Nonstick cooking spray, for the pan
1/3 cup light brown sugar
2 teaspoons ground cinnamon
2 apples (any kind), peeled and chopped
2/3 cup plus 2 tablespoons granulated sugar
1/2 cup (1 stick) butter, softened
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup plus 1 to 3 tablespoons milk or almond milk
1/2 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick spray or line with foil and spray with nonstick spray, for easy removal.
  • Mix brown sugar and 1 teaspoon cinnamon together in a bowl; set aside. Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon in another bowl.
  • Beat butter and remaining 2/3 cup granulated sugar together in another medium bowl with an electric mixer until smooth and creamy, about 5 minutes. Beat in eggs, 1 at a time, until blended in; add vanilla extract.
  • Whisk flour and baking powder together in another bowl, then add to creamed butter mixture and beat until blended. Mix 1/2 cup milk into batter until smooth.
  • Pour half the batter into the prepared loaf pan; add half the chopped apple mixture.
  • Sprinkle half of the brown sugar/cinnamon mixture on top of apple layer.
  • Pour the remaining batter over apple layer and top with remaining chopped apples, then the remaining brown sugar/cinnamon mixture.
  • Lightly pat apples into batter; swirl brown sugar mixture through apples using a knife or spoon.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, approximately 1 hour and 10 minutes.
  • Mix powdered sugar with remaining 1 to 3 tablespoons milk for a glaze, depending on preferred thickness.
  • Let the loaf cool for about 15 minutes, then drizzle with glaze.

I took an apple bread recipe and have slowly modified it hoping for a slightly healthier version. My kids love eating this bread and it's fantastic slightly warm with a bit of real butter. Mmm Mmm!! I love how quick and easy this is to make too!

1 1/2 cups all purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup sugar
1 cup diced apple (I've tried several kinds and have liked them all)
1/4 cup unsweetened applesauce
1 egg

Steps:

  • 1. grease loaf pan (I used butter Pam) In medium mixing bowl combine the flour, cinnamon, baking soda, baking powder, salt, and nutmeg; set aside.
  • 2. In another mixing bowl combine sugar, diced apple, applesauce, and egg; mix well. Add dry mixture to apple mixture. Stir just till moistened, batter should be lumpy.
  • 3. Spoon batter into prepared pan. Bake in 350 degree oven for 55 to 60 minutes or till a toothpick inserted near center comes out clean. Cool the pan on a wire rack for 10 minutes. Remove loaf from pan. Cool completely on wire rack.
  • My oven seems to cook quicker and my bread ends up being ready after 50 minutes. Depending on your oven you might want to keep your eye on it a little earlier.

2 cups apples, peeled and chopped
1 egg
1/2 teaspoon baking soda
1 cup cranberries
3/4 cup sugar
1 1/2 cups flour
1 teaspoon cinnamon
2 tablespoons cooking oil
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees.
  • Combine apples, sugar and oil in medium mixing bowl.
  • Add egg; mix well.
  • Combine dry ingredients in seperate bowl.
  • Add apple mixture, mixing just until moist.
  • Stir in cranberries.
  • Sprad batter in greased loaf pan.
  • Bake @ 350 degrees 1hour.
  • Cool in pan 15 minutes before removing.

This is an old recipe that I enjoy making often for my family. I don't think there's anything better than eating hot homemade bread on a cold day.

Number Of Ingredients 10

1/2 cup cornmeal
1/2 cup packed brown sugar or 1/3 cup honey
1 tablespoon salt
2 cups boiling water
1/2 cup vegetable oil
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup whole wheat flour
1/2 cup rye flour
4-1/2 to 5-1/2 cups all-purpose flour

Steps:

  • In a bowl, combine cornmeal, sugar or honey, salt, boiling water and oil. Let cool to lukewarm. Meanwhile, dissolve yeast in warm water and let stand 5 minutes. Stir into cornmeal mixture. Add whole wheat flour, rye flour and enough all-purpose flour to form a stiff dough. Turn out onto a floured surface; knead until smooth and elastic; about 6-8 minutes. Place in a greased bowl; cover and let rise in a warm place until doubled, about 1-1/2 hours. Punch dough down. Divide into two balls. Cover and let rest 10 minutes. Shape into two loaves and place in two greased 8x4-in. loaf pans. Cover and let rise until doubled, about 1-1/2 hours. Bake at 375° for 35-40 minutes. Cover loosely with foil if top browns too quickly. Remove from pans and let cool on a wire rack.

This bread is so moist and flavorful that my kids even eat the ends, which for most quick breads I usually have to throw away. At Christmas, I make the mini loaves and give as gifts to my neighbors. The oil can be replaced with 1 cup of unsweetened applesauce. Still flavorful but not quite as moist. If possible, don't skip the walnuts, they really add to it.

3 eggs
2 cups sugar
1 teaspoon vanilla
3 cups apples, diced
3 cups flour
1 teaspoon cinnamon

Steps:

  • Combine and set aside the oil, eggs, sugar, and vanilla.
  • Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually.
  • Add apples and nuts.
  • Bake in 2 regular loaf pans or 3 foil loaf pans for 1 1/2 hours at 300 degrees.
  • Cool 10 minutes in the pan.
  • Sprinkle with sugar, if desired.
  • Note: I bake it at 325 degrees for about 70 minutes.

3 cups soft bread cubes (remove crusts)
7 tablespoons melted butter
3 cups sliced peeled tart apples (I used Granny Smith)
1 cup caster sugar
1 teaspoon ground cinnamon
1/2 teaspoon fresh ground nutmeg
1/2 cup water
1 grated lemon, rind of
3 tablespoons lemon juice
light cream or vanilla ice cream, for serving

Steps:

  • Pre-heat oven to 180*C/375*F. Butter a shallow 1 ½ litre baking dish.
  • Place half the bread cubes in the prepared baking dish. Mix the remaining cubes with 2 TBS of melted butter and set aside.
  • Spread the apple slices over the bread cubes in the baking dish. Stir together the sugar, cinnamon, nutmeg, water, lemon juice, lemon rind and the remaining 5 TBS of butter. Stir until sugar is dissolved. Pour evenly over the apples, then top with the reserved bread cubes.
  • Bake in the pre-heated oven for 30 to 40 minutes, or until the apples are tender and the bread is well browned. If it is browning too quickly, cover lightly with foil. Serve warm or cold with cream or ice cream.
