2 cups herb-seasoned stuffing cubes
1/2 cup boiling water
2 teaspoons butter, plus
2 tablespoons butter, divided
8 slices cooked ham (1/8-in thick)
8 sliced swiss cheese
1 egg, beaten
1 tablespoon water
1/2 cup dry breadcrumbs

Steps:

  • In a bowl, combine stuffing croutons, boiling water and 2 tsp butter; cover, let stand 5 mins.
  • Top each ham slice with a cheese slice.
  • Place 1/4 cup of stuffing off-center over cheese.
  • Roll up, and secure with a toothpick.
  • Combine egg and water.
  • Roll ham rolls in the egg mixture, then in bread crumbs.
  • In a large skillet, saute ham rolls in remaining butter for 4-5 mins, or until golden brown, turning once.
  • Discard the toothpicks.

1/4 head red cabbage
1 bunch Thai basil
1 avocado
1 carrot
1/2 purple carrot
1/2 yellow carrot
1 watermelon radish
1 candy cane beet
1 tablespoon micro shiso leaf
6 sheets rice paper
1 tablespoon white sesame seeds
1/3 cup roasted peanuts
1/2 cup seasoned rice vinegar
1/4 cup honey
1/4 teaspoon salt

Steps:

  • For peanut sauce, chop peanuts into tiny bits and mix with vinegar, honey and salt.
  • Slice and chop all the vegetables (except the thai basil and micro shiso leaves) into thin pieces (the carrots should be small, thin strips).
  • Dip rice paper into warm water quickly then place on a hard surface.
  • Sprinkle white sesame seeds on top of the rice paper.
  • Place vegetables on the middle of the rice paper; for a better presentation, arrange it so the thai basil and micro shiso leaves are layer one, then place the thinly sliced beets and radishes, add avocado, and stack the carrots last.
  • Roll the rice paper into a snug spring roll shape.
  • Slice in half and serve with peanut sauce.

Summer rolls are such a great appetizer because they're so satisfyingly chewy and flavorful but they're not so heavy that they'll ruin your meal. These pack an extra little surprise in the center-canned ham, a salty wonder.

Number Of Ingredients 12

1/2 pineapple, cored and cut into chunks
1 Thai bird chile, stemmed
1 clove garlic
1 tablespoon lime juice
1 tablespoon brown sugar
2 teaspoons fish sauce
1/2 teaspoon minced ginger
1 tablespoon cornstarch
One 12-ounce can cooked ham, such as Spam
3 ounces vermicelli rice noodles
One 12-ounce package rice paper wrappers
Butter lettuce, sliced red cabbage, fresh cilantro leaves and fresh mint leaves, for filling

Steps:

  • For the spicy pineapple sauce: Add the pineapple chunks, Thai bird chile, garlic, lime juice, brown sugar, fish sauce and ginger to a blender. Blend until combined. Transfer the mixture to a pot. Heat the mixture over medium heat. Combine the cornstarch with 2 tablespoons water in a small bowl and mix until the cornstarch is dissolved. Add to the hot pineapple mixture and stir to combine. Simmer until the mixture thickens, about 5 minutes.
  • For the ham rolls: Cut the ham into 10 slices, then cut each slice into 4 matchsticks. Add the ham to a nonstick pan over medium heat and fry until golden brown. Set aside and let cool.
  • Cook the vermicelli rice noodles according to the package. Rinse with cold water. Toss with 1/4 cup pineapple sauce. Set aside.
  • Line a plate with a damp paper towel or parchment paper. Wet a few paper towel sheets and wring out the water. Have them standing by to cover your finished rolls. Fill a large shallow bowl with warm water. Dunk one rice wrapper in the shallow bowl of water for about 5 seconds to soften. Move to your work surface. Add 1 leaf of butter lettuce, torn in half, in the center, and top with 4 pieces of the ham, a small pile of the vermicelli noodles, red cabbage, cilantro leaves and mint leaves. Gently pull the bottom of the wrapper and roll over the filling, using your hands to tuck the filling in as you roll. Fold in each side and continue to roll tightly. Add the roll to your damp paper towel-lined plate. Cover the roll with a damp paper towel. Continue rolling until you have 10 rolls, covering with damp paper towels and keeping them separated (if the rolls touch, the wrappers will tear).
  • To serve, cut each roll in half on an angle and serve with the spicy pineapple sauce.

Use a mandoline to turn the vegetables into paper-thin slices, and then find zen while you perfect filling and rolling each lovely bundle. It takes time and practice, so be sure to have a few extra rice wrappers on hand in case some tear.

One 6.25-ounce package of mai fun rice noodles
1 orange bell pepper, stemmed and seeded
1 red bell pepper, stemmed and seeded
1 yellow bell pepper, stemmed and seeded
2 candy cane beets, peeled
1 large carrot
1 Persian cucumber
1/4 cup creamy peanut butter
2 tablespoons hoisin sauce
1 tablespoons chili garlic sauce
2 teaspoons toasted sesame oil
Juice of 2 limes (about 2 tablespoons)
Kosher salt
2 1/2 cups shredded cooked chicken
1/4 cup fresh cilantro leaves, roughly chopped
1/4 cup fresh mint leaves, roughly chopped, plus 36 whole fresh leaves
4 scallions, sliced thinly
12 8-inch round rice paper wrappers (see Cook's Note)

Steps:

  • Cook the rice noodles according to package directions. Lay them out on a baking sheet in an even layer. Use a pair of kitchen shears to cut them into 4-inch lengths. Set aside.
  • Use a mandoline slicer to shave the orange, red and yellow bell peppers into long, paper-thin slices. Then shave the beets, carrot and cucumber into paper-thin rounds. Set aside.
  • Whisk together the peanut butter, hoisin sauce, chili garlic sauce, sesame oil, lime juice and 1/4 cup of warm water in a small bowl until well combined. Season to taste with salt.
  • Toss together the chicken, cilantro, mint, scallion and 2 tablespoons of the peanut sauce in a large bowl until well coated.
  • Set up your rolling station with a damp cutting board, a medium bowl filled with water and a serving platter. Place the orange, red and yellow bell peppers, beets, carrots, cucumber, rice noodles, chicken-herb mixture and rice paper wrappers nearby.
  • Take 1 rice paper wrapper and wet it with some water until just slightly softened. Lay it on the cutting board and make sure it is completely flat. Arrange 3 mint leaves about 1/4-inch from one another, in the middle of the wrapper (the tips of each mint leaf should be pointing up and away from you). Take 3 slices of yellow bell pepper and lay them over the first mint leaf. Take 3 slices of red bell pepper and lay them over the second mint leaf. Take 3 slices of orange bell pepper and lay them over the third mint leaf. Lay 6 slices of beet, slightly shingled, over the bell pepper layer. There should be about a 1-inch of space above and below the beet edge where the bell peppers peak out slightly. Shingle 6 slices of cucumbers right above the beets and over the pepper ends. Shingle 6 slices of carrots right below the beets and over the pepper ends. Take a bunch of the cut rice noodles, about the same diameter of a silver dollar, and put them on top of the candy cane beet layer, being mindful of keeping them in a tight line. Take a heaping 2 tablespoons of the chicken mixture and put on top of the noodles.
  • Working from the edge of the rice paper wrapper closest to you, fold it over the filling, then fold in the sides, like you are rolling a burrito, and roll up tightly. Put the finished roll on the serving platter and cover with a damp paper towel to keep it from drying out, repeat with the remaining 11 rice paper wrappers and fillings. Serve with the remaining peanut sauce on the side for dipping.

1 cup butter or 1 cup margarine, at room temperature
3 tablespoons poppy seeds
1 teaspoon Worcestershire sauce
3 tablespoons prepared mustard
3 (8 ounce) packages party rolls

Steps:

  • Preheat the oven to 325 degrees.
  • Using a food processor, in separate batches chop the onion, ham and cheese.
  • In a medium-size bowl combine the butter, poppy seeds, Worcestershire and mustard and add the onion, ham and cheese.
  • Split the pans of rolls in half horizontally, leaving the sheet of bottom halves in the pan. Spread each bottom with 1/3 of the ham and cheese mixture.
  • Top with the sheets of top halves and cut into individual servings by following the outline of the rolls. The rolls can be frozen at this time.
  • At serving time, cover the foil pans with aluminum foil and heat through, 25 to 30 minutes (less if not frozen).

1/2 cup butter
1/2 cup all-purpose flour
1 teaspoon dill weed
1/2 teaspoon garlic salt

1-1/2 cups half-and-half cream
1 tablespoon Dijon mustard
3 cups cooked wild rice
1 can (8 ounces) mushroom stems and pieces, drained

Steps:

  • In a large saucepan, saute onion in butter until tender. Stir in flour, dill, garlic salt and pepper until smooth and bubbly. Gradually add broth, cream and mustard; cook until thickened. , Pour 1 cup into an ungreased 13-in. x 9-in. baking pan; reserve another cup for topping. 1/4 lb cooked ham, cut into 2-inch-long julienne strips (1 cup)
1 cup daikon radishes or 1 cup jicama, peeled and shredded, moisture squeezed out
2 tablespoons minced fresh cilantro
1/4 cup thinly sliced green onion
8 sheets round rice paper (6 1/2- or 8 1/2-in. size)
8 large romaine lettuce leaves, spears (optional)
8 fresh cilantro stems
3 tablespoons chunky peanut butter
1 tablespoon water
1 tablespoon soy sauce
1 tablespoon salad oil
1 tablespoon vinegar
2 teaspoons sugar
1 teaspoon fresh ginger, minced
2 garlic cloves, minced
1/8 teaspoon cayenne

Steps:

  • Stir together all sauce ingredients with a wire whisk. (Alternatively, you can use your favorite sauce!).
  • In another bowl, mix together ham, daikon, cilantro, and green onion.
  • Brush both sides of rice paper with water; let stand until soft and pliable, about one minute.
  • About one inch from one side, place about 1/3 cup of the ham mixture in a band across the rice paper; roll up tightly to enclose. (Cover and chill up to 4 hours, if done ahead.)
  • To eat, place a roll on a romaine spear, garnish with a cilantro sprig, and spoon peanut sauce over top.
