CORN ON THE COB COINS
These disks of fresh corn are cooked in a foil packet on the grill. Seasoned with salt, pepper, and butter, the corn steams inside the packet and the kernel edges brown, taking on a roasted, nutty flavor.

Steps:
- Preheat grill to high. Shuck 8 ears of corn, and cut each crosswise into 3/4-inch slices. Mound the corn coins on a large piece of parchment-lined foil.
- Scatter 5 to 6 tablespoons unsalted butter over corn, and sprinkle with 1 teaspoon coarse salt and 1/4 teaspoon freshly ground pepper.
- Fold foil to form a packet, crimping edges to seal. Grill, covered, for 15 minutes.

Steps:
- Heat oven to 200C/180C fan/gas 6. Mash butter, garlic and parsley with seasoning.
- Cut 4 pieces of foil large enough to hold a cob, place a cob on each piece, top each one with butter, then seal edges to form parcels. Bake, or cook on the barbecue, for 30-35 mins or until tender.

- Boil water. Do not shuck corn. Add corn to the water and cook for 10 minutes. Strain water. Shuck corn. Serve with butter and salt, to taste.

- Boil the water: Fill a large pot with plenty of water and add the sugar, the lemon juice and the salt (the pot should be large enough so that the temperature of the water won't drop too much when you add the corn). Bring to a boil.
- Shuck the husks: Shuck the corn husks and remove the silk. You can rinse with water if some of the silk remains.
- Boil the corn: Add the corn to the boiling water and cover the pot with the lid (if the corn don't fit in the pan break it in half). When the water returns to a boil turn off the heat and let the corn cook for 7-8 minutes.
