COFFEE BROWNIES

Steps:
- Preheat the oven to 325 degrees and butter and flour a 9 by 12 inch baking pan. Line the base of the pan with parchment paper. Combine the chocolate, butter, coffee, and salt in the top of a double boiler and, over simmering water, melt the chocolate, stirring occasionally.
- In a large mixing bowl, combine the sugar, eggs, and vanilla and whisk until smooth. Add the melted chocolate mixture and continue whisking until well combined. Fold in the flour until you can't see any traces of white, but do not overfold. Gently fold in the pecans. Scoop out into the prepared pan and spread and jiggle the pan until the batter finds its level.
- Bake for about 35 minutes, or until a toothpick inserted into the center of the pan comes out clean. Set the pan on a rack to cool for 1 hour. Run a knife around the edge of the pan to loosen, then cut into squares as desired.
DELICIOUS COFFEE BLOND BROWNIES
A chewy rich brownie that has a wonderful taste of coffee with the nice crunch of nuts & chocolate chips. Steps:
- Heat the brown sugar and butter in a medium saucepan over medium-low heat until the butter melts. (I actually use a large saucepan and do all the mixing in this one pan)
- Dissolve the coffee in the hot water and stir in to the butter mixture.
- Let cool to room temperature.
- Preheat oven to 350 degrees F. and butter a 9 by 13-inch baking pan.
- When the butter mixture is cool, beat in the eggs and vanilla with a hand-held mixer.
- Sift the flour, baking powder, and salt together and stir into the butter mixture with a wooden spoon.
- Stir in the nuts and chocolate.
- Spread the mixture evenly in the prepared pan with a rubber spatula.
- Bake until lightly browned, 25 to 30 minutes. Do not overbake.
- Cool completely and cut into squares.
- Preparation time includes 30 minute+ cooling time.
COFFEE BROWNIES WITH WHITE CHOCOLATE CHIPS

Steps:
- Preheat oven to 175c degrees.
- In a large bowl put dark chocolate and butter and melt in a microwave or over double boiler.
- Add the sugar and beat well.
- Add the eggs one at a time, whisking between additions, than add espresso, liqueur and salt and beat until mixture is smooth.
- Sift in the flour and fold in gently using a spatula until incorporated.
- Add chocolate chips and stir until disperse in the batter.
- Transfer the mixture into a greased pan and flatten the top.
- Bake for about 20-24 minutes, or until the edges are set and the center is still a bit soft.
- Cool completely at room temperature, but into squares and serve.
WHITE CHOCOLATE CHIP COFFEE BROWNIES
Because coffee and brownies go together- why not combine the two-after baking- make a colorful design on top with melted chocolate to swirl or make a heart design on top. Great treat for Valentine's Day!

- Move oven rack to the center position of the oven. Spray a foil lined 9-inch baking pan(foil extending over edge), with butter spray. In a small bowl, stir the flour, baking powder and salt together; set aside.
- In a large mixer bowl, beat together sugars and butter until blended well. Add the eggs, dissolved coffee, and vanilla and mix until combined. The mixture may look curdled(it's ok). On low speed add the flour mixture, mixing to incorporate. Mix in 1 cup of the white chips until evenly mixed in.
- Pour the batter into the pan. Bake in 350^ oven for about 30 minutes- testing with toothpick. Remove from oven and sprinkle on or design a pattern with the remaining white chips,( let set on brownies for about 5 minutes to melt slightly) and gently with the back of a spoon or other device swirl the melted chips to your liking or just smear all over the top. Cool till chocolate topping is firm, about 1 hour.
- Loosen the sides of the brownies from the unlined sides and lift out of the pan with the foil. Use a sharp knife to cut into desired pieces- use a spatula to serve cut pieces. Enjoy with a cup of your favorite beverage.
