- In a small bowl, beat the cream cheese, sugar, egg and vanilla until smooth; set aside. For brownie layer, combine the butter, sugars and cocoa in a large bowl. Beat in eggs and vanilla. Combine flour and baking powder; gradually add to cocoa mixture. Stir in crushed cookie crumbs., Pour into a greased 11x7-in. baking pan. Spoon cream cheese mixture over batter. Sprinkle with coarsely chopped cookies. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs. Cool completely on a wire rack. Cut into bars. Store in the refrigerator.

I got this recipe off the back of a box of Duncan Hines Brownie Mix. I made it with vanilla frosting and cream cheese frosting and the cream cheese frosting made it perfect. I took this to a family party and everyone ate it up.

- Preheat oven to 350 degrees and grease bottom of 9x13 pan.
- In bowl combine ingredients as directed on the back of the brownie mix box. Add 1 cup crushed oreos. Mix well.
- Pour in pan and bake 24-26 minutes or until done.
- Cool completely.
- Spread frosting (should only need 1/2 a can) over cake.
- Sprinkle remaining crushed oreos over top.

COOKIES AND CREAM FUDGE BROWNIES
When I was eight, chocolate brownies were my life. I scoured the local stores on my Raleigh bike, looking for gainful employment to support my chocolate brownie habit. The wife of the hardware dealer took pity on me and offered me a job paying $1 an hour to iron their smalls and sheets. After two hours I had enough cash to buy a couple of brownies, plus change for some sherbet lemons on the way home. It was worth every crease!

- Preheat the oven to 350 degrees F (180 degrees C) with the middle shelf ready. Grease the baking pan, then line with parchment paper with the paper overlapping the sides a little.
- Melt the butter in a pan over medium heat. When the butter has melted, remove the pan from the heat and add the grated chocolate. Let stand for a few minutes until the chocolate goes soft, then stir together. Alternatively, you can put the chocolate and butter in bowl and melt in the microwave in 25-second blasts, stirring well each time.
- Whisk the eggs, egg yolks, and vanilla together in a large bowl until they begin to get light and fluffy. Add the sugar in two additions, whisking between each. Pour it around the side of the egg mix so as not to knock out the air that has been whisked in to it. Keep whisking until the mixture becomes stiffer. Once the egg mixture is ready, pour the chocolate into it, again around the sides so as not to knock the air out.
- Sift the cocoa into a large bowl and add the flour, salt, and a third of the Oreos. Stir until fully combined, then pour the mixture into the prepared pan. Scatter the remaining Oreos over the top, pressing them in slightly. Bake in the oven for 25 to 30 minutes. The middle should be very so slightly gooey.
- Let the brownies cool in the pan. The top will sink and crack a little. Pull the brownies out using the overlapping paper and cut the brownies into squares. Dust with confectioners' sugar.
- Cook's Note: Substitute Oreos for toasted walnuts or pecans or sprinkle the brownies with honeycomb.

- Preheat the oven to 350°F (180°C). Grease a 9x13-inch (22x33 cm) pan with nonstick cooking spray.
- To make the brownie portion, place the semisweet chocolate chips and butter in a large, microwave-safe bowl. Place in the microwave and heat on high power in 30-second intervals, stirring between, until the chocolate is melted and smooth.
- Whisk in the granulated sugar until smooth.
- Add the eggs, vanilla, salt, and cocoa powder, and whisk until well mixed.
- Add the flour and, using a spatula, stir carefully until incorporated, but not overmixed.
- Fold in the chopped Oreos. Set aside.
- To make the cookie portion, cream together the butter, cream cheese, and granulated and brown sugars in the bowl of a stand mixer, or in a large bowl using a hand mixer, until smooth and fluffy.
- Mix in the egg and vanilla.
- Sift the flour, baking soda, and salt together into a medium bowl. Then mix in with the wet ingredients until well combined.
- Gently fold in the cookies and cream bars and Oreos. Set aside.
- To assemble the brookie, spread the brownie batter in the prepared pan.
- Use your hands to evenly drop flattened portions of cookie dough over the top of the brownie mixture in the pan, covering it completely. Note: the cookie dough is not going to easily spread, so just drop in flattened portions; it will bake together.
- Bake for 40-50 minutes until the top is dark golden brown and a toothpick inserted all the way into the brownie layer comes out clean.
- Let cool for 1-2 hours and then cut into 24 squares.

- Heat oven to 170C/150C fan/gas 3 and line a 18 x 30cm brownie tin with baking parchment. In a bowl mix together the flour, sugar, cocoa and ½ tsp salt. In a jug mix together 125ml water with the vanilla, oil, vinegar and yogurt. Pour the wet ingredients into the dry and mix until smooth and combined.
- Pour the mix into the tin and smooth the top. Push the chunks of vegan biscuits into the batter, leaving some poking out of the top. (We used Oreos, which are made with dairy-free ingredients, although be aware that allergy information indicates that these may contain traces of milk.) - Combine brownie mix, egg, water and oil in large bowl.
- Stir until well blended and soft dough forms.
- Drop by level measuring tablespoons about 2 inches apart onto greased cookie sheet.
- Bake at 375 for 7-8 minutes or until cookies are set in center. Do Not Overbake.
- Cool 1 minute before removing to cooling rack.
- Cool completely before assembling.

- Preheat oven to 350°F (177°C). Line the bottom and sides of a 9×13 baking pan with parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier!). Set aside.
- Prepare brownie batter. Spread into prepared baking pan. My homemade brownie batter is very thick, so do your best to spread it to the edges. Doesn’t have to be perfectly neat. Press 24 Oreos down into the top of the brownie batter; you want 6 rows of 4 Oreos.
- Bake for 32 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs. My homemade brownies with Oreos on top take about 35 minutes.
- Remove from the oven and place on a wire rack to cool completely in the pan. Once cool, lift the parchment paper out of the pan using the overhang on the sides. Do not cut into squares yet. (TIP: It’s helpful to place the whole slab of brownies (parchment paper still underneath) on a baking sheet because you will need to chill the layers. The baking sheet makes transporting to the refrigerator easier!)
