1/2 cup milk
1/3 cup vegetable oil
1 egg
1 2/3 cups Gold Medal™ all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white baking chips
3/4 cup sliced almonds
1 teaspoon shortening

Steps:

  • Heat oven to 400° F. In medium bowl, beat milk, oil and egg with fork. Stir in flour, sugar, baking powder and salt just until moistened. Stir in 1/2 cup of the baking chips and 1/2 cup of the almonds.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
  • Bake 7 to 9 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet to wire rack.
  • Place remaining 1/4 cup baking chips and 1 teaspoon shortening in microwavable bowl. Microwave uncovered on Medium-High (70%) about 1 minute 30 seconds, stirring every 30 seconds, until chips can be stirred smooth. Drizzle over warm muffin tops. Sprinkle with remaining 1/4 cup almonds, pressing slightly into melted chips.

3/4 cup powdered sugar

Steps:

  • HEAT oven to 350°F. Stir butter, sugar and 2 tablespoons milk in medium bowl until blended. Stir in muffin mix until dough forms. Let stand 5 minutes. Roll into 24 (1-inch) balls. Place 2 inches apart on baking sheets. Flatten with bottom of glass that has been dipped in flour.
  • BAKE 7 to 9 minutes or until edges are light golden brown. Cool on baking sheet 2 minutes. Remove to wire rack to cool completely.
  • WHISK powdered sugar and just enough milk to make a smooth glaze. Drizzle over cooled cookies.

Just a few extra ingredients added to this easy cookie mix make a delicious treat for the whole family!

1 17.5 oz [Pillsbury Purely Simple chocolate chip cookie mix
1 egg
1/2 cup butter, softened
1/2 cup butterscotch chips
1/2 cup caramel bits
1/2 cup crushed pretzel sticks

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, mix together cookie mix, egg, and butter until completely combined. Fold in butterscotch chips, caramel bits, and pretzel sticks.
  • Grease and flour muffin tins (or use a muffin tin liner), then fill each tin with dough, about 2/3 to 3/4 of the way full (they won't rise like muffins do, so don't worry about them overflowing).
  • Bake for 9-11 minutes, or until the edges and top start to turn a golden brown.
  • Remove from a muffin tins (I used a small rubber spatula around the edges and they came right out!) and serve warm and gooey.

3/4 cup shredded cheddar cheese
1/4 cup crumbled cooked bacon
2 tablespoons minced chives
FOR CINNAMON-RAISIN MUFFINS:
1/2 cup raisins
1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. Cut in shortening until the mixture resembles coarse crumbs. Store in airtight containers in a cool, dry place or in the freezer for up to 6 months. Yield: 4 batches (10 cups). , To prepare plain muffins: Place 2-1/2 cups muffin mix in a bowl. Whisk egg and milk; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 425° for 15-20 minutes or until a toothpick comes out clean. Let stand for 5 minutes before removing to a wire rack. , To prepare cheddar muffins: In a bowl, combine 2-1/2 cups muffin mix, cheese, bacon and chives. What a great little, I mean little in quantity, sweet little treat. I adapted this from a One Cookie recipe here on Recipe Zaar. When I made, it made exact amount for two, or four really, but we, two of us, ate all in one night. A great recipe when you don't want to make too much, just right and super quick and simple! Enjoy!!!

3 tablespoons unsalted butter
4 1/2 tablespoons sugar
2 tablespoons water
1 teaspoon vanilla extract
1/2 teaspoon salt
5 tablespoons flour
1/2 teaspoon cinnamon
butter-flavored cooking spray

Steps:

  • Preheat your oven to 350°F.
  • Mix in a bowl butter, sugar, vanilla and water until blended.
  • Stir in flour and salt until well blended.
  • Stir in cinnamon, or any other flavorings, maybe some M&M's, chocolate chips, almond extract, nuts etc.
  • Spray a mini muffin tin with butter flavored cooking spray, drop batter into molds.
  • Bake in oven for 14 minutes, this is what I did and I got chewy centers. If you want harder, perhaps cook for an additional 3-5 minutes.
  • Set on wire rack and carefully take mini muffins out using a butter knife and transfer to serving plate.
  • This made 11 out of the 12 mini muffin molds for me!

  • In a large bowl, whisk first 6 ingredients until well blended. Store in airtight containers in a cool, dry place or in the freezer up to 6 months. Yield: 4 batches (11 cups mix)., To prepare plain muffins: Preheat oven to 400°. Whisk together egg, milk and melted butter. Add 2-3/4 cups muffin mix, stirring just until moistened. Fat free delicious little...ummm...errr...Cookie Muffins! These were a big hit with the two fourteen year olds in the house, as well as with me. And they're FAT FREE and low on the sugar! (This is my adaptation of a recipe out of "The Super So Fat Low Fat No Fat Cookbook")

1 cup flour
3/4 teaspoon baking soda
1/4 cup sugar or 1/4 cup sugar substitute
1/4 cup yogurt
1/2 teaspoon vanilla
1 -2 egg white

Steps:

  • Preheat oven, 375.
  • In SMALL bowl combine flour and baking soda, mix.
  • Set aside.
  • In the medium bowl beat sugar, yogurt, and vanilla till mixed.
  • Add egg and mix again.
  • Stir in the flour mixture until well blended and sticky.
  • Place sticky little rolls on cookie sheet (mine was ungreased, but greased would probably work better) and sift sugar and cinnamon over top.
  • Leave in for about 5 minutes and then CHECK.
  • Check often until the little peaky tops (which most of them will have) are slightly browned.
  • They are wonderful straight out of the oven, I don't know how they are after a while, cause we ate them-- hehehe.
