From uncovercolorado.com
- Rocky Mountain Oysters. You get the ‘world famous’ oysters of bull, bison, or calf testicles in Colorado. In case you were wondering, the dish was not invented in the mountains, however, but rather on the ranches.
- Colorado Style Pizza. The savagely thick, cheesy, soft Colorado-style pizza is also known as the Mountain Pie. A gluten-free or whole wheat crust filled with honey is layered with a thick layer of cheese that melts in the mouth.
- Lamb. Colorado is the 4th largest sheep and lamb producer and is known for its milder taste. Travel the world, but you might not find any lamb dish as rich in taste as in Colorado.
- Trout. Trout is one of the most loved fish when it comes to Colorado cuisines. Varieties including rainbow, cutthroat and brown trout can be found swimming all throughout Colorado’s lakes and rivers.
- Palisade Peaches. As the name implies, Palisade Peaches are grown in the Western Slope town of Palisade, at a variety of local farms. One prominent grower is the very old Talbott’s Mountain Gold Farm, which is around 100 years old.
- Bison. You probably have tasted a wide variety of red meat across the world. But Colorado bison is arguably one of the most flavorful red meats, and one of the healthiest, leanest too.
- Olathe Sweet Corn. Corn isn’t a major crop in Colorado but it has a good harvest in the western part of the state. Olathe is a lesser populated area near the San Juan Mountains of Colorado in Montrose County.
- Colorado Style Green Chili (Chilli Verde) The Colorado-style Green Chili has a unique taste and preparation method, giving it a justifiable position on the list.
- Denver Omelette. Omelet? Why would an omelet be on this top list? Because it’s part of the local lingo to know about the historic Denver (or Western) omelet.
- Denver Steak. The Denver steak is not just any other steak dish; it’s relatively more tender than most cuts. The steak has a good amount of marbling that adds additional flavor to the meat.

- Palisade Peaches. On the far west border of Colorado is a quaint town called Palisade located in Grand Valley. A once arid and desert-like plain, Palisade was a less than ideal place for a grove of peach trees, let alone anything else.
- Rocky Mountain Oysters. Some people say they taste like chicken…but what are they?! Contrary to what their name might suggest, Rocky Mountain Oysters are far from being bivalve mollusks found at your favorite seafood restaurant.
- Colorado Craft Beer. With more than 30 breweries right here in Colorado Springs and another nearly 400 throughout the state, it’s no wonder that Colorado is a bourgeoning haven for beer buffs.
- Green Chili / Pueblo Chilies. This spicy sauce often made with pork is a coveted condiment and some aficionados make it their quest to find the best in the West.
- Colorado Lamb. Travel the world and you will likely find Colorado lamb on the menus of elegant eateries, which believe it’s the crème de la crème among mountain meats.
- Rocky Ford Cantaloupe. Once again the intense sunshine and chilly nights bode well for Colorado produce farmers, but this time in the Arkansas Valley in the southeast quadrant of the state.
- Bison. Leaner and arguably more flavorful than it’s red meat counterparts, bison is growing in popularity both in Colorado and around the U.S. In fact, The Bison Council touts that the meat is up to 84% lower in fat than beef, half the calories and without any hormones, antibiotics, or fillers.
- Olathe Sweet Corn. For a town of only a couple thousand people, Olathe sure found a way to make their mark on western Colorado with their famous sweet corn.
- Trout. Fish any of the major rivers or reservoirs in Colorado, and you’ll likely find at least one species of trout. While The Cutthroat is the only indigenous trout to Colorado, Rainbow Trout, Brown Trout, Brook Trout, and Lake Trout are all prolific.
