Colorful Pasta with Ham image

"I made up this hearty noodle casserole as I went along, and my family was pleased with the end result," writes Heather Rowan. The Richmond, Missouri cook says she now doubles the rapid recipe and stores the extra casserole in the freezer for a night when time is at a premium.

1 package (16 ounces) tricolor spiral pasta
1-1/2 cups cubed fully cooked ham
1 can (15-1/4 ounces) whole kernel corn, drained
1-1/2 cups shredded cheddar cheese, divided
1 can (2.8 ounces) french-fried onions, divided
1 can (14-1/2 ounces) chicken broth
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup whole milk
1/2 teaspoon each celery salt, garlic powder and pepper

Steps:

  • Cook pasta according to package directions; drain. In a greased shallow 3-qt. baking dish, combine the pasta, ham, corn, 1 cup cheese and 3/4 cup onions. In a bowl, combine the broth, soup, milk and seasonings. Pour over pasta mixture; mix well. , Bake, uncovered, at 350° for 30 minutes. Sprinkle with remaining cheese and onions. Bake 5 minutes longer or until heated through.

1 tablespoon olive oil
2 ½ cups cubed fully cooked ham
½ cup chopped onion
3 cloves garlic, minced
1 teaspoon Italian seasoning
¼ teaspoon red pepper flakes
salt and pepper to taste
4 cups low-sodium chicken broth
1 ¼ cups fat free half-and-half
¼ cup all-purpose flour
1 (16 ounce) package farfalle (bow tie) pasta
2 cups frozen peas and carrots
½ cup grated Parmesan cheese
chopped parsley for garnish

Steps:

  • Heat olive oil in a large pot over medium heat. Add ham and onion; saute for about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in Italian seasoning, red pepper flakes, salt and pepper; cook for 2 minutes.
  • Whisk together chicken broth, half-and-half, and flour in a bowl until smooth; pour into the pot. Stir in farfalle pasta, cover, and cook for 15 minutes.
  • Add peas and carrots. Cook until pasta is cooked through, about 8 more minutes. Stir in Parmesan cheese and garnish with chopped parsley. Serve immediately.

16 ounces penne
4 garlic cloves, thinly sliced
4 red yellow and orange peppers, thinly sliced
1/2 cup fresh basil leaf, thinly sliced
1/4 cup parmesan cheese, grated

Steps:

  • Heat large covered saucepot of salted water to boiling over high heat. Add pasta and cook as label directs.
  • Meanwhile, in 12-inch skillet, heat oil over medium heat. Add red, yellow, and orange peppers, and cook, covered, stirring occasionally until very soft and lightly browned, 10 minute Stir in ham, garlic, 1/2 tsp salt, and black pepper, cook 1 minute.
  • When pasta is cooked to desired doneness, remove 1/2 cup cooking water and reserve. Drain pasta. In large bowl, toss pasta with peppers mixture and reserved water.Top with basil and parm. Toss to serve.

2 medium onions, quartered and sliced
3/4 cup julienned green pepper
3/4 cup julienned sweet red pepper
1 loaf (1 pound) French bread, cut into 1/2-inch cubes
1-1/2 cups cubed fully cooked ham (3/4 pound)
1 cup shredded Monterey Jack cheese
6 large eggs
2 cups 2% milk
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • In a large skillet, heat oil over medium-high heat; saute onions and peppers until tender. In a greased 13x9-in. baking dish, layer half of each of the following: bread cubes, onion mixture, ham and cheese. Repeat layers., Whisk together eggs, milk, pepper and salt; pour over layers. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 30-35 minutes.

I never seem to make enough of this salad. When people see the recipe, they look at me as if I am a little odd...but when they eat it they can't seem to stop! This recipe is great for kids and adults alike. The garlic is optional. Also, to lighten up the salad, substitute light mayonnaise, light sour cream, and turkey ham.

8 ounces ziti pasta
1 pound cooked ham, cubed
1 large red bell pepper, cut into 1 inch pieces
1 large green bell pepper, cut into 1 inch pieces
1 large red onion, coarsely chopped
15 small sweet pickles, chopped, juice reserved
1 cup cherry tomatoes, halved
1 cup mayonnaise
½ cup sour cream
2 ½ teaspoons beef bouillon granules
1 tablespoon white vinegar
½ teaspoon salt
¼ teaspoon ground black pepper
2 cloves garlic, minced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl, mix together the drained pasta, ham, peppers, onion, pickles and tomatoes.
  • In a small bowl, whisk together the mayonnaise, sour cream, beef bouillon granules, vinegar, salt, pepper, garlic and 1/2 cup of reserved pickle juice. Fold into the salad and toss gently until evenly coated. Chill overnight to allow the flavors to blend. Serve near room temperature.
