THE BEST VEGAN BURGER
Packed with flavour, these vegan corn burgers are healthy and seriously satisfying.

Steps:
- Drain the chickpeas and sweetcorn, then tip into a food processor. Pick the coriander leaves, adding half the leaves and all the stalks to the processor.
- Add the spices, flour and a pinch of sea salt, finely grate in the lemon zest, then pulse until combined, but not smooth - you want to retain a bit of texture.
- On a flour-dusted surface, divide and shape the mixture into 4 equal-sized patties, roughly 2cm thick. Place in the fridge for 30 minutes to firm up.
- Heat a splash of oil in a large frying pan over a medium heat, add the patties and cook for 10 minutes, or until golden and cooked through, turning halfway.
- Meanwhile, click off, wash and spin-dry four nice lettuce leaves, then finely slice the tomatoes horizontally.
- Squeeze a large dollop of ketchup onto the base of each bun (toast them if you like), then top with the burgers. Layer over a couple of slices of tomato, a lettuce leaf, a few coriander leaves and finally the burger tops. Delicious served with a fresh green salad.

- In a large pot cover the garbanzo beans with at least 12 cups water. Cook over medium heat for 2 1/2 to 3 hours, or until tender. Check occasionally, as you might need to add more water.
- Working in small batches, in a blender, on either the chop or blend setting, process garbanzo beans. Blend until the mixture is a paste. Add onions, thyme, salt and pepper to the mixture; mix well. Add bread cubes and egg; mix well.
- Form the garbanzo bean mixture into patties.
- Heat oil in a large skillet over medium heat. Fry patties until each side is golden brown.

- In a large bowl, add black beans, rice, corn, seasonings, and egg. Using a potato masher, mash the ingredients until thoroughly mixed together.
- Once mashed, add the bread crumbs and mix to combine.
- Take a quarter of the mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create four patties.
- In a pan, heat a small amount of oil over medium heat. Add the patties and cook for 4-5 minutes, flip, top with a slice of pepper jack, and cook for another 4-5 minutes.
- Place patties on buns, and top with sliced tomato, red onion, avocado, and fresh salsa.
- Enjoy!

- Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir onion, garlic, jalapeno pepper, and oregano until onions are translucent, 8 to 10 minutes. Cook and stir red bell pepper and corn into onion mixture until red bell pepper is tender, 2 to 4 more minutes.
- Mash black beans in a large bowl. Stir vegetable mixture, bread crumbs, chili powder, cilantro, cumin, and salt into mashed black beans. Divide mixture into 4 patties and coat both sides of each patty with flour.
- Heat 1 tablespoon olive oil in a skillet over medium heat; cook patties until browned, 5 to 8 minutes on each side.

- Place sunflower kernels in a food processor; cover and process until ground. Remove and set aside. Place beans in food processor; cover and process until ground. In a large bowl, combine the sunflower kernels, beans, carrots, onion, flour and oil. These Chickpea Patties are slightly crispy on the outside and tender and moist and flavorful on the inside.

- Pulse the garbanzo beans in a food processor until they are chopped and resemble sand. Don't process into paste.
- Transfer the ground beans to a bowl.
- Combine the onion, ginger, garlic, cilantro and parsley in the food processor and pulse until finely ground. Do not puree.
- Add a cople of tablespoons of water if needed to scrape down the sides.
- Transfer the mixture to the bowl with the ground garbanzo beans.
- Add the coriander, cumin, salt and baking soda.
- Refrigerate for an hour or more.
- Scoop rounded tablespoons full of the mixture and shape into discs.
- Heat a few tablespoons of oil in a large skillet over medium heat.
- Place the patties into the pan and fry for 2 to 3 minutes on each side until lightly golden and crispy. Repeat with the oil and the remaining mixture.

- Soak the beans for approximately 8-10 hours and rinse and put them with fresh water every 2-3 hours That helps with the gas formation, the more you rinse. If soaking overnight, just try to change the water at least once before going to bed.
- Rinse off the beans and cook in crock pot until tender, usually approximately 6-8 hours on high. Save 1 cup of water that the beans were cooked in, drain beans.
- While beans are cooling a bit, saute' chopped onion in the olive oil, until soft and slightly golden.
- In blender, blend beans, water, and salt.
- In large bowl, mix oats and brewers yeast flakes with onions and then pour in the blended beans, into this mixture. At this point mix in parsley or any type of seasonings that you want to try.
- Bake in loaf pan, that has been sprayed with non-stick spray, in 250 F oven for 60 minutes.
- Let cool for a few minutes, then slice, these sliced patties have excellent protein. .

- PATTIES: Heat 1 teaspoon of the oil in a large non-stick pan over medium-high heat. Add the corn, shallots and oregano. Saute for about 3-4 minutes. Cool slightly, and stir in the fresh parsley. Alternatively, you can oven roast the corn and shallots if you prefer.
- In a food processor or blender, combine the garbanzo beans, French bread crumbs, cornmeal, salt, red bell pepper and 2 tablespoons of the reserved garbanzo bean liquid. Pulse ingredients until chunky. Add the corn and shallot mixture, another tablespoon or so of liquid and pulse quickly, about 10 times. Do not overprocess.
- With wet hands, form the garbanzo mixture into 6 equal sized patties, approximately 1/2" thick. Place the polenta on a piece of wax paper and dredge the patties until coated on both sides.
- Heat remaining 1 tablespoon of oil in the skillet over medium-high heat.
- Cook only 3 patties at a time; do not crowd. Cook the patties about 5 minutes on each side or until golden brown. Repeat with the other patties. Transfer to a warming tray until ready to serve.
- DRESSING: In a small, non-reactive bowl, combine the fresh lemon juice with the olive oil. Season the mixture with salt and pepper to taste.
- Toss half of the lemon/olive oil mixture lightly with the arugula (or mixed greens).
- Divide and place the arugula leaves on 6 individual salad plates. Top the arugula with the cooked patties.
- Garnish with fresh chives and serve hot. Season lightly with salt. Serve remaining dressing on side.

- Begin making these veggie burgers by first cooking the bulgur that will make these chickpeas nice and thick along with helping them bind together. For this recipe, I add the dry bulgur with 1/2 cup water in a microwave-safe bowl and allow it to cook for approximately 3-minutes.
