My mother has made these since I was little and then I made them for my kids. They are great to take to a picnic as they carry well.

Number Of Ingredients 8

2/3 cup butter (melted)
1 lb light brown sugar
3 eggs
2 3/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
12 ounces chocolate chips
1 cup chopped walnuts

Steps:

  • Melt the butter and add brown sugar; mix well and cool.
  • Add eggs, one at a time, beating well each time.
  • Add dry ingredients and mix well.
  • Add the nuts and chocolate bits.
  • Put in a greased 9x13 pan and bake 350 degrees for about 25-30 minutes.

2 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
2/3 cup butter, softened
2 1/4 cups brown sugar
3 eggs
2 teaspoons vanilla
2 1/2 cups chocolate chips

Steps:

  • Pre-heat the oven to 350°F.
  • Sift the flour, baking powder and salt in a large bowl. Set aside.
  • Combine the butter and sugar using a mixer until blended.
  • Add the eggs, one at a time, to the sugar mixture, mixing on low in between each addition.
  • Add the vanilla and mix.
  • Add the flour and mix until combined.
  • Stir in the chips.
  • Coat a 9-inch x 13-inch pan with nonstick cooking spray and spread the batter evenly into the dish.
  • Bake for 30 minutes, then cover the top with foil to avoid over-browning.
  • Bake for another 10-15 minutes, or until a toothpick inserted in the middle comes out with moist crumbs. You will think they are under-done, but they aren't. Make sure you don't overbake!

6 cups macadamia nuts
1 one-pound box graham crackers
8 tablespoons (1 stick) unsalted butter, melted
10 ounces bittersweet chocolate, finely chopped
1 1/2 cups packed sweetened shredded coconut
Caramel for Cookies

Steps:

  • Heat oven to 350 degrees. Spread macadamia nuts on a baking sheet, and bake until golden, about 10 minutes. Set baking sheet on a wire rack to cool.
  • Line an 11-by-18-inch baking pan with parchment paper. Using a food processor or rolling pin, finely crush graham crackers. Place in a medium bowl. Stir in melted butter. Press mixture into the bottom of prepared baking pan in an even layer. Sprinkle the chocolate over the graham crackers. Sprinkle the coconut over the chocolate. Sprinkle the reserved nuts over the coconut.
  • Using a microwave or double boiler, heat the caramel until liquid. Drizzle caramel over macadamia nuts. Bake until golden, about 20 minutes. Transfer pan to a wire rack to cool. Cut into 3/4-by-1 1/4-inch pieces.

4 cups oats
1/2 cup raisins
1/2 cup bran flakes
1/2 cup coconut
1/4 cup dried cranberries
1/4 cup wheat germ
1/4 cup cornmeal
1/4 cup sunflower seeds
1/4 cup walnuts
1/4 cup almonds
1/4 cup corn oil
1/3 cup honey
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F.
  • In a large baking pan, mix together the oats, raisins, bran, coconut, cranberries, wheat germ, cornmeal, sunflower seeds, walnuts, and almonds. Add the corn oil, honey, and vanilla and mix well. Spread the granola out on the pan in an even layer and bake until the granola is golden brown, about 45 minutes.
  • Allow the granola to cool, and then serve topped with fresh fruit and milk or yogurt.

Rachael Ray is one of my favorite food network cook hosts and this is one of her recipes! DELICIOUS! I made it once for a BBQ party I went to and it was gone so fast. Unbelievable. Almost all the ladies there wanted this recipe. I also cooked this for a family, their kids gobbled it up as if it was pizza! It's a great way to use Kale in an absolutely tasty way since kale is very good for you.

1 1/2 lbs kale (de-ribbed & chopped)
salt
black pepper
3 tablespoons olive oil
1/4 lb pancetta (chopped into 1/2 inches)
1 cup heavy cream
2 garlic cloves (mashed and chopped)
1/8 teaspoon nutmeg (grated)
1/2 cup breadcrumbs
1/2 cup pecorino romano cheese (grated) or 1/2 cup parmigiano-reggiano cheese (grated)

Steps:

  • Cook the kale in a deep pot of boiling water induced with salt for about 6 minutes, drain the kale and dry them.
  • Preheat your broiler with the rack 2nd shelf down.
  • Heat a skillet over med-high heat and cook the pancetta in olive oil until crisp. Add cream, garlic, nutmeg, salt n' pepper and simmer for about 7-8 minutes until the sauce is reduced to about 1/2 to 2/3ish cup.
  • Toss in the greens into the sauce and make sure its coated evenly.
  • In a small bowl toss the breadcrumbs and olive oil, combine it with the cheese and take that and sprinkle it all over top the greens.
  • Broil for 5 minutes. Ta Da!

2 cups sifted all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
⅔ cup shortening
2 ¼ cups packed brown sugar
3 eggs
2 cups semisweet chocolate chips
1 cup chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Melt shortening, stir in brown sugar. Let cool.
  • Beat in the eggs.
  • Add dry ingredients.
  • Add chocolate chips, nuts and vanilla.
  • Pour in 10 x 15-inch pan and bake for 30 minutes. Cool and cut into squares.
