Try this tropical treat when you want to end a meal on a sweet note without too much effort or too many calories

zest and juice 1 lime
2 tbsp clear honey
2 pinches ground cinnamon
few gratings whole nutmeg
2 tsp icing sugar , sifted
200g very low-fat fromage frais
2 tsp butter
1 fresh pineapple , cut into 8 long wedges, skin and core removed

Steps:

  • Mix the lime juice and half the lime zest with 1 tbsp honey, a pinch of cinnamon and nutmeg. Set this sauce aside. Stir the icing sugar and a pinch of cinnamon into the fromage frais.
  • Heat the butter and remaining honey in a non-stick frying pan until melted. Add the pineapple and cook over a high heat for 8 mins, turning regularly until caramelised. Pour in the spiced lime sauce and bubble for a few secs, tossing the pineapple to glaze in the sauce.
  • Serve immediately, sprinkled with the remaining lime zest and accompanied by a dollop of the cinnamon fromage frais

This is an easy and healthy dessert alternative. In the Caribbean, the crema in this recipe is called Crema Centro Americana or Natilla. Buy the unsalted version. If you can't find it in U.S. grocery stores, you can substitute Mexican Crema or sour cream or low-fat cream cheese if necessary. The pineapple and crema stand alone as a dessert, but you can also chop the finished pineapple into chunks and serve it over ice cream. Yum!

1 tablespoon powdered sugar
1 cup sour cream (or Mexican Crema or low-fat cream cheese)
2 teaspoons butter

20 g butter
1 tablespoon sugar
1 tablespoon rum
150 g fromage frais
1/2 lime
2 teaspoons icing sugar

Steps:

  • Cut the pineapple into 8 wedges, cutting away and discarding the core.
  • Melt the butter and sugar in a nonstick frying pan over a medium heat. Stir continuously until the mixture starts bubbling, then turn up the heat and add the pineapple wedges. Cook for 3 minutes on each side or until just caramelised. Add the rum and cook for 1 minute more. Remove the pan from the heat and set aside to cool.
  • Meanwhile, stir together the fromage frais, lime and icing sugar. Divide the pineapple between 4 plates and serve with a generous dollop of fromage frais.
