BAKED PORK CHOPS AND RICE
Growing up, this was a staple in my home. This is a great recipe because the pork and rice cook in the same dish. The rice is flavorful and the pork chops come out nice and tender.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Melt butter in a large skillet over medium heat; cook and stir onion until golden brown, 15 to 20 minutes. Transfer onion to a plate.
- Sprinkle seasoned salt over all sides of each pork chop. Place pork chops in the same large skillet and cook until browned, 1 to 2 minutes per side.
- Mix beef consomme and water together in a 9x13-inch baking dish. Pour rice into the broth mixture; add caramelized onion. Gently arrange pork chops over rice in a single layer. Cover baking dish with aluminum foil.
- Bake in the preheated oven until pork is cooked through, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

PORK CHOPS AND RICE
Steps:
- Preheat the oven to 350 degrees F.
- In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
- Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
- Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.
CONNIE'S PORK CHOPS OVER RICE
I was very pleasantly surprised at how nicely this came together. It is super easy, not terribly expensive and the end result is delicious. It is a very warm, inviting and comforting meal. My family loved it and we'll be making it many more times.

Steps:
- 1. Gather all ingredients.
- 2. Spray hot cast iron skillet with Crisco oil spray.
- 3. Salt and pepper both sides of pork chops. Brown pork chops on both sides. This will take about 25 minutes total.
- 4. Place uncooked rice in bottom of a casserole dish that has a cover.
- 5. Place browned pork chops over rice.
- 6. Add 1 cup of water to hot skillet and scape off the browned bits.
- 7. Pour undilated beef consomme' and skillet drippings over pork chops and rice.
- 8. Cover and bake 50 minutes at 350 degrees. Times may vary based on thickness of the pork chops.
- 9. Enjoy!

Our "go to" Pork Chop and Rice casserole for a weekday family meal is an heirloom recipe passed down by my mother's Midwest family. Easy to make, especially tasty for a winter's dinner and, if they are any, not a bad leftover meal! For non-meat eaters in the family, the rice is hands down the best!

- 1. Preheat oven to 350degrees
- 2. Spray a 2 quart casserole dish with cooking spray (makes clean-up much easier!)
- 3. Place 1 cup of uncooked long grain rice in dish.
- 4. Put pork chops on top of rice, followed by onion, bell pepper and tomato slices.
- 5. Pour 10 1/2 ounce can of beef consommé soup into a 2-cup measure and add water to make 2 cups liquid. Pour on casserole ingredients.
- 6. Season with salt, pepper and optional garlic salt.
- 7. Cover casserole dish and cook in 350 degree oven for one hour, or until rice is tender.
- 8. Take out of oven, remove cover and let rest for 5 minutes before serving.
- 9. Enjoy!

This recipe comes straight from my great aunt in Georgia. It has been my favorite since I was a little girl. Very simple to make and even better to eat! Serving size depends on how many chops you use.

Steps:
- Pre-heat oven to 350 degrees.
- Put approximately 1 cup of uncooked rice in the bottom of a casserole dish.
- Cover the rice with can of French Onion Soup (save the can!).
- Brown the pork chops in a large skillet and set aside.
- Fill the saved can with water and pour into the skillet that you just browned the pork chops.
- Scrape the fixins from the pan with the water and pour all into the casserole dish.
- Stir together all ingredients that are in dish and spread rice evenly out on the bottom.
- Place chops in single layer on top of rice mix.
- Bake in oven for 1/2 hour uncovered.
- Cover with foil and bake additional 1/2 hour.
CONSOMME PORK CHOPS AND RICE
This is a very easy and good pork chop recipe that I have been making for 30 years. This recipe could be cut in half and baked in an 8X8 pan instead.

- Over medium high heat in dutch oven on the stove, combine rice, butter and onion. Cook until rice is lightly browned, butter melted and onion soft.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat the oil in a skillet over medium heat. Place the flour in a shallow dish. Season pork chops with salt and pepper, and press in the flour to lightly coat. Place chops in the skillet, and lightly brown on both sides. Drain on paper towels.

CONSOMME & BOUILLON PORK CHOPS AND RICE
Steps:
- After washing pork chops, place them in large fry pan and lightly brown on both sides.
- When browned, add rice and enough water to cover pork chops and rice. Bring to a boil and then lower temperature to medium heat. After 15 minutes, check tenderness of pork chops with a fork. If not as tender as desired, add more water again covering the pork chops.
- When tender, add one can of beef consomme and the beef bouillon. If rice has absorbed most of the liquid, more consomme or water should be added. Simmer 10 minutes to allow consomme and bouillon to cook in before serving. Serve with a green vegetable or a green salad.

UNBELIEVABLY PRIMO PORK CHOPS AND GRAVY
Given to me by my best friend, Ronna, under threat of serious injury, this method, along with the use of boneless, thick-cut chops, qualify it as the best pork chop recipe I've ever had. No more dry, tough chops in MY house. Easily good enough for company. We always make it with Better Than Bouillon brand chicken stock concentrate, which is a paste in a jar, but you can use regular chicken stock/broth as well. Please read ingredient list carefully. It's *either* stock concentrate AND water or prepared stock and NO water.

- In a pot, warm the chicken broth (or chicken stock concentrate plus the 3 cups water) over medium heat.
- Heat the oil on high. Trim the chops of excess fat and season with pepper.
- Sear the pork chops in the (very) hot pan. Noisy work... a spatter guard helps here! Sear the chops on all sides including the edges (hold them with tongs edge-side-down). Put them on a plate, cover with foil and set aside.
- Deglaze the pan with the vermouth or wine. Add the chicken stock from the pot, completing the deglazing. Now pour everything from the pan back into the pot. (Confused yet?).
- Put the chops in the pot, reserving the foil that covered them. Check if the fluid level is high enough in the pot; it should be about 1/4 inch or less below the tops of the chops, but the chops should not be covered by the chicken stock.
- Cover pot with lid. Let simmer on medium-low for 20 minutes. Flip the chops over and let simmer for another 20 minutes, checking every now and then to assure there's enough fluid left in the pot. If not, add a little more chicken stock.
- Take the chops out of the pot and cover again with reserved foil. In a small bowl, mix the teaspoon of flour with a tablespoon of water until well-blended and whisk into the stock to thicken. Turn the heat to high and let cook, stirring occasionally, until the stock/gravy reduces slightly and thickens. This may take several minutes.
- Plate the chops with mashed potatoes and introduce them both to that lucious gravy!
CONSOMME RICE
Excellent side with pork tenderloin or thick cut chops. I like to use Zatarain's Parboiled Extra Long Grain rice when I make this.

An old friend gave me this recipe several years ago, the first time I made it my mother fell in love with it and she would make it so much, because it is so easy, that we all got sick of it. But it really is a good recipe if you don't over cook it.
