After enjoying this coleslaw for years at many church functions, I finally asked for the recipe. It can be put together in no time, so it's perfect for last-minute guests.

1 cup mayonnaise
1/2 cup sugar
1/3 cup cider vinegar
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
1/2 medium head cabbage, shredded
2 medium carrots, shredded
1 celery rib, shredded

Steps:

  • Place the first six ingredients in a blender or food processor. Cover and process on high until the sugar is dissolved, about 30 seconds. In a large bowl, combine cabbage, carrots, celery and dressing; toss to coat. Serve immediately.

1 tablespoons sugar
1 1/2 cups self-rising flour
1/2 cup cornstarch
3 teaspoons seasoned salt
2 teaspoons paprika
1/2 teaspoon baking soda
1/2 cup biscuit mix
1 envelope Italian dressing mix
1 envelope onion soup mix
1 whole chicken, cut into pieces
2 eggs
1/4 cup cold water
1 cup corn oil for frying

Steps:

  • Combine sugar, self-rising flour, cornstarch, salt, paprika, baking soda, biscuit mix, Italian dressing mix and onion soup mix in a 4-cup bowl. Mix to blend the ingredients thoroughly. Blend the egg and water. Dip the chicken pieces in egg mixture and then into dry coating mix and repeat so each piece is double coated. Pre-heat the oil in a heavy skillet. Brown pieces skin-side down for 4 to 6 minutes. Use medium high heat. Turn and brown underside of pieces a few minutes. Transfer to an oiled or Pam-sprayed pan. Cover with foil, sealing it on only 3 sides of pan. Bake at 350°F for about 45 to 50 minutes. Remove foil, then bake another 5 minutes until the coating is crisp.

I copied these ingredients from the KFC coleslaw container years ago. Yes, they did list Miracle Whip, not mayo! It always goes quick, but I never get any compliments when I bring it as a dish to pass because they all think that I just picked it up from KFC and put it in my own bowl! I use the bags of coleslaw mix from the produce section of my store and chop it in the food processor, but you can use a 1 lb head of cabbage, and a couple of carrots instead if you wish.

1 (1 lb) bag Coleslaw (in produce section of store)
2 tablespoons onions (grated)
1 cup Miracle Whip
2 tablespoons tarragon vinegar
1 tablespoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon milk or 1 tablespoon cream

Steps:

  • Chop coleslaw mix in a food processor until chopped fine.
  • Add grated onion to coleslaw mix.
  • In separate bowl, mix together Miracle Whip, sugar, vinegar, salt and pepper.
  • Thin dressing mixture with milk or cream.
  • Stir dressing into coleslaw.
  • Refrigerate several hours or overnight.

I figured there are enough KFC recipes here that it's time Church's chicken grabbed the spotlight! Haven't made this, but I like the idea of first frying, and then baking the chicken.

1 tablespoon sugar
1 1/2 cups self-rising flour
1/2 cup cornstarch
3 teaspoons seasoning salt
2 teaspoons paprika
1/2 teaspoon baking soda
1/2 cup biscuit mix (such as Bisquick)
1 envelope dried Italian salad dressing mix
1 envelope onion soup mix
2 eggs, mixed with
1/4 cup cold water
1 cup corn oil
1 (3 lb) fryer chickens, cut up into pieces

Steps:

  • Combine all the dry ingredients in a 4-cup container.
  • Mix to blend the ingredients thoroughly.
  • Store tightly covered at room temperature up to 3 months.
  • To use: Dip the chicken pieces in egg mixture and then into dry coating mix and back into egg to coat the pieces evenly but lightly and finally back into dry mix.
  • Have oil piping hot in heavy skillet.
  • Brown pieces skin-side down for 4 to 6 minutes.
  • Use medium high heat.
  • Turn and brown underside of pieces a few minutes.
  • Transfer to an oiled or Pam-sprayed 9x13x2-inch pan.
  • Cover pan with foil, sealing it on only 3 sides of pan.
  • Bake at 350 degrees for about 45 to 50 minutes.
  • Remove foil.
  • Bake another 5 minutes just to crisp the coating.
  • Serves 4.

I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. Note: This is one of the recipes I adopted in the Great 'Zaar Orphan Adoption of 2005. I hope you enjoy it.

6 1/2 tablespoons vegetable oil
3/4 cup chopped onion
2 1/2 cups Miracle Whip
1 cup sugar
2 carrots
2 heads cabbage

Steps:

  • Mix oil, onions and sugar.
  • Add tarragon vinegar.
  • Fold in Miracle Whip.
  • Pour over grated carrots and cabbage.
  • Fold in well.
  • Refrigerate in an air-tight covered dish.
  • Best if made the night before serving.
  • The tarragon is the secret seasoning.
  • Compare with the real KFC coleslaw.
  • Enjoy.
