GRILLED CORN ON THE COB

Grilled Corn on the Cob image

This Grilled Corn on the Cob is a tasty side to any summer supper. Buttery flavor with a hint of lime and cilantro give the sweet corn extra flavor.

Provided by Emily Walker

Categories     Side Dish

Time 40m

Number Of Ingredients 7

6 corn on the cob ((or as many as you are wanting to grill))
1 lime (fresh squeezed is best but you can use bottled as well)
1/2 bunch fresh cilantro (finely chopped )
kosher salt (to taste)
pepper (to taste)
1/4 cup butter
aluminum foil

Steps:

  • Remove husks from corn and thoroughly rinse each piece. Soak the corn cobs in cold water for 15 minutes.
  • Remove corn from water bath and pat completely dry with paper towels.
  • Cut large pieces of aluminum foil, one for each piece of corn, enough to completely wrap and cover each piece. Then place a piece of corn on each piece of foil.
  • Melt butter in the microwave on high for about 20 seconds, or until completely melted. Brush each piece of corn lightly with the melted butter. Then drizzle each piece with lime juice and sprinkle with cilantro, salt, and pepper. Wrap it up in the foil so all the excess juices are still closed in with the corn. (See picture below).
  • Grill over medium heat for about 20 minutes, turning occasionally, remove foil and serve hot.
  • Drizzle with a little extra melted butter just before serving.

CORN ON THE COB WITH COCONUT AND LIME

Corn on the Cob With Coconut and Lime image

Anyone avoiding dairy might notice that corn on the cob served at cookouts usually comes slathered with butter. This vegan alternative uses coconut oil to add richness, lime juice for a little acid, and finely chopped, toasted coconut chips for added texture. Mixing half of the chips into the oil helps them stick to the cob, which is smart because you'll want them in every bite. If you can't find coconut chips, toasted unsweetened coconut flakes will add a nutty flavor, but you won't get the delightful crunch.

Provided by Emily Fleischaker

Categories     vegetables, appetizer, side dish

Time 15m

Yield 4 servings

Number Of Ingredients 5

4 ears fresh corn, shucked
1 lime
4 tablespoons coconut oil
1/2 cup toasted unsweetened large coconut chips, finely chopped (or 3 tablespoons toasted unsweetened coconut flakes)
Kosher salt

Steps:

  • Heat your grill to medium-high. Grill corn, turning occasionally, until cooked through and lightly charred, 10 to 12 minutes. (Alternatively, add corn to a large pot of salted boiling water and cook for 5 to 7 minutes.)
  • Meanwhile, zest the lime. Set aside the zest then cut the lime in half. Cut one half into four wedges and squeeze the remaining half into a small bowl. Stir the coconut oil and half the chopped coconut chips into the lime juice.
  • Slather hot corn with coconut oil mixture and season with salt. Sprinkle with lime zest and remaining coconut chips. Serve with lime wedges alongside for squeezing.

CORN ON THE COB COOKED IN COCONUT MILK

Corn on the Cob Cooked in Coconut Milk image

A really simple side dish which originates from the Caribbean. My Guyanese husband introduced it to me whilst we were visiting Guyana and this is my adaptation of it. It has become a firm favourite. It's a good recipe to experiment with, changing quantities and types of herbs and spices. Low fat coconut milk can be subsituted for the full fat.

Number Of Ingredients 6

4 plump fresh ears of corn
1 teaspoon finely chopped thyme

  • Season the chicken thighs on both sides with salt and pepper. Heat a large deep non-stick skillet or casserole pan over medium high and add all 8 chicken thighs, skin side down. Cook chicken thighs skin side down for 10-15 minutes, until the skin is brown and crispy. Flip over and cook for another 5 - 7 minutes until cooked through. (You can do this in two batches if you prefer. The thighs may be crowded at first, but they will cook down.)
  • While the chicken cooks, slice the kernels off the corn cobs. To do this, stand the ear upright over a kitchen towel. Start at the end of the knife closest to your hand and let the full length of the blade slide down the cob moving toward the point. If you try to go straight down you'll get a lot of resistance. Pick up the towel and tip the corn kernels into a bowl.
  • Now hold the cobs over the bowl and using the back of your knife, scrape down the cob to release the juices and get the last bits of corn kernel out.
