BRAISED CELERY

8 stalks celery, rinsed and trimmed, leaves chopped and reserved
1 tablespoon unsalted butter
Pinch kosher salt
Pinch freshly ground black pepper
1/2 cup good quality beef stock or broth

Steps:

  • Peel any of the fibrous outer stalks of celery with a vegetable peeler and slice into 1-inch pieces on the bias.
  • Heat the butter in a 10-inch saute pan over medium heat. Once melted, add the celery, salt and pepper and cook for 5 minutes until just beginning to soften slightly. Add the beef broth and stir to combine. Cover and reduce the heat to low. Cook until the celery is tender but not mushy, approximately 5 minutes. Uncover and allow the celery to continue to cook for an additional 5 minutes or until the liquid has been reduced to a glaze. Transfer to a serving dish and garnish with the reserved leaves.

I had a load of veg that needed using up and since the weather's getting cooler, I thought a vegetable soup was the way forward. I had a whole head of lettuce so started off making an easy celery soup and then added the rest. You could put in whatever you have to hand.

25 g butter
1 whole head of celery, sliced
2 medium onions, diced
1 large leek, sliced
3 garlic cloves, minced
3 vegetable stock cubes
2 large potatoes, peeled and diced into 1cm cubes
3 carrots, peeled and diced into 0 . 5cm cubes
1 large courgette, diced
1 1/2 cups frozen peas
boiling water
1 teaspoon Tabasco sauce (optional)
200 ml double cream (optional)
1 large handful fresh parsley, chopped
salt and white pepper, to taste

Steps:

  • Melt the butter in a large pan. Add the celery, onion, leek and garlic and cook until sizzling.
  • Reduce the heat to very low and cover. Allow to sweat for ten minutes, or until the vegetables are translucent, stirring occasionally.
  • Add the stock cubes and boiling water until the veg is just covered. Cover again and increase heat. Bring to the boil and cook until the veg is soft.
  • Blend with a hand blender, and season to taste. Add the Tabasco if using.
  • Add the potatoes and carrots and continue to boil. If it looks too thick, add some more boiling water. The potatoes will thicken it slightly.
  • Cook until the potatoes are cooked through then stir in the courgette, frozen peas and cream. Bring back to a gentle boil until the veg are cooked to your liking. Adjust seasoning as necessary (the potatoes and cream will neutralise the salt so you may need more).
  • Stir the fresh parsley through and serve with some fresh crusty bread.

By my recollection, this dish is very similar to one my Irish grandmother cooked. Cooked celery as a side-dish vegetable seems to be out of vogue now, but it really is quite good.

1 head celery
1 onion, sliced thinly
2 teaspoons minced fresh parsley
2 slices bacon
1 cup chicken stock
1/4 cup water
salt and pepper
2 tablespoons butter or 2 tablespoons margarine, cold

Steps:

  • Preheat oven to 350F degrees.
  • Separate celery into stalks, remove leaves (save for soup) and trim, wash well and cut into pieces about 3/4-inch thick.
  • Place celery in an ungreased casserole dish.
  • Dice bacon; add bacon and sliced onion to casserole, atop the celery.
  • Sprinkle all with fresh parsley.
  • Combine stock and water (or just use all stock) and pour over dish; don't stir.
  • Dot casserole with small bits of butter.
  • Cover dish and bake for 30 to 45 minutes, or until celery is cooked but not mushy.
