalapeno, chopped
2 cups shredded cheddar cheese
1 tablespoon sugar

Steps:

  • In a skillet saute onion in butter, until onion is tender, set aside.
  • In bowl, beat eggs; add sour cream, both cans of corn and seasonings.
  • Add bread mix and stir until blended.
  • Fold in sauted onions, jalapeno and 1 1/2 cups of shredded cheese.
  • Transfer to 3 qt baking dish.
  • Sprinkle remaining cheese on top.
  • Bake uncovered at 375 degrees for 35 to 40 minutes until a toothpick inserted in the middle comes out clean.
  • Cool slightly and serve warm!

Number Of Ingredients 7

7 ears fresh corn
9 cups water
a 19-ounce container silken tofu
2/3 cup packed fresh basil leaves
1 cup thinly sliced scallion greens
Garnish: fresh basil sprigs
Accompaniment: jalapeño pepper sauce to taste

Steps:

  • Shuck corn and, working over a 6-to-8 quart kettle, cut off kernels, reserving cobs. In kettle simmer corn, cobs, water, and salt and pepper to taste, uncovered, until corn is tender, 10 to 20 minutes. Carefully pour off liquid from tofu. Discard cobs and transfer half of corn mixture to a bowl. In a blender in batches purée tofu with corn mixture from bowl until smooth, transferring to kettle. Finely chop basil and stir into chowder with scallions and salt to taste. Heat chowder over moderate heat, stirring, until heated through.
  • Garnish chowder with basil sprigs and serve with jalapeño sauce.
