COOKIES N CREAM CHEESECAKE CUPCAKES
Personal sized Cookies N Cream Cheesecake!! I usually halve the recipe and it works fine. Also, I don't always have room in my fridge for the whole muffin pan so if I have to, I remove them from the pan to refrigerate them.

Steps:
- Preheat oven to 275 degrees. Line muffin tins with paper liners, placing 1 whole oreo at the bottom of each liner.
- With an electric mixer on medium-high, beat cream cheese until smooth, scraping the sides of the bowl occasionally. Gradually add sugar and beat until combined. Beat in vanilla.
- Add in eggs one at a time, beating to combine. Beat in sour cream and salt.
- Stir in chopped oreos by hand.
- Fill cups almost to the top. Bake, rotating the pans halfway through, until the filling is set, about 22 minutes.
- Transfer tins to a wire rack to cool completely.
- Refrigerate in tins for at least 4 hours (or overnight). Remove from tins just before serving.

- Line 2 (12-cup) muffin pans with cupcake liners.
- At low speed, beat cake mix, water, eggs, and sour cream until combined.
- At medium speed, beat 2 minutes. Stir in 2 cups chopped cookies. Divide batter among liners.
- Bake 17 minutes or until toothpick inserted into centers comes out clean. Cool 10 minutes. Remove from pans; cool on racks.
- Meanwhile, gently stir remaining chopped cookies into frosting. Spread over cupcakes. If desired, garnish with halved cookies.

- Crush 12 cookies finely; place in medium bowl. Add butter; mix well. Press onto bottom of 9-inch springform pan. Bake 10 min. Meanwhile, cut remaining cookies into quarters.

Steps:
- Topping: Combine 1 cup peaches, mango juice, sugar and cornstarch in a medium saucepan. Cook and stir over medium heat until mixture bubbles and thickens.
- Cool for 10 minutes, then add the remaining 1 cup peaches. Set aside.
- Cheesecake: Preheat oven to 300 degrees.
- Combine all cheesecake ingredients in a mixing bowl and beat on medium speed with electric mixer until smooth.
- Place paper baking cups into muffin tins and fill cups 2/3 full with cheesecake batter.
- Bake for 40 minutes.
- Filling: Mix sour cream filling ingredients in a small mixing bowl using a spoon.
- When the cupcakes sink in the middle, place a scant tablespoon of sour cream mixture in the middle of each one. Place back into the oven for 5 more minutes.
- Remove from oven and cool.
- When cool, spoon about 1 1/2 to 2 tablespoons of Peach-Mango topping over the top of the sour cream filling on each cupcake and refrigerate.

- Preheat oven to 350 degrees. Line two 12-cup muffin tins with paper liners. In a large bowl, combine flour, cocoa, sugar, baking soda, baking powder and salt. Add eggs, melted butter, buttermilk, vanilla and 1/2 cup hot water; whisk until smooth.

- Separate the cream from the cookies into 2 different bowls.
- Place the cookies into a plastic bag and crush them into fine crumbs with a rolling pin. Set aside ½ cup (50g) of the crumbs for later.
- Pour the cookie crumbs into a bowl and combine with the melted butter, mixing until the texture is like slightly wet sand.
- Press the cookie crumbs in an even layer into the bottom of a 9-inch (23 cm) springform pan. Set aside.
