Yield Makes about 15 dozen

Number Of Ingredients 6

6 cups macadamia nuts
1 one-pound box graham crackers
8 tablespoons (1 stick) unsalted butter, melted
10 ounces bittersweet chocolate, finely chopped
1 1/2 cups packed sweetened shredded coconut
Caramel for Cookies

Steps:

  • Heat oven to 350 degrees. Spread macadamia nuts on a baking sheet, and bake until golden, about 10 minutes. Set baking sheet on a wire rack to cool.
  • Line an 11-by-18-inch baking pan with parchment paper. Using a food processor or rolling pin, finely crush graham crackers. Place in a medium bowl. Stir in melted butter. Press mixture into the bottom of prepared baking pan in an even layer. Sprinkle the chocolate over the graham crackers. Sprinkle the coconut over the chocolate. Sprinkle the reserved nuts over the coconut.
  • Using a microwave or double boiler, heat the caramel until liquid. Drizzle caramel over macadamia nuts. Bake until golden, about 20 minutes. Transfer pan to a wire rack to cool. Cut into 3/4-by-1 1/4-inch pieces.

These congo bars, also known as 7-layer bars, include a graham cracker base and sweetened condensed milk, chocolate chip, shredded coconut, and pecan topping. And they taste like childhood, too.

1/4 cup all-purpose flour (plus more for the pan)
1/4 teaspoon baking powder
1 teaspoon salt
1 cup graham cracker crumbs ((from about 10 whole crackers))
1/3 cup light brown sugar
7 tablespoons unsalted butter (at room temperature, plus more for the pan)
1 1/4 cups sweetened flaked coconut
1/2 cup semisweet chocolate chips
1/4 cup milk chocolate chips
3/4 cup sweetened condensed milk
1/3 cup chopped pecans or any other nut you fancy (if desired)

Steps:

  • Preheat the oven to 350°F (176°C). Butter an 8-by-8-inch or 9-by-9-inch baking pan, dust with flour, and tap out the excess.
  • Combine the flour, baking powder, and salt in a bowl. Stir in the graham cracker crumbs and light brown sugar and mix well.
  • Work the butter into the crumb mixture with your hands until the crumbs are evenly coated with buttery goo. Spread the crumb crust in the prepared baking pan, pressing down gently with your hands. You don't want to make the crust too dense or compact. Bake for 10 minutes, or until the crust is slightly golden. Remove from the oven and let cool while you make the topping. Oh, and leave the oven on.
  • While the crust is cooling, mix together the coconut, both chocolates, and the condensed milk. Add the pecans or other nuts, if desired. Spread the mixture evenly over the warm crust. Return to the oven and bake for 20 to 23 minutes, or until the top is set and light brown. Watch carefully toward the end of the baking time to make sure the top doesn't become too bubbly or dark.
  • Let the pan of bars cool on a wire rack for 2 hours or so, until the chocolate is no longer soft and they slice easily.
  • Cut into whatever size or shape you fancy.

2 teaspoons baking powder
½ teaspoon salt
⅔ cup shortening
2 ¼ cups packed brown sugar
3 eggs
2 cups semisweet chocolate chips
1 cup chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Melt shortening, stir in brown sugar. Let cool.
  • Beat in the eggs.
  • Add dry ingredients.
  • Add chocolate chips, nuts and vanilla.
  • Pour in 10 x 15-inch pan and bake for 30 minutes. Cool and cut into squares.

¾ cup butter, melted
2 ¼ cups packed light brown sugar
3 eggs
2 ¾ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
1 cup chopped walnuts
6 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking pan. Set aside.
  • In a large mixing bowl, combine butter or margarine and brown sugar; cool slightly. Beat in eggs, one at a time. In a separate bowl, combine flour, baking powder, and salt; add to sugar mixture and mix well. Stir in nuts and chocolate chips.
  • Pour into prepared pan. Bake for 25 to 30 minutes. When almost cool, cut into 48 squares.

This recipe was given to me nearly 50 years ago, at a company picnic, and it's our family's favorite dessert. Now my grandchildren bake it for their families. When each of our three sons got serious about a girl, sure enough, I'd get a call from a young lady requesting "his favorite dish". I always gave the girls this recipe.

2/3 cup shortening
2-1/4 cups packed brown sugar
2-3/4 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs, beaten
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
1 cup chopped nuts

Steps:

  • In a saucepan, melt shortening over medium heat. Stir in brown sugar. Cool slightly. Combine flour, baking powder and salt; add gradually with eggs to shortening mixture. Stir in the vanilla, chips and nuts (batter will be very stiff). , Spread into a greased and floured 13x9-in. baking pan. Bake at 350° for 25-30 minutes. Cut into squares while warm.

1 lb brown sugar (one box)
2/3 cup shortening
4 eggs
2 3/4 cups sifted flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup nuts, meats
10 ounces chocolate chips
1/2 teaspoon vanilla

Steps:

  • Melt shortening, add brown sugar, mix well.
  • While still hot add eggs one at a time, mix well after each egg. Add sifted dry ingredients, mix well.
  • Add nuts, chocolate chips, mix well. Spread
  • Mixture out onto greased 12"X17"X1" sheet baking pan. Bake in 350° oven, for 30 minutes.

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick baking spray.
  • Beat the butter and sugar until creamy. Add the eggs and vanilla and beat again.
  • Stir together the flour, baking powder, and salt and slowly add to the butter mixture until a soft thick dough forms.
  • Stir the chocolate chips in by hand. Spread the mixture in the prepared pan.
  • Bake for 30 minutes. Do not over bake!!! Remove and let the bars cool completely before cutting into bars.
  • Store in a tightly sealed container.

  • Bake for 30 minutes or until top is golden brown.
  • Do not over bake.
