2 English muffins, split, or 4 slices sourdough, rye, or whole wheat bread
2 tablespoons prepared mayonnaise (optional)
1 recipe Tuna Salad, recipe follows
1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.

1 small onion, chopped

  • Preheat oven to 350°. In a bowl, combine the first six ingredients; set aside. Spread butter over cut sides of buns. Spread tuna mixture on bun bottoms; replace tops. Wrap in foil. , Bake until the cheese is melted, 15 minutes.

2 (5-ounce) cans tuna
1/3 cup mayonnaise
1 teaspoon Dijon mustard
3 tablespoons finely chopped red onion
3 tablespoons finely chopped celery
3 tablespoons chopped parsley
1 tablespoon lemon juice (or pickle juice)
Optional: 1 tablespoon chopped dill
1/8 teaspoon freshly ground black pepper
1 large tomato (thinly sliced, 8 slices)
1 1/2 cups shredded cheddar cheese (or 8 thin slices of cheddar or American cheese)
8 slices bread (French, white, wheat, or your favorite, sliced about 1/2-inch thick)
3 tablespoons butter (softened)

Steps:

  • Gather the ingredients.
  • Drain the tuna and transfer it to a medium bowl.
  • Add the mayonnaise, Dijon mustard, red onion, celery, parsley, lemon juice, dill (if using), and pepper to the tuna, stirring until well blended.
  • Spread the tuna mixture onto a slice of bread. Top with 2 slices of tomato and about 1/4 cup of the cheese (or 1 to 2 slices).
  • Place another slice of bread on top of the cheese layer and carefully spread about 1 teaspoon of the butter over top. Repeat with the remaining bread, tuna, tomato slices, and cheese.
  • Heat a skillet over medium. Place 1 or 2 sandwiches in the pan, buttered side down. Butter the top piece of bread and cook for about 4 to 6 minutes or until the bottom is golden brown. Carefully turn the sandwich over and continue to cook for 4 or 5 minutes to brown the other side. Repeat with the remaining sandwiches.
  • Slice the sandwiches and serve with potato chips or fries and dill pickle slices.

1/2 cup minced scallions, white and light green parts (3 scallions)

3/4 cup good mayonnaise, such as Hellmann's

Steps:

  • In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
  • Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely.   • Place the bread slices on a baking sheet and broil for 1 minute or until lightly toasted.
  • Remove from heat, divide and spread the tuna mixture on top of each bread slice.
  • Place one cheese slice over the tuna, then one tomato slice (you can use 2 tomato slices if your wish) then another slice of cheese on top.
  • Return the layered bread to oven and broil for about 3 minutes, or until the cheese is melted.

1 (6.5 ounce) jar oil-packed tuna, drained
1 tablespoon minced green onion
2 tablespoons finely diced celery
2 teaspoons capers, drained
1 teaspoon Asian chile paste (such as sambal oelek)
2 tablespoons mayonnaise, or more to taste
⅓ cup fresh mozzarella cheese
salt and ground black pepper to taste
2 tablespoons softened butter, divided
2 thick slices French bread
¼ cup shredded sharp white Cheddar cheese, divided
1 pinch cayenne pepper, or to taste

Steps:

  • Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
  • Heat oven's broiler. Line a baking sheet with aluminum foil.
  • Spread butter generously on both sides of French bread slices.
  • Broil buttered bread until golden brown on top, 2 to 3 minutes. Flip bread slices and broil other side until toasted, 2 to 3 more minutes. Remove from oven and turn bread slices over on the baking sheet so the darkest sides are on the bottom.
  • Gently spread tuna salad onto bread slices using 2 forks. Press the salad onto the bread and spread tuna all the way to the edges of the bread. Spread shredded sharp Cheddar over each sandwich. Dust tops with cayenne pepper.
  • Place sandwiches under broiler and cook until cheese is melted and bubbling, 5 to 6 minutes.

200g can tuna , whatever type you've got in the cupboard
½ a bunch of spring onions , finely chopped
4 tbsp mayonnaise
3thick slices of granary or wholemeal bread
50g cheddar , coarsely grated
generous pinch of paprika

Steps:

  • Preheat the grill on its highest setting. Drain the tuna, flake it into a bowl and mix with the spring onions and mayonnaise. Season with salt and plenty of freshly ground black pepper.
  • Toast the bread under the grill until it's nicely browned on both sides, then spread the tuna mixture on top, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
  • Slice in half, sprinkle with paprika and tuck in.

2 tablespoons mayonnaise
1 pinch salt
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
2 slices whole wheat bread
2 teaspoons chopped dill pickle
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.
  • In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.
  • Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.

We may never know if this story is true, but there's no doubt that the tuna melt has become a classic American diner food. This recipe adds chopped cornichons and whole-grain mustard for a satisfying crunch and vinegary element. Extra-sharp Cheddar is a must, and as with grilled cheese, the key to achieving perfectly melted cheese and golden bread is to toast the sandwich over medium-low heat. If you prefer an open-face tuna melt, skip the top piece of bread and place the sandwich on a sheet pan under the broiler until the cheese melts.
