4 cube steaks
oil
seasoned salt
2 cups Bisquick baking mix
1/4 pound butter or margarine
1/3 cup oil

Steps:

  • Place the cube steaks in a dish in a single layer. Drizzle with corn oil and sprinkle generously with the seasoned salt on both sides. Cover the dish tightly and place in the refrigerator for 24 hours. Preheat the oven to 375 degrees F. Place the baking mix in a shallow dish. Dredge the cube steaks in the baking mix, coating well on all sides. Melt the butter with the oil in a large skillet over medium-high heat. Add the cube steaks in a single layer (in batches if needed), and cook until crisp and browned on both sides. Transfer the chicken fried steak to a baking dish. Seal with foil and place in the oven. Bake at 375 degrees F for 30 minutes or until they are tender. Serve hot with gravy, if desired.

1-1/4 cups all-purpose flour, divided
2 large eggs
1-1/2 cups 2% milk, divided
4 beef cubed steaks (6 ounces each)
1-1/4 teaspoons salt, divided
1 teaspoon pepper, divided
Oil for frying
1 cup water

Steps:

  • Place 1 cup flour in a shallow bowl. In a separate shallow bowl, whisk eggs and 1/2 cup milk until blended. Sprinkle steaks with 3/4 teaspoon each salt and pepper. Dip in flour to coat both sides; shake off excess. Dip in egg mixture, then again in flour., In a large cast-iron or other heavy skillet, heat 1/4 in. of oil over medium heat. Add steaks; cook until golden brown and a thermometer reads 160°, 4-6 minutes on each side. Remove from pan; drain on paper towels. Keep warm., Remove all but 2 tablespoons oil from pan. Stir in the remaining 1/4 cup flour, 1/2 teaspoon salt and 1/4 teaspoon pepper until smooth; cook and stir over medium heat until golden brown, 3-4 minutes. Gradually whisk in water and remaining milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Serve with steaks.

1/2 cup vegetable oil
3/4 cup flour
1 teaspoon seasoning salt or 1 teaspoon salt
black pepper (lots black pepper!)
4 cups half-and-half cream or 4 cups 18% table cream

Steps:

  • Heat oil in a large skillet over medium heat; whisk in the flour, salt and pepper until smooth.
  • Cook and stir over medium heat until browned (about 10 minutes, the mixture MUST be browned!).
  • Gradually whisk in milk or cream; cook/whisk until smooth and thickened (no lumps must remain).
  • If the gravy becomes too thick add in a litle more milk and whisk until smooth and heated.

I also like this recipe because it calls for cube steak; a cut of meat that is inexpensive yet I have trouble finding recipes on s variety of ways to prepare it. Great for those busy weeknight dinners when you have to have dinner on the table in a flash. I bread my meat the night before and refrigerate, to save some time.

1 cup flour
2 (1 ounce) packages dry ranch dressing mix
salt and pepper, to season
3 cups buttermilk
1 egg, beaten
1 lb cube steak, cut into 4 piece servings
vegetable oil
1 cup chicken broth
1 (2 2/3 ounce) envelope country gravy mix

Steps:

  • In a large Ziploc bag, combine the flour, 1 dressing packet mix, salt and pepper.
  • In a shallow baking dish, combine 2 cups of buttermilk, beaten egg and 1 dressing packet mix; soak cube steaks in mixture.
  • While steaks are soaking, make the gravy: in a small pot, combine 1 cup buttermilk, broth and dry graving mix; simmer over medium heat and stir well and keep warm.
  • One by one, add each steak into Ziploc bag and shake to coat; dip steak back again in buttermilk mixture and recoat and shake in Ziploc bag.
  • In a deep skillet, heat 1/2 inch of oil to 350 degrees; fry steaks for about 4 minutes on each side, or until golden brown.
  • Drain on paper towels; serve with gravy and side dishes.

1/2 cup flour
4 (5 inch) skirt steaks
2 tablespoons butter
1 fully cooked breakfast pork sausage patty, finely chopped
1/2 cup whipping cream
1/2 teaspoon dried sage
1/3 cup chopped green onion

Steps:

  • Pour 1/2 cup beef broth into shallow bowl. Place flour in another shallow bowl. Sprinkle steak pieces on both sides with salt and pepper. Dip steaks into flour, then into broth, then into flour again, coating each time.
  • Melt butter in large nonstick skillet over high heat. Add steaks. Saute until brown, about 3 minutes per side. Transfer to plate.
  • Pour off butter from skillet. Add 1 teaspoons flour from shallow bowl. Whisk in remaining 1/2 cup broth, sausage, cream, and sage. Boil gravy until thick enough to coat spoon, whisking ofter, about 3 minutes. Season with salt and pepper. Mix in green onion and spoon gravy over steaks.

1 -2 lb chicken breast, pounded thin
2 cups flour (for dredging)
2 -3 eggs
1/4 cup milk
salt and pepper
1/2 cup oil (for frying)
1/2 cup butter
2 tablespoons flour
1 cup light cream
salt and pepper
pan dripping

Steps:

  • Clean cutlets and pound thin with the flat side of a meat mallet. (I use a ziploc bag to keep things clean)
  • Wisk together milk and eggs. Dredge cutlets in flour, then egg, then flour, and repeat two or three times until well coated. Fry in oil over medium heat until golden on boh sides.
  • Remove chicken from pan, and drain off any excess oil, leaving bits nd chicken pieces behind. Make a rue by melting butter, over low heat, and adding flour, whisking until smooth. Add salt, pepper, and cream and continue to whisk occasionally until thickened and heated through. YUM!

4 (4 ounce) tenderized beef steaks (known in supermarkets as "cube steak")
1 egg
1/4 cup milk
all-purpose flour
cooking oil or melted Crisco
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon white pepper

Steps:

  • Beat together the egg and milk and set aside.
  • Mix together the salt, black pepper, paprika and white pepper and sprinkle on both sides of beef cutlets.
  • Fill plastic zip lock back with flour. Drop steaks into bag to manually and dredge the steak in flour. Then pour flour into a shallow dish and shake excess flour off of the steaks. Use a pair of tongs for dipping steak into egg mixture and a separate pair of tongs for dipping into the flour.
  • Set cutlets aside on a piece of waxed paper.
  • Heat the cooking oil in a large cast-iron or other heavy skillet over medium-high heat for a few minutes. Oil should be about a half-inch deep in the pan. (This recipe is not about diets!) Check the temperature with a drop of water; if it pops and spits back at you, it's ready.
  • With a long-handled fork, carefully place each cutlet into the hot oil. Protect yourself (and your kitchen) from the popping grease that results. Fry cutlets on both sides, turning once, until golden brown. Reduce heat to low, cover and cook 4 or 5 minutes until cutlets are done through. Drain cutlets on paper towels.
  • Cream Gravy.
  • After the cutlets are removed from the pan, pour off all but about 2 tablespoons of oil, keeping as many as possible of the browned bits in the pan. Heat the oil over medium heat until hot.
  • Sprinkle 3 tablespoons flour (use the left-over flour from the chicken fried steak recipe (waste not -- want not) in the hot oil. Stir with a wooden spoon, quickly, to brown the flour.
  • Gradually stir in 3/4 cup milk and 3/4 cup water, mixed together, stirring constantly with the wooden spoon and mashing out any lumps. Lower heat, and gravy will begin to thicken. Continue cooking and stirring a few minutes until gravy reaches desired thickness. Check seasonings and add more salt and pepper according to your taste.
