COFFEE DOUGHNUTS WITH COFFEE GLAZE
A recipe for coffee cake doughnuts with a coffee glaze.

Steps:
- Make the doughnuts:
- Combine flour, baking powder, baking soda, and salt in a large bowl.
- Beat granulated sugar and butter in the bowl of a stand mixer fitted with the paddle attachment on medium speed until smooth, about 3 minutes.
- Add egg and continue to beat, scraping down sides of bowl as needed, until incorporated. Reduce speed to low and gradually add buttermilk and coffee concentrate, beating just until combined. Gradually add dry ingredients and beat just until dough comes together.
- Turn out dough onto a large piece of parchment paper and cover with a second sheet of parchment. Using a rolling pin, roll dough between parchment sheets to about 1/3" thick. Transfer dough in parchment to a rimmed baking sheet and freeze until firm, about 20 minutes.
- Peel off top sheet of parchment. Working on bottom sheet, punch out as many rounds as you can with 3" cutter, then use 1" cutter to punch out center of each round. Gather doughnut holes and scraps and re-roll; repeat process 3-4 times until all dough has been used (you should have 12 doughnuts). Place doughnuts on a second parchment-lined baking sheet and freeze until slightly chilled, about 5 minutes.
- Pour oil into a heavy-duty pot to a depth of 2" and fit pot with deep-fry thermometer. Heat oil to 375ºF. Working in batches, fry doughnuts until deep golden brown, about 1 minute per side. Transfer to a wire rack lined with paper towels and let cool 2-3 minutes.
- Make the Coffee Glaze:
- Whisk powdered sugar and coffee concentrate in a large bowl until smooth. Dip warm doughnuts in glaze. Place on a wire rack to let glaze set, about 3 minutes, then dip again.

- Mix cereal with 1/2 cup sugar, the instant coffee and cinnamon.set aside.
- Mix flour with 1 cup sugar, baking soda, baking powder and salt in large mixer bowl.
- Add sour cream, butter, eggs, and vanilla.
- Blend at low speed of electric mixer, then beat 1 minute at medium speed.
- Spread one third of the batter in a greased 8-inch square baking pan.
- Sprinkle with half of the cereal mixture.
- Repeat layers and top with remaining batter.
- Bake at 350° for 45-50 minutes, or until cake tester comes out clean.
- Cool in pan. Spread with easy coffee glaze.
- To prepare glaze:.
- Gradually blend 2 tablespoons cooled brewed coffee into 1 1/2 cups powdered sugar till smooth.
- Makes enough to glaze top of 8 to 9-inch square or 10-inch tube pan.
BROWNIES WITH COFFEE GLAZE
Steps:
- Preheat oven to 325 degrees F. Butter and flour 9-by-12-inch baking pan. Line bottom of pan with parchment paper; butter and flour paper. Combine chocolate, butter, espresso and salt in top of double boiler over simmering water. Stir until chocolate melts and mixture is smooth. Cool.
- In large bowl, combine sugar, eggs and 1 teaspoon vanilla and whisk until smooth. Add melted chocolate mixture and whisk until smooth. Gently fold in flour, just until it disappears. Fold in pecans. Pour into prepared pan; smooth top.
- Bake until toothpick inserted into center comes out clean, about 35 minutes. Cool brownies on rack 1 hour.
- Whisk Kahlua, vanilla and butter in small bowl until well blended. Add powdered sugar and whisk until smooth icing forms. Spread over brownies and let set at least 1 hour before cutting.
COFFEE GLACE
I find more often than not that my guests at a dinner party favor a light dessert after an otherwise substantial meal. Their definition of light targets the overall bulk of a dessert, not its richness or flavor. I found this worthy candidate at worldwidemart.com, it would seem to be the perfect solution & I will be trying it soon. It could hardly be easier to fix & will be lovely when combined w/a cookie &/or piece of fruit to enhance the presentation. (Time does not include time to chill in the freezer to sherbet consistency)

COFFEE CAKE WITH COFFEE BUTTERCREAM, COFFEE GLACé ICING AND CANDIED WALNUTS
You can't get much more coffee into a coffee cake than this.

- For the coffee cake, preheat the oven to 180C/350F/Gas 4. Grease and line a 23cm/9in loose-bottomed cake tin.
- Place the butter and sugar in a large bowl and beat until light and fluffy.
- Gradually add the eggs, continually beating, then the coffee essence. Sieve in the flour and fold in.
- Pour into the prepared cake tin and level off with a palette knife.
- Bake for 20-25 minutes, or until golden-brown and risen.
- Remove from the tin and allow to cool on a cooling rack.
- For the coffee buttercream, place the softened butter in a bowl and mix with a hand-held electric mixer. Add the sifted icing sugar and beat together. Dissolve the coffee in the water and add to the buttercream and stir. Set aside.
- For the glacé icing, place the coffee and boiling water into a bowl to dissolve, then add the icing sugar and beat until smooth. Add a little more boiling water if needed until the mixture comes to a spreadable consistency.
- For the candied walnuts, place the sugar and 110ml/3½fl oz water into a saucepan and bring to a simmer. Add the walnuts and cook for a couple of minutes, or until just tender. Drain and place onto a large sheet of greaseproof paper.
- Heat 2.5cm/1in of vegetable oil in a saucepan until just shimmering. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
- Carefully add the candied walnuts to the oil and cook for 1-2 minutes, or until just golden-brown.
- Lift out and drain on a fresh sheet of greaseproof paper. Leave until cool.
- To assemble the cake, cut the cake in half horizontally. Spread the buttercream over one half of the cake and place the other half on top. Spread the glacé icing over the top and decorate with candied walnuts.

- Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin and line with baking parchment. Beat the butter and sugar together until pale and fluffy, then beat in the eggs one at a time, followed by the vanilla and almond extract (if using).
- Toss the cherries with 2 tbsp of the flour in a bowl. Tip the rest of the flour, the ground almonds, baking powder and a pinch of salt into the bowl with the sugar and eggs, and mix until just combined. Fold in the cherries and any remaining flour in the bowl. Spoon into the prepared tin and smooth over the top.
- Bake for 50-55 mins, or until a skewer inserted in the middle comes out clean. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely. Serve as it is, or mix the icing sugar with the extract and enough milk to make a thick but pourable consistency. Drizzle over the loaf cake, and scatter over the flaked almonds to serve.

- Place a heavy bottom saucepan over medium heat. Once pan is heated, add 1 tablespoon of the butter. Immediately stir in the shallots. When the shallots are translucent, approximately 3 to 5 minutes, add the sugar, vinegar, and red wine. Turn the heat down to medium low, and let simmer until it begins to reduce and gets a light syrup like consistency. Add the honey and espresso, stir, and simmer for five more minutes. Whisk in the remaining butter, and strain. Serve warm over chicken or meat.

- Find a round tin of any size. Line this with greaseproof paper. Preheat your oven to 180 Celsius (fan)/Gas mark 4/350 Fahrenheit. To a large mixing bowl, beat the butter and sugar together until creamed.
- To your bowl, add in the beaten eggs and combine this into the butter and sugar. Make sure every bit is combined. Sift the self raising flour into the mixture and gently fold the flour into the mixture.
- To this, add in the baking powder and cocoa powder. Mix this until the cocoa powder has been combined. Add in your prepared instant coffee (only a quarter of the cup will do) for an extra boost of chocolate. Combine the coffee into the mixture.
- Stir in your glace cherries and transfer the cake mix to your round tin. Bake the cake for 20-28 minutes or until there is no mixture on a skewer when you insert it into the cake. Take the cake out of the pan and leave to cool on a wired rack.
- To prepare the buttercream, combine the butter, icing sugar and vanilla extract. Spread a thin layer on your cooled cake and put any spare buttercream and the cake in the fridge to set.
- After an hour or two, take out the cake and apply the rest of the buttercream to the cake. To prepare the chocolate ganache, chop the chocolate into even pieces and set aside. Heat the double cream in a small saucepan. Once you see tiny bubbles, take it off the heat immediately and stir in your chopped chocolate. You should have a glossy ganache. If the chocolate doesn't melt in the cream, heat it on a very low heat and stir until glossy.
- The ganache will set as it cools. Pour the runny ganache all over the cake and reserve some for a sauce. Place the cake in the fridge until the ganache has a dessert-like consistency when you touch it. To serve the sauce, reheat this on a low heat, not in the microwave. Again, the ganache should be runny and smooth. If you do heat the ganache in a microwave and it has split, heat the sauce on the pan until combined. Serve the cake immediately.
