Creamy Ranch Pasta Salad image

This creamy ranch pasta salad is the perfect side dish! Cooked pasta is tossed with veggies and coated in a creamy homemade ranch dressing with fresh herbs.

8 ounces gluten-free pasta ((I used Banza Rotini))
1 cup diced cucumber
1 cup bite-size broccoli florets
½ small red bell pepper, diced
½ cup diced sweet vidalia onion
½ cup plain Greek yogurt
½ cup mayonnaise ((I used avocado oil mayo))
¼ cup minced fresh dill
¼ cup minced fresh chives
2 tablespoons white vinegar
½ teaspoon garlic salt
½ teaspoon onion powder
¼ teaspoon freshly cracked black pepper
⅛ teaspoon sea salt

Steps:

  • Cook pasta: Cook pasta according to the package instructions. Drain and rinse with cold water to cool.
  • Make dressing: Meanwhile, in a medium bowl, whisk together the dressing ingredients until smooth. Refrigerate until ready to use.
  • Toss: In a large bowl, combine the pasta, cucumber, broccoli, bell pepper, and onion.
  • Add dressing: Pour the dressing over the pasta salad and gently toss to combine. Taste for salt and pepper, adding more if needed. Serve right away or refrigerate in a container with a lid for 1-2 hours or until ready to serve.

1 lb tri-color bow tie pasta
1 cup cheddar cheese, cubed
1 cucumber, cubed
1 tomatoes, chopped
1/2 cup sliced olive
1 red pepper, diced
1 green pepper, diced
1 small onion, minced
1 one-ounce package ranch dressing mix
1 cup sour cream
1 (10 ounce) bag cool ranch Doritos

Steps:

  • Cook noodles according to package directions; drain and cool. While they cook, chop your vegetables.
  • In large bowl, stir together cooked noodles, cheese, cucumber, tomato, peppers and olives.
  • In separate bowl, stir together onion, ranch dressing mix and sour cream.
  • Pour the ranch mixture over pasta mixture and toss together to coat.
  • Refrigerate and toss again before serving. Top with crushed Cool Ranch Doritos.

This is a Summer Staple around our house. It goes great with anything grilled or with sandwiches. It's also great with cooked meat added and served as a cold meal. Prep. time does not include refrigeration.

1 lb tri-color spiral pasta (or your favorite - cooked and drained according to package directions.)
1 medium onion, diced
1 medium green bell pepper, diced
2 -3 medium roma tomatoes, seeded and chopped
1 (2 1/4 ounce) can ripe black olives, drained
4 ounces cheddar cheese, grated or diced
1 tablespoon Bacos bacon bits
1 cup of your favorite bottled ranch dressing (I use Kraft Free Ranch)
1 tablespoon water, add to dressing if it very thick (optional)
fresh black pepper

Steps:

  • In a large container gently combine all ingredients mixing well.
  • Cover and refrigerate at least 30 minutes, the longer it mingles the better it tastes!

My husband's favorite - he'll put away the whole batch in two days. Not the lightest pasta salad, but very tasty and refreshing on a hot day. This is a great side with sandwiches, chicken, burgers, etc., or it makes a good lunch by itself. This is very flexible, so feel free to add/omit veggies, adjust seasonings or increase/decrease dressing as you see fit.

1 cup mayonnaise
2/3 cup ranch dressing
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
black pepper
1 lb rotini pasta (or similar shape)
2 -3 cups fresh broccoli florets, cut bite-sized
1 red bell pepper, cut into 1-inch strips
4 ounces cheddar cheese, cut into 1/2-inch cubes
4 ounces monterey jack cheese or 4 ounces mozzarella cheese, cut into 1/2-inch cubes

Steps:

  • Cook pasta in a large pot of salted water. When pasta is almost tender (about 2 minutes from done) add broccoli. Return to a boil and continue cooking until pasta is al dente and broccoli is crisp-tender. Drain and rinse with cold water. Drain again and return to pot; add bell pepper and chill while preparing dressing.
  • Prepare dressing by combining all ingredients in a medium-sized bowl and stirring thoroughly. Taste and adjust seasonings.
  • When salad is cool enough, add cheese cubes (you don't want them to melt) and dressing. Stir well to combine and transfer to a large bowl or casserole dish. Serve chilled.

Steps:

  • Cook pasta acording to package directions.

2 cups pasta (uncooked shells)
5 baby carrots, shredded (or 1 large regular carrot)
1 cup frozen peas, thawed
3/4 cup mayonnaise, more if desired but NOT miracle whip
1 ounce hidden valley ranch dressing mix (or 1/2 of a .4 oz. package of the buttermilk version)
1/4 cup bacon bits (I use Hormel REAL bacon bits or pieces)
1/2 teaspoon onion powder

Steps:

  • In large bowl, mix mayo, dressing mix, bacon bits, shredded carrots and onion powder. Chill this mixture while you continue making the rest of the salad.
  • Cook pasta al dente, drain and cool. Fold in pasta carefully.
  • Gently fold in peas last.
  • Chill for several hours and serve chilled or at room temperature.
  • Refresh salad if needed with a tiny bit of mayo, but it usually doesn't need it.
  • Garnish top with more bacon bits pieces. You can never have too much bacon.

1 bottle (16 oz.) ranch dressing
1 package smoke sausage link
1 small firm red tomato, diced
1/2 small yellow onion, chopped
1/4 cup cilantro, finely chopped
Salt & pepper to taste

Steps:

  • Prepare pasta as indicated on package. Drain and set aside. Cut sausage link in small rounds and cook in skillet, until cooked thru.
  • Once pasta and sausage has cooled, mix all ingredients together, reserving a 3rd of the ranch dressing. Seal and refrigerate for about 30 minutes.
  • Then stir in the remaining ranch dressing.

1/3 cup red wine vinegar
2 tablespoons garlic salt
