- Gallo Pinto. The name means “spotted rooster” for the speckled look of the black beans with white rice. But you won’t find any poultry in this dish. There’s a bit of onion, garlic, peppers, cilantro, and Lizano sauce.
- Arroz con Pollo. It’s all in the name. Well, mostly. This popular dish is typically made of rice (arroz), chicken (pollo), and vegetables seasoned with Lizano, garlic, onions, cilantro, and achiote (for the color) and often served with salad and fries.
- Casado. A straightforward and traditional dish, casado usually includes rice, beans, salad, plantains, picadillo (vegetable hash), corn tortilla, and an optional meat, chicken, or fish.
- Cocina Ancestral. It’s not common to find indigenous dishes in Costa Rican restaurants. But you will find native Costa Rican cuisine in at least one in San José.
- Ceviche. While Costa Rica can’t lay claim to ceviche, it’s still a dish worth devouring while you’re here, particularly if you’ll be spending time on either coast.
- Coffee. You might not imagine coffee can make a meal. But spend an evening at Finca Rosa Blanca Coffee Plantation Resort in the Central Valley, one of Costa Rica’s coffee-growing regions, and you’ll be a believer.
- Chifrijo. Named for chicharrones (fried pork skin) and frijoles (beans), this is a kind of Costa Rican fast food. Rice, beans, fried pork rinds, and pico de gallo are layered and served with tortilla chips and sometimes avocado.
- Olla de Carne. If you’re looking for Costa Rican comfort food (or a local hangover cure), order a bowl of olla de carne. This hearty beef stew made with vegetables like cassava and taro is traditionally served on weekends.
- Tres Leches. This dessert is named for the “three milks” that are used: the cake is drenched in milk, evaporated milk, and sweetened condensed milk and then topped off with heavy whipping cream.
- Traditional Sorbet. If you like the flavor of eggnog, you’ll love the sorbet at La Sorbetera de Lolo Mora in the Central Market. They’ve been using the same recipe since 1901 and after just one bite you’ll know why: with notes of nutmeg, cinnamon, and clove, it’s perfecto.

- Gallo Pinto. Gallo Pinto is a breakfast dish made of rice and beans (well that’s no surprise!). The cuisine itself has roots in both Costa Rican and Nicaraguan culture, and is typically referred to as just “pinto” by the locals.
- Casado. The Casado is probably the most traditional dish in Costa Rican cuisine. It is not a singular dish, but a dish made up of many foods. In fact, it could be thought that a casado is a marriage of the foods that are served together, since marriage is the meaning of the word casado.
- Tamal. A Costa Rican tamal is not apples to apples with a Mexican tamale. While at first glance the fillings might look the same, there are a few huge differences in the preparation.
- Arroz con Leche. This is a dessert, so obviously it is toward the top of my list. The easiest way to describe arroz con leche is to say that it is rice mixed with milk.
- Sopa Negra (Black Bean Soup) While dessert is my favorite, and breakfast is a close second, I can also proudly say I have a passion for soups! Sopa Negra is no exception, and this traditional soup of my country is sure to be filling.
- Olla de Carne. Can beef stew be considered soup? It can in my world! The hearty olla de carne is a favorite weekend dish that you’ll find being prepared in many homes across the country on any given month of the year.
- Chifrijo. If you’re looking for a great meal, or snack, chifrijo is what you are looking for. Served at local events and farmer’s markets, as well as at restaurants.
- Patacones. Patacones are deep fried deliciousness. It’s mainly served as a snack and basically consists of flattening plantains and frying them two times.
- Flan. More dessert! Flan is a sweet treat that mixes together milk, vanilla, sugar, and eggs, resulting in a delicious egg custard! Though cooked in a pan lined with caramel, it is chilled before it is served.
