- Preheat the oven to 400 F.
- Lay a sheet of aluminum foil flat on the counter.
- Place the thin sliced roast beef in the center of the foil and fold up all four sides to completely enclose the beef.
- Bake in the preheated oven for 10 to 15 minutes.
- When the beef is almost done, heat the cheddar cheese sauce in a microwave safe bowl for 30 seconds or until heated through.

- Layer on the roast beef slices piled high.
- Spread the heated cheese sauce on top of the roast beef.
- Top the sandwich with the remaining half of the onion bun.

An identical, homemade Arby's roast beef sandwich with homemade Arby's red ranch sauce and Arby's cheese sauce, stacked high with shaved roast beef on a large poppy seed onion brioche bun.

- Preheat oven to 225 degrees Fahrenheit.
- Wrap the shaved roast beef in foil like a "packet" and keep in the oven to heat through.
- Arrange buns on a baking sheet.
- Brush tops of buns with beaten egg white (or whole egg, or butter); then sprinkle with poppy seeds and minced onion.
- Bake for 5-6 minutes.
- Combine the shredded cheddar cheese (4 ounces), American cheese (4 ounces, shredded or cut into cubes) with half and half (1/4 cup) and 1/4 tsp paprika in a small saucepan on medium-low heat.
- Cover, and stir occasionally until melted, smooth and combined. Turn off heat, or leave on lowest setting while preparing the rest of the ingredients.
- In a small saucepan, bring the ketchup (1 cup), apple cider vinegar (1/8 cup), sugar (1/2 tsp), paprika (1/2 tsp), garlic and onion powders (1/4 tsp), salt (1/2 tsp), and water (1/4 cup).
- Simmer the ingredients in the saucepan on medium high heat for 3-5 minutes.
- Turn off the heat, stir in the mayonnaise (2 tsp) until combined.
- Top the bottom bun first with a splat of homemade Arby's sauce, then pile with roast beef, then spoon over cheddar cheese sauce, followed by more Arby's sauce. Top with top onion and poppy seed bun.
- The prepared sandwiches can be kept warm in the oven at 170 degrees Fahrenheit until ready to eat, for up to one hour.

- Place all sauce ingredients in a blender and blend on high speed for 15 - 20 seconds. Pour ingredients into a small saucepan, heat on medium low. Simmer gently for twenty minutes, stirring several times.
- After twenty minutes add cornstarch mixture and stir well. When sauce begins to thicken, let simmer on a very low temperature for ten minutes. Remove from heat and let cool.
- Mixture will be similar in thickness to steak sauce. Store in a covered container in the refrigerator. This sauce is a nice change on hamburgers or pastrami, and great dipping sauce for hot wings.

- Preheat the oven to 350 degrees.
- In a medium-sized bowl add the barbecue sauce with beef and mixed together evenly on each piece ( I used tongs) Set aside.
- Place parchment paper on a baking sheet to fit all 12 buns.
- Open each bun.
- Lay a piece of cheddar cheese on the bottom of each bun.
- Next top each piece of cheese with the slice of the deli roast beef in barbecue sauce.
- Place the top of the bun on the beef.

- In baking dish with lid, add consommé, dark brown sugar, and soy sauce. Stir to mix and sugar dissolves.
- In large frying pan, sear meat in oil over medium heat, to brown on all sides (5 minutes). Evenly sprinkle pepper, garlic powder and onion powder on all sides, turning. Place into baking dish, pour oil and juices from pan over top, pour melted butter over top, cover. Bake at 325º (covered) for 3 hours until tender, basting every 30 minutes.
- Remove from oven, turn lid sideways to vent, let rest 15 minutes. Remove fat and place into ziplock baggie, close bag tightly, and place into fridge to chill overnight. (Place in a dish so that any juices don't run all over the fridge if you don't trust the bag to not leak.) Reserve juices from baking dish into a small bowl, covered. Refrigerate as well.
