BAKED BBQ CHICKEN

Steps:
- Preheat the oven to 350 degrees F. Prepare a grill to medium-high heat.
- In a small dish, combine the salt, chile powder, garlic powder and black pepper. Brush the chicken with the olive oil and sprinkle on all sides with the spice mixture.
- Brush the grill with oil. Place the chicken skin-side down on the grill and cook for 5 minutes. Turn and cook an additional 5 minutes. Transfer the chicken to a baking dish in a single layer.
- In a medium bowl, stir together the BBQ sauce and chicken broth. Pour the sauce over the chicken and cover the baking dish tightly with foil. Bake until the chicken is cooked through and fork-tender, an additional 40 minutes.
LEE LEE'S FAMOUS BARBECUE SAUCE FOR RIBS W/ PRESERVES
This is the recipe my Mom concocted years ago for barbecued ribs. This is the only recipe we ever used! It is different in that you add preserves to the sauce to give it a sweet taste. Watch out! It can become habit forming! The amount of preserves used would be determined by the amount of sauce made. For the recipe listed I would use enough preserves to make the sauce thick, probably about 1/2 to 3/4 of a small jar. You can use apricot or peach, whichever you have on hand or prefer. One tip for grilling: The sugar in the preserves tends to burn on the grill quickly. To avoid a real clean-up mess, use the sauce at the end of the grilling. When using this recipe for Pulled Pork, omit preserves -- This will give you the perfect sauce for Pulled Pork!

- Combine the brown sugar, chili powder, salt, black pepper, oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture onto both sides of the ribs
- Cover and refrigerate for 1 hour, or up to overnight
- Preheat the oven to 250°F (120 C)
- In a roasting pan, combine the broth and vinegar
- Add the ribs to the pan, cover with foil and tightly seal
- Bake for 2 1/2 hours
- Remove the ribs from the pan and place them on a platter
- Pour the liquid from the pan into a saucepan and bring to a boil
- Lower the heat to a simmer and cook until it's reduced by half
- Add in the barbecue sauce
- Preheat an outdoor grill to medium-high
- Put the ribs on the grill and cook for about 5 minutes on each side, until browned and slightly charred
- Cut the ribs between the bones and toss them in a large bowl with the sauce
- Serve hot
KATIE LEE'S BEST BARBECUE RIBS EVER

In a roasting pan, combine stock and vinegar. Add ribs. Cover pan tightly with foil. Bake 2½ hours. Transfer ribs from pan to a platter. Pour liquid from pan into a saucepan; bring to a boil. Reduce heat; simmer 5 minutes or until reduced by half. In a large bowl, combine reduced liquid and barbecue sauce. Preheat grill to medium-high. Grill ribs 5 minutes on each side or until browned and slightly charred. Add ribs to bowl with barbecue sauce mixture; toss to coat. Serve hot.

- Prep. To trim the thighs, remove the fat on the edge of thighs and any visible blood veins. Scrape the edges of the skin to remove any remaining excess fat. The goal is to make all the thighs same size so that they cook equally, weighing approximately 5 ounces after trimming.
- Combine the water and injection mixture, stirring until the injection mixture has completely dissolved.
- Place a wire rack in a pan and set the chicken thighs on the rack skin side down. Inject about 1 ounce of the injection mixture into each thigh. Aim to inject each thigh approximately five times in various muscles. Sprinkle bottom of thighs (the non-skin side) with Big Poppa Smokers Sweet Money Rub and place them in the refrigerator uncovered for 2 hours.
- Remove thighs from refrigerator. Turn them over with the skin side up and reshape them so they all look uniform. Sprinkle the tops of the thighs (the skin side) with Simply Marvelous Genie’s Trinity Rub. Place the thighs back in refrigerator uncovered for 1 hour.
