1 fully cooked boneless ham (4 to 5 pounds)
3/4 to 1 cup water
1/4 cup orange marmalade
1/4 cup prepared mustard
1/4 teaspoon ground ginger

Steps:

  • Place ham in a shallow roasting pan; add water to pan. Bake, uncovered, at 325° for 1 hour. , In a small bowl, combine the marmalade, mustard and ginger. Brush some over the ham. Bake 1 hour longer or until a thermometer reads 140°, brushing occasionally with glaze.

One 9-pound bone-in spiral-sliced ham
1 cup honey
1/3 cup brown sugar
4 tablespoons unsalted butter
3 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
2 teaspoons finely chopped fresh thyme

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the ham in a small roasting pan, cut-side down, and pour 1/2 cup water into the bottom of the pan. Cover the pan tightly with foil. Bake until the ham is heated through, about 1 1/2 hours.
  • Meanwhile, combine the honey, brown sugar, butter, Dijon mustard, whole-grain mustard and thyme in a small saucepan. Cook over medium-low heat until the sugar has dissolved, about 2 minutes.
  • Increase the oven temperature to 375 degrees F. While the ham is still hot, remove the foil and carefully pour off the water from the roasting pan; it is fine if a little water remains. Brush about half of the glaze over the ham. Return to the oven, uncovered, for 5 minutes, until the ham is golden brown and beginning to glaze. Brush with the remaining glaze and bake for another 7 to 10 minutes, until the ham is well-browned and glazy; be careful not to let the glaze burn. Serve warm.

  • Preheat oven to 350 degrees

2 cups apricot jam
1/4 cup mustard powder
Butter for aluminum foil

Steps:

  • Preheat oven to 375 degrees, with rack in lowest position. Line a large roasting pan with aluminum foil; place roasting rack in pan.
  • With a sharp knife, trim fat, leaving a 1/4-inch-thick layer. Lightly score fat in a diamond pattern (do not cut into meat). Place ham, fat side up, on rack; roast 1 hour.
  • Meanwhile, in a small saucepan, combine jam and mustard (they can be mixed and refrigerated up to 1 day ahead). Transfer 1/2 cup mixture to a small bowl to glaze ham. Set aside saucepan with remaining mixture.

Delicious glazed ham, served hot or cold, is a treat for any Christmas celebration. Serve with a creamy mustard sauce and golden, garlicky roasted new potatoes.

2.5kg/5lb 8oz gammon joint
1 litre/1¾ pints orange juice
3 bay leaves
2 cinnamon sticks
½ x 340g jar thin-cut marmalade
1 clementine, thinly sliced in discs
50g/1¾oz demerara sugar
2 tbsp Dijon mustard
2 tbsp wholegrain mustard
1-2 tbsp caster sugar
1 tbsp lemon juice
pinch finely grated clementine zest
400g/14oz full fat crème fraîche

Steps:

  • Preheat the oven to 150C/130C Fan/Gas 2.
  • Put the gammon in a saucepan that fits snugly. Pour in the orange juice - if the juice doesn't cover the ham, top up with water until it's submerged. Add the bay leaves and cinnamon stick and cover with a lid. Bring to the boil and simmer for 5 minutes. Transfer to the preheated oven for about 2½ hours until cooked through. Remove from the oven and leave to cool in the liquid.
  • Meanwhile, make the glaze. Put the marmalade in a shallow saucepan with 4 tablespoons of water. Whisk together over the heat until the marmalade is melted and smooth. Add the clementine discs to the pan and gently simmer for 5 minutes, until softened and sticky.
  • Increase the oven temperature to 220C/200C Fan/Gas 7.
  • Remove the ham from the cooking liquid and sit it on a wooden board. Carefully remove the skin with a small, sharp knife, leaving a thin layer of fat. Score the fat in a diamond pattern with the same knife. Brush the top of the fat with most of the glaze and arrange the clementine slices in the centre of the top in an overlapping circle, securing with cocktail sticks if needed. Sprinkle with the demerara sugar. Brush with a little extra glaze. Sit the ham in a foil-lined small roasting tin and cover the lean meat with foil, leaving the top exposed.
  • Return to the oven for 25-30 minutes, checking halfway through until the top is golden and tinged brown. Brush with extra glaze to give a shining finish.
  • To make the sauce, mix the two mustards and sugar together in a bowl. Add the remaining ingredients, season and stir to combine.
  • Sit the ham on a board, remove any cocktail sticks and carve into slices, serving with the double mustard sauce and garlic potatoes (see tips below).

7 -10 lbs precooked spiral cut ham
1/2 cup butter
1/2 cup brown sugar
1/4 cup honey
1/2 cup orange juice
1/4 teaspoon cinnamon
1/4 teaspoon clove
3 egg yolks
1/2 cup brown sugar
1 tablespoon flour
1/4 cup dry mustard
1/2 cup white vinegar
1/2 cup water
4 tablespoons butter

Steps:

  • Melt 1/2 cup butter in a medium sized glass bowl. Add 1/2 c brown sugar , 1/4 c honey, 1/2 c orange juice, 1/4 tsp cloves, and 1/4 tsp cinnamon.
  • Whisk it together to combine and heat it in the microwave for 1 minute.
  • Line a large baking pan with tin foil and spray it with cooking spray. Unwrap your ham and place it in the center of the pan. Brush some of the orange glaze over the ham. Put in 325 oven to bake.
  • Take the ham out of the oven every 15 minutes and brush or pour more glaze over the top. Hal way through baking you might turn over the ham and place it face down in the pan so it won't dry out and coat all sides of ham with the glaze. Bake for 1 1/2 hours.
  • For Mustard Sauce: Place 3 eggs into a medium sized sauce pan. Whisk them together until frothy.
  • Combine 1/2 cup brown sugar, 1 tbsp flour, 1/4 c dry mustard in a small bowl.
  • Pour it into the sauce pan with the egg yolks.
  • Pour in 1/2 c water and 1/2 c white vinegar.
  • Whisk the mixture together and heat it over medium heat, stirring constantly. Bring it to a boil and keep stirring while it thickens. The texture will be like mustard you would squeeze out of a bottle.
  • Add 4 tablespoons butter to the warm sauce and stir it well to combine. Serve the sauce warm with the ham.
  • The sauce will start to thicken as it cools. Reheat it in the microwave if you need before you serve it. Leftovers can be stored for up to 3 weeks.

1/2 cup Dijon mustard
1 cup pineapple, finely chopped
1 cup brown sugar, packed
chicken broth
1 tablespoon molasses
1 tablespoon brown sugar
1/4 cup Dijon mustard
salt
2 teaspoons cornstarch
2 tablespoons water

Steps:

  • Preheat oven to 325°F Trim fat to about 1/4 to 1/2 inch thickness. Place ham, fat side up, in a roasting pan and roast for 2 1/2 to 3 hours (10 minutes per pound) until internal temperature reaches 130°F Remove from oven.
  • Turn oven up to 425°F Pour apple cider (or broth or water) into pan to a depth of 1/2 inch. Score ham and brush top with mustard. Combine pineapple and sugar and spread over ham, pressing in with the back of a spoon. Return ham to oven and cook about 15 to 20 minutes until browned. Remove ham from oven and place on a cutting board to cool about 20 to 30 minutes.
  • Scrape bottom of roasting pan to remove any bits that were stuck during cooking. Pour into a quart measuring cup. Pour off any accumulated fat. Add chicken broth to make 2 cups. I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! 2 tablespoons spicy brown mustard
2 teaspoons Worcestershire sauce (or my original thought was liquid smoke, but then learned I didn't have any)
2 teaspoons ground cumin

  • 1. In a small bowl, wisk all ingredients together.
  • 2. Pat ham dry with papertowel.
  • 3. Schmear all over ham.
  • I put mine in the slow cooker for 8 hours on low, or you could bake, roast, smoke, or grill the ham, depending on your preference. You could also marinate the ham before cooking, but I just didn't think about this until the morning of.
  • I made a double batch of this to use as a dipping sauce as well. Delish!

vegetable cooking spray
1 1/2 cups maple syrup, divided
2/3 cup Dijon mustard, divided
1 teaspoon grated orange rind
2 tablespoons orange juice
1 cup orange marmalade

Steps:

  • Trim fat and rind from ham. Score outside of ham in a diamond pattern. Place ham on rack coated with cooking spray, and place rack in a shallow roasting pan.
  • Combine 1/4 cup maple syrup, 2 tablespoons mustard, orange rind, and orange juice; stir well, and brush over ham.
  • Bake at 425 degrees for 5 minutes. Reduce oven temperature to 325 degrees and cook an additional hour and 30 minutes or until thoroughly heated. Baste ham with maple syrup mixture every 30 minutes. Transfer ham to a platter and let stand 15 minutes before slicing.
  • Combine remaining syrup, remaining mustard, and marmalade in a small saucepan. Cook over medium heat 3 minutes or until thoroughly heated, stirring constantly.

I made these tasty Ham Steaks for New Years Day along with Hoppin' John and sauteed cabbage. Easy, fast and good! For the ham,I could not find the regular large ham steak so I used two 22 oz. packages of Hillshire Farms Brown Sugar Ham Steaks, each package had 4 thick slices of bone in ham and this worked perfectly for our family. I also doubled the amount for the glaze to accomadate the additional ham.
