- In a large bowl, combine the corn, red pepper and onions. In a small bowl, combine the flour, baking powder, cumin, salt and pepper; stir into corn mixture. Gradually add milk, stirring until blended. , In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop batter by 1/4 cupfuls, a few at a time, into hot oil. Fry until golden brown, about 2 to 2-1/2 minutes on each side. Drain on paper towels.

CREAMED CORN FRITTERS
Make these creamed corn fritters in a jiffy with canned creamed and canned sweet corn kernels. It's a simple snack that kids and adults will love. Fluffy and light, these are great to serve at brunch, with a salad, or as an appetizer for dinners.

Steps:
- Place the flour, baking powder, coriander, and cumin into a large mixing bowl. Use a spoon or whisk to mix the dry ingredients until well combined.
- Make a well in the center of the flour, add the corn, milk, eggs, and chives.
- Stir until the ingredients are well combined and there are no lumps.
- Season to taste with salt and pepper.
- Heat the oil in a frying pan until hot. The oil is ready when you drop a little of the batter into the oil and it starts to bubble around the edges.
- Drop heaped tablespoons of the batter into the pan, spaced about 2 cm (0.7 inches) apart, flatten the tops of the fritters with the back of a spoon. See note 2
- Fry for about 2 minutes on each side or until light and golden on both sides and cooked through. Lower the heat, if the fritters are browning too quickly to avoid burning.
- When cooked remove from the pan and drain on absorbent paper.
- Best eaten hot or warm.

- Bring a saucepan of salted water (1 tsp salt to 1 litre water) to a boil. Add potatoes and cook for 6-8 minutes until soft but not mushy. Drain well; place in a bowl and mash with a fork or potato masher. Allow potatoes to cool slightly.
- Add egg and cream, and mix well. Stir in flour, corn and coriander leaves.
- In a bowl, using a whisk for electrical beater, beat egg white until soft peaks form. Gently fold egg white into corn mixture and season with salt and pepper.
- Warm oil in a frying pan over medium fire. For each fritter, spoon 2 tbsps corn mixture into hot pan. Cook fritters until golden, 2-3 minutes per side. Remove from pan and drain on paper towels. Keep warm in a preheated 110 C oven.
- Serve with Thai sweet chilli sauce for dipping.

- Mix flour, baking powder, salt and sugar together in a large bowl.
- Gently stir in egg, milk and melted butter.
- Use a potato masher to crush about 1/3 of corn kernels.
- Fold mashed kernels into batter along with the remaining whole kernels and diced pepper.
- Heat oil and spoon mixture by heaping tablespoon into hot oil.
- Cook for 2 minutes and turn to cook reverse side until golden brown.
- Drain on paper towels and top a little sprinkle of salt.
SWEET CORN WITH PEPPERS

- Core and vein the peppers. Cut the flesh into very thin strips about 1 1/2 inches in length. There should be about 2 cups.
- Set aside. Scrape the kernels from the corn. There should be about one cup.
- Set aside.
- Heat the oil and butter in a skillet and add the scallions, peppers and corn. Sprinkle with cumin, salt, pepper and garlic. Cook, shaking the skillet and stirring, about 1 1/2 minutes.

- In a medium bowl, mix the corn, onion, chile if using, garlic, parsley and yeast flakes. Stir in the flour and baking powder. Gradually stir in the milk, mixing to combine all the ingredients. Season with a pinch of salt and pepper and stir in the lemon juice.
- Heat 1 tablespoon oil in a large sauté pan over medium-high heat. To check the heat, drop a test piece of batter in, and you should hear a sizzle in the pan.
- Spoon 1 tablespoon of the corn mixture into the pan for each fritter, leaving a little space between them so they don't stick together. Pat each fritter down with the back of the spoon so it is flatter and easier to cook on both sides. Fry until golden brown on the first side, about 2 minutes, then flip to brown the other side, about 2 minutes more.

- Prepare a paper towel-lined plate or tray and set aside.
- To a large bowl, add the flour, cornmeal, garlic, baking powder, salt and pepper. Whisk to combine well.
- Add the milk and whisk until combined. The batter should be thick, but if looks dry, add a few teaspoons of milk or oil to moisten.
- Add the corn, bell pepper and green onions. Fold with a spatula to combine.
- Heat up a Large Non-Stick Skillet over medium heat for 1-2 minutes. When hot, drizzle oil on the bottom of the pan to coat.
- Using a Large Cookie Scoop (or 1/4 measuring cup filled 3/4 the way), scoop about 3 tablespoons of batter out and into the pan (you should hear the batter sizzle). Gently press down the mound to flatten. Repeat in a clockwise pattern until you run out of room. Don't crowd the pan or they won't crisp well.
- Cook fritters for 2-4 minutes or until golden brown. Using a spatula, check under the first fritter you placed to see if it's ready, then flip and repeat on the other side. Check the rest in the same clockwise direction and flip when ready. The other side will likely cook faster so keep an eye on them. If the pan is smoking, turn down the heat.
- Place fritters on paper towel-lined plate to absorb excess oil. Repeat method until all batter is gone. Serve with dip and enjoy!

- Dry ingredients: Whisk the flour, sugar, salt, and baking powder together in a large mixing bowl. Add the corn and stir to coat in the flour mixture.
- Batter: Mix the cream and eggs together, then pour into the mixing bowl. Stir everything together until a wet batter forms. It should be a thick batter. See recipe notes.

- Bring a small pot of water to boil, then add in frozen peas and corn and boil for 2 minutes. Then drain and leave the peas and corn to cool.

- Put the corn, the flour, cornmeal, sugar, cheese, and salt in a large mixing bowl and toss well to combine.
- Mix the yolks and buttermilk together with a fork and add to the bowl, stirring with a large spoon just until there is no dry flour left, don't over mix. Feel free to add a touch more buttermilk if your mixture is very dry. It should be quite thick.
- Heat about 4 tablespoons or so of oil in a cast iron skillet. You want a good layer coating the bottom of the pan, about 1/8 to 1/4 inch deep. Heat the oil over medium to medium high heat until it is shimmering but not smoking. Test the oil by touching a bit of batter to the surface...it should sizzleon contact.
- I use my 1 3/4 inch cookie scoop to scoop out the batter into the pan, then I lightly flatten it with an offset spatula. You can nudge any stray edges into place if you like, but some love those ragged edges, they get extra crispy! Each cake will be about 2 tablespoons of batter. Note: don't crowd the pan, 3 or 4 per batch is good.
