MINI LASAGNA ROLL-UPS

Steps:

• Preheat the oven to 350 degrees F. Coat an 8-inch oval baking dish with cooking spray and set aside.
• Mix together the ricotta, spinach, Parmesan, Italian seasoning, onion powder, salt, pepper, garlic, egg and lemon juice in a large bowl.
• Lay out the cooked noodles and cut each one in half widthwise. Spread about 2 tablespoons of filling on each noodle. Tightly roll the filling in the noodle and place seam-side down in the prepared baking dish. Arrange the rolls in a row and top each with a spoonful of sauce and sprinkle of mozzarella.
• Bake until the filling is warm and the cheese is melted, 15 to 20 minutes. Serve the rolls on toothpicks with any remaining tomato sauce on the side for dipping.

DEEP-DISH SPAGHETTI PIZZA

Steps:

• Cook the spaghetti according to the package directions, then drain and set aside to cool.
• Preheat the oven to 350 degrees F. Generously spray a 10-inch springform pan or deep-dish pie pan with cooking spray.
• In a bowl, mix the cooked spaghetti, Parmesan, milk, garlic powder, salt, eggs and 1 cup mozzarella cheese.
• Spoon the mixture into the prepared pan and press it down into the pan. Pour on the pizza sauce. Add the preferred toppings and sprinkle with the remaining cup mozzarella. Place the pan on a rimmed baking sheet and bake until golden and bubbly, 35 to 40 minutes.

CHOCOLATE BROWNIE CRUNCH

Steps:

• Preheat oven at 350 degrees F.
• Prepare brownies as directed on the box for "cake-like" brownies but add additional 3 eggs. Spread half the batter into an 8 by 8-inch prepared pan, top evenly with the pecans and chocolate caramel covered wafers.. Cover with remainder of batter. Bake for 35 to 40 minutes or until the brownies are almost cooked through. Remove brownies from oven. Cool completely. Remove brownies from pan keeping square intact. Place on a baking sheet.
• Top with ganache, whipped topping, raspberries, and chocolate shavings.
• Mix together syrup and chocolate. Pour warm cream over syrup and chocolate. Stir until melted.
• Whip the heavy cream, adding the sugar and cognac.

QUICK SAUSAGE AND SEAFOOD STEW

Steps:

• Heat the olive oil in a large stockpot over medium heat. Add the sausage and saute until beginning to brown, 3 to 5 minutes. Stir in the onions, celery and bell pepper and cook until translucent, 3 to 5 minutes. Add the garlic and saute for 1 minute. Add the tomatoes, corn, Worcestershire sauce and red pepper flakes and cook for 2 minutes. Add the broth and 2 cups water and bring to a rapid boil. Reduce the heat to a simmer, cover and cook for 8 minutes.
• Season with salt and pepper. Add the fish and seafood to the pot and stir well. Cover and cook just until the shrimp are opaque and the mussels are open, 2 to 3 minutes. Stir in the cilantro to finish.
• Serve the stew in bowls garnished with additional cilantro. If serving with rice, spoon about 1/2 cup cooked rice in the center of each bowl first, then top with the stew.

GRAVEYARD CRUNCH

Steps:

• PREHEAT oven to 300°F Place syrup, butter and cinnamon in large microwaveable bowl. Microwave on HIGH 1 min.; stir until butter is completely melted. Add cereal and peanuts; mix lightly. Spread into lightly greased 15x10x1-inch baking pan.
• BAKE 30 min., stirring after 15 minute Cool completely. Break into pieces; place in large bowl.
• ADD marshmallows and candies; mix lightly. Store in tightly covered container at room temperature.

CUPCAKE GRAVEYARD

Steps:

• Prepare and bake cake mix according to package directions for cupcakes.
• In a medium bowl stir 1 package of frosting with the cookie crumbs.
• Frost cooled cupcakes.
• Fill a pastry bag, fitted with a plain tip, with remaining white frosting.
• Write R.I.P. on each chocolate covered graham cracker cookie.
• Stand a decorated cookie on top of each cupcake so that it looks like a tombstone.
• Place the cupcakes on a large cookie sheet that has been covered with green paper.
• Place paper ghosts and bats randomly through the graveyard.
• Serve!

HAUNTED GRAVEYARD PUDDING

Steps:

• Pour cold milk into a large bowl; add pudding mix and stir together; beat with a wire whisk for several minutes.
• Stir in half of the crushed Oreos.
• Spoon mixture into an oblong casserole dish or baking pan.
• Sprinkle top of pudding with the rest of the Oreo cookies.
• Refrigerate for 1 hour, or until ready to serve.
• Just prior to serving, use the decorator icing or gel to write on the tops of the cookies some messages like"RIP" and stick them partway into the pudding, slightly bent.
• Make ghosts with the can of whipped cream, basically as a big blob, with 2 chocolate chips stuck in for the eyes.
• Place the candy pumpkins around on top of the crushed cookies, and sprinkle with jimmies to fill in the empty spots.
• Serve chilled.
