COOL CUCUMBER AND DILL SALAD
This Cool Cucumber & Dill Salad is so incredibly simple yet so flavorful. The cucumber and the dill match beautifully, and the slightly sweet and tart dressing are just perfect. This is one of those salads that doesn't stay around long on the serving table. Double the recipe to feed a group! Delicious!

Steps:
- Whisk together the vinegar, mustard, salt, and sugar; and then whisk in the oil in a slow stream.
- Halve the cucumbers lengthwise and remove the seeds with a small spoon, cut the halves crosswise into 1/4" or 1/8" slices.
- Toss the cucumbers and dill with the vinaigrette.
- Serve and enjoy!

- Place cucumbers in a colander over a bowl; sprinkle with salt and toss. Let stand 15 minutes. Squeeze and blot dry with paper towels., In a large bowl, combine the remaining ingredients; stir in cucumbers. Refrigerate, covered, at least 1 hour.

- Wash the cucumber(s) and partially remove the peel in lengthwise strips using a vegetable peeler or fork and leaving a little skin between each strip.
- Thinly slice the cucumber lengthwise. Place the vinegar, sugar, salt and pepper in a bowl and whisk until the sugar is dissolved.
- Add the cucumber, onion, and dill, toss well.
- The salad can be served at once, but it will improve in flavor if you let the ingredients marinate for 5 minutes.

- 1. Toss sliced onions with 1 TBLS Rice Vinegar, set aside
- 2. Place peeled, sliced, seeded cucumbers in a colander and toss with 1/4 tsp of salt, let drain 10 minutes then pat dry.
- 3. in a large bowl mix onions and cucumbers with olive oil, remaining (2 TBLS) of vinegar and dill. Season (salt and pepper) garnish (sesame seeds) and chill until served ( about 30 minutes is preferable, but is optional)

- Bring a large pot of lightly salted water to a boil; cook rice until tender, drain, and briefly rinse with cool water. Spread on a kitchen towel, cover with another towel, and gently pat dry.
- Meanwhile, put the cucumbers, parsley, dill and mint in a large bowl.
- Combine the onions, salt, vinegar and oil to make the dressing.
- While the rice is still warm, stir it into the cucumber mix, adding the dressing and the yogurt. Toss gently with a wide spatula. Taste for salt and pepper.
- Serve tepid or chilled on lettuce leaves.
- Note: I made this without the yogurt, as I had none, and it tasted great without it, too. You might want to stir yogurt to loosen it, to facilitate incorporating it into the salad. I think any number of herbs would taste good in this, so use what you have available. I added some lemon balm.

CUCUMBER-DILL SALAD WITH FETA CHEESE
I was surprised to see that, although quite a number of cucumber-dill recipes are available, nobody seems to have hit on the combination with feta cheese. Light and summery. Good for picknicks as well -- in that case bring the cheese separately and add just before serving. Good-quality olive oil is essential.

- Half the cucumbers length-wise. Remove the seeds. Slice into thin ribbons. Put in strainer with some salt and allow to drain for about 10 mins (the salt will draw out some of the moisture from the cucumber). Slice the white part of the scallions thinly. Cut the green part into very thin slivers.
- Prepare a dressing from the oil, vinegar, salt and pepper to taste. Mix the cucumber, scallions, dill, and dressing. Crumble the feta cheese over the salad and add pepper to taste.
