Categories     birthday     dessert

Time 2h

Yield 24

Number Of Ingredients 14

2 sticks salted butter, at room temperature
1 c. packed dark brown sugar
1/2 c. granulated sugar
2 large eggs
1 tbsp. vanilla extract
2 c. plus 2 tablespoons all-purpose flour
2 heaping teaspoons instant coffee granules
1 tsp. baking soda
1 tsp. kosher salt
8 oz. semisweet chocolate, chopped into chunks
1/2 c. finely chopped pecans (optional)
1 12-ounce bag white chocolate chips
3 tbsp. canola oil
1/2 tsp. vanilla extract

Steps:

  • For the cookies: Melt 1 stick of butter in a medium skillet over medium heat. Let it bubble up for 3 to 4 minutes, swirling the pan to keep the butter moving around. When the butter is a medium golden brown, remove the pan from the heat (the butter will continue browning in the pan over the next 30 seconds or so). Pour the butter and any solids in the bottom of the pan into a heatproof bowl and allow it to cool completely, about 30 minutes.
  • Beat the remaining stick of butter, the brown sugar and granulated sugar in a large bowl with a mixer on medium-high speed until fluffy, 3 to 4 minutes. Reduce the speed to low and beat in the eggs and vanilla until smooth, scraping down the bowl if necessary to make sure everything is incorporated.
  • With the mixer on medium-low speed, slowly drizzle in the cooled browned butter and mix until combined, about 1 minute.
  • In a separate bowl, whisk the flour, instant coffee, baking soda and salt. With the mixer on low speed, slowly add the flour mixture to the dough and beat until totally incorporated, about 2 minutes. Stir in the chocolate chunks and pecans, if using, with a wooden spoon.
  • Preheat the oven to 375˚ and line 2 baking sheets with parchment paper. Scoop heaping tablespoonfuls of dough onto the prepared pans, about 2 inches apart. Refrigerate until firm, about 15 minutes. Bake the cookies until golden brown, 9 to 10 minutes. Let cool 5 minutes on the baking sheets, then remove to a rack to cool completely.
  • For the glaze: Combine the white chocolate chips and oil in a microwave-safe bowl and microwave in 30-second intervals, stirring, until melted. Stir in the vanilla. Pour the white chocolate into a resealable plastic bag and snip off a corner. Drizzle over the cookies. Let set 15 minutes.

Time 30m

Number Of Ingredients 19

Dry ingredients:
1 ¼ cups all-purpose flour
1 cup old fashioned rolled oats
1/2 teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
Wet ingredients:
1/2 cup salted butter, at room temperature
½ cup good-quality tahini (I use Soom)
1 cup packed brown sugar
1 egg
1 tablespoon pure maple syrup
1 teaspoon vanilla extract
Optional, but recommended: 1 tablespoon instant coffee granules or espresso powder
For the mix-ins:
5-6 ounces good quality dark chocolate bar, coarsely chopped (about 1 heaping cup chocolate chunks)
6 large Medjool dates, chopped* (or sub ½ cup raisins or dried cherries!)
For topping:
Fancy Maldon sea salt

Steps:

  • Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, oats, baking soda, cinnamon and salt. Set aside.
  • In the bowl of an electric mixer, add in softened butter, tahini and brown sugar; mix on medium high until well combined, about 1-2 minutes. Switch mixer to medium low speed; add in egg, pure maple syrup, vanilla and instant coffee; beat for 1 minute or until well combined, smooth and creamy. Slowly add in dry ingredients and mix until combined. Next add in the chocolate chunks and chopped dates; mixing until well incorporated.
  • Use a medium cookie scoop to grab the dough and roll into a ball with your hands. Place dough on the cookie sheet lined with parchment paper, leaving 2 inches apart between each dough ball. Bake for 10-12 minutes or until the edges are just barely golden brown. A slightly underbaked cookie is always best so they stay nice and chewy!
  • Allow cookies to cool on the cookie sheet for 10 minutes before removing and transferring to a wire rack. This allows them to set up a bit and harden slightly around the edges. Repeat with remaining dough. Makes about 20 cookies. Sprinkle with sea salt and enjoy!

Number Of Ingredients 8

One package dry chocolate chip cookie mix (1 pound 1 1/2 ounces), found in the baking aisle
1 cup bittersweet chocolate chunks
4 ounces walnut pieces (about 1 1/4 cups)
7 tablespoons softened unsalted butter

Categories     dessert

Time 45m

Yield 28 to 32 cookies

Number Of Ingredients 12

1/2 pound (2 sticks) unsalted butter, at room temperature
3/4 cup light brown sugar, lightly packed
3/4 cup granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs, at room temperature
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/4 cups old-fashioned oats, such as Quaker
3/4 pound bittersweet chocolate, such as Lindt, chopped in chunks
3/4 cup dried cranberries
Fleur de sel

Steps:

  • Preheat the oven to 375 degrees F. Line 3 sheet pans with parchment paper.
  • In an electric mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar on medium-high speed for 3 minutes, until light and fluffy. Scrape down the bowl with a rubber spatula. On low speed, add the vanilla, then the eggs, one at a time. Scrape down the bowl again.
  • Meanwhile, sift the flour, baking soda, and salt into a medium bowl. Mix in the oats. With the mixer on low, slowly add the flour mixture to the butter-sugar mixture. Don't overbeat it! With a rubber spatula, stir in the chocolate and cranberries until the dough is well mixed. With a 1 3/4-inch ice cream scoop (or two spoons), scoop round balls of dough onto the prepared sheet pans. Sprinkle lightly with fleur de sel. Bake for 10 to 12 minutes, until nicely browned. Serve warm or at room temperature.

HEALTHY OATMEAL, DATE AND CHOCOLATE CHUNK COOKIES

Healthy Oatmeal, Date and Chocolate Chunk Cookies image

These cookies don't taste "healthy," which makes them the perfect way to avoid breaking any eat-better resolutions. Toasting the oats before adding them to the batter helps maintain their chewy texture, even after baking.

Provided by Food Network Kitchen

Categories     dessert

Time 50m

Yield About 30 cookies

Number Of Ingredients 11

1 1/2 cups rolled oats
2/3 cup packed dark brown sugar
6 tablespoons unsalted butter, at room temperature
1 large egg
1 teaspoon vanilla extract
3/4 cup whole wheat pastry flour or white whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
3/4 cup chopped pitted dates
1/2 cup semisweet chocolate chunks

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat the oven to 350 degrees F.
  • Spread the oats out on a baking sheet and bake until light golden brown, 10 to 12 minutes. Reserve 1/4 cup of the oats for sprinkling and transfer the remaining oats to a medium mixing bowl to cool. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar and butter on medium-high speed until lighter in color and slightly fluffy, about 5 minutes, scraping down the sides of the bowl several times. Beat in the egg and vanilla until very fluffy, 2 to 3 minutes more.
  • In the mixing bowl with the cooled oats, add the flour, cinnamon, baking powder and salt, and mix to combine. Reduce the mixer speed to low, then add the flour mixture to the butter and beat until just combined. Stir in the dates and chocolate by hand.
  • Drop level tablespoons of the dough on the baking sheets, leaving at least 1-inch of space around each cookie, about 30 cookies total. Sprinkle the cookies with the reserved toasted oats. Bake until the cookies are lightly golden, 12 to 15 minutes. Cool the cookies for 5 minutes on the baking sheets, then transfer to cooling racks to cool completely.
