Yield Makes 4 main-course servings

Number Of Ingredients 19

For filling
1 medium leek (white and pale green parts only), cut into 1/2-inch pieces
1/2 cup finely diced carrot
1/4 cup finely diced celery
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
3/4 teaspoon salt
1/4 teaspoon black pepper
1 1/4 pounds skinless cod or scrod fillet, cut into 3/4-inch chunks
For biscuit crust
1 1/2 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
7 1/2 tablespoons cold unsalted butter, cut into 1/2-inch cubes, plus 1 tablespoon, melted
1/2 cup plus 1 tablespoon whole milk
2 1/2 tablespoons chopped fresh dill
Special Equipment
a 3 1/2-inch round cookie/biscuit cutter; 4 (4- to 5-inch-wide) 8- to 10-ounce ramekins*

Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Make sauce for filling:
  • Wash leek in a bowl of water, then lift out and drain well. Cook leek, carrot, and celery in butter in a 2- to 3-quart heavy saucepan over moderate heat, stirring frequently, until tender, about 7 minutes. Add flour and cook, stirring, 1 minute. Stir in milk, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Bring sauce to a boil, stirring, then reduce heat and simmer, stirring occasionally, 4 minutes. (Sauce will be thick.) Remove pan from heat.
  • Make crust:
  • Whisk together flour, baking powder, and salt in a bowl. Blend in butter cubes with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in milk and dill with a fork until mixture just comes together.
  • Gather dough into a ball, then turn out onto a lightly floured surface and knead 2 or 3 times. Roll out with a floured rolling pin into an 8-inch square (1/2 inch thick), then cut out 4 biscuits using cutter.
  • Make filling and bake pies:
  • Sprinkle cod with remaining 1/2 teaspoon salt and 1/8 teaspoon pepper. Bring sauce to a simmer and stir in fish, then divide among ramekins. Top each ramekin with a biscuit, then brush biscuits with melted butter. Arrange ramekins in a shallow baking pan and bake until sauce is bubbling and biscuits are golden, 12 to 15 minutes.

Cod Pot Pie / Pies With Dill Biscuit Crusts image

Gourmet magazine showcased this recipe years ago and I've always loved making it for both family and friends. It's so easy, but really delicious.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 17

1 leek, white and pale green parts only
1/2 cup carrot, finely diced
1/4 cup celery, finely diced
3 tablespoons unsalted butter
2 tablespoons flour
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 lbs cod, cut into 3/4 inch chunks
1 1/2 cups flour
1 tablespoon baking powder
3/4 teaspoon salt
8 tablespoons unsalted butter, cold, cut into 1/2-inch cubes
1 tablespoon melted butter
1/2 cup milk, plus
1 teaspoon milk
2 1/2 tablespoons fresh dill, chopped

Steps:

  • Preheat oven to 450°F.
  • Wash leek well and cut into 1/2 inch pieces.
  • Cook leek, carrot and celery in butter over medium heat until tender, about 7 minutes.
  • Add flour and cook, stirring, for 1 minute.
  • Stir in milk, 1/4 teaspoons salt and 1/8 teaspoons pepper; bring to a boil and then reduce to simmer, stirring occasionally, for 4 minutes.
  • Sauce will be thick.
  • Whisk together flour, baking powder and salt.
  • Blend in butter cubes with your fingers or food processor until mixture resembles coarse meal.
  • Stir in milk and dill with a fork until mixture just comes together.
  • Gather dough into a ball, then turn out onto a lightly floured surface and knead for 3 times.

  • Bring sauce to a simmer and stir in fish, then divide among 4 10 oz. ramekins.
  • Top each ramekin with a biscuit then brush with melted butter.

CHICKEN POT PIE WITH BISCUIT CRUST

Chicken Pot Pie with Biscuit Crust image

This is a combo of my Chicken Pot Pie filling and my mother in-law's Biscuit Style Crust. They go together fabulously. This is awesome with a double crust, but if you are watching your fat intake, it is also yummy with just a top crust. Also, the homemade gravy is wonderful, but if you have leftover gravy or prefer to use canned or jarred, this is even easier. Enjoy!

Time 50m

Yield 6 serving(s)

Number Of Ingredients 14

1/3 cup butter
1/3 cup all-purpose flour
1/3 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups chicken broth
2/3 cup milk
3 cups cooked chicken, cut into small pieces or cubes
1 (16 ounce) bag frozen peas and carrots
1 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons butter
1/3 cup milk

Steps:

  • Crust: This is for just a top crust.
  • if you would like a top and bottom, double the recipe.
  • Combine dry ingredients and cut in butter until it resembles small peas.
  • Add milk all at one and stir just to moisten.
  • Pour out onto a floured surface and knead about 8 times.
  • Roll into desired shape, depending if you are using a round or square casserole dish.
  • If you are making two crusts, make sure you roll the bottom one larger.
  • Filling: Melt butter over low heat in a large saucepan.
  • Stir in flour, chopped onions, salt and pepper.
  • Cook until mixture is bubbly, stirring constantly.
  • Remove from heat and whisk in broth and milk.
  • Put back over heat and heat to boiling, stirring constantly for a couple minutes, until thickened.
  • (YOU CAN IGNORE THE ABOVE IF YOU HAVE ABOUT 2 CUPS OF LEFTOVER GRAVY--JUST HEAT IT UP IN A SAUCEPAN).
  • Add chicken and frozen peas and carrots into the mixture and combine.
  • Remove from heat.
  • Putting it together: Preheat oven to 425 degrees.
  • Pour chicken mixture into 2 quart casserole (lined with one crust if you want a bottom crust).
  • Lay crust over mixture and press into the inside edges of dish.
  • Make a couple slits in the center of crust with a sharp knife.
  • If you are doing a top and bottom crust, crimp edges to seal.
  • Bake for about 30 minutes, until golden brown.
