THE BEST EGGLESS WAFFLES RECIPE
The best eggless waffles recipe - crispy on the outside, fluffy on the inside with a hint of lemon!

Steps:
- In a bowl combine milk and lemon juice and let sit for 5 minutes (this is essentially creating buttermilk, you could use buttermilk instead of this step). After 5 minutes add in canola oil, vanilla extract and almond extract (if using.)
- In another bowl combine flour, baking powder, sugar, and lemon zest, stir to combine.
- Pour wet ingredients into dry ingredients, stir, and let sit for 5 minutes (let the baking powder do it's thing - the mixture thickens up a bit and bubbles a little.)
- Warm waffle iron according to manufacture directions. I have this waffle iron and love it so much!
- Spray heated waffle iron with cooking spray and spoon batter into waffle iron, cook until done (mine is about 5 minutes). Repeat until all waffles are made.

DAIRY FREE AND EGG FREE CHAFFLE BREAD RECIPE

- Add all the ingredients to a small bowl and mix well until it's fully combined.
- Preheat the mini Dash waffle maker and add half the mixture to the waffle maker.
- Cook it for about 3 minutes.
- Set on a cooling rack.
- Cook the last bit of batter to make the second piece of bread.
EGGLESS CHAFLE
This recipe was a special request from one of my YouTube subscribers whose daughter has a severe egg allergy. It was a very challenging recipe to get up to my standards, because without the protein structure of egg or the gluten of flour, you have to get pretty creative to get something that holds together like a waffle. The substitute for the egg is aquafaba, the thick liquid that is found in a can of chickpeas.

Steps:
- Combine almond flour, coconut flour, whey protein, pixie dust, xanthan gum and mozzarella in a food processor and pulse until the consistency of bread crumbs.
- Add the aquafaba and process until you have a batter.
- Divide the batter between two Dash Mini waffle makers and cook for roughly 4 minutes (when just a small amount of steam is coming out of the waffle maker).
- Allow to cool for a couple of minutes, then serve with syrup.

- Preheat a mini waffle iron (such as Dash™) and spray with nonstick cooking spray.
- Pour 3/4 cup plus 1 tablespoon water into a large bowl. Stir in flour, sugar, vanilla extract, and salt to make a batter.
- Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Fold into the batter, being careful not to overmix.
- Ladle a couple tablespoons of batter onto the preheated iron and cook until golden brown, 3 to 5 minutes. Repeat with remaining batter.
