- Preheat oven to 375°. Place cod and asparagus in a 15x10x1-in. baking pan brushed with oil. Add tomatoes, cut sides down. Brush fish with lemon juice; sprinkle with lemon zest. Sprinkle fish and vegetables with Romano cheese. Bake until fish just begins to flake easily with a fork, about 12 minutes., Remove pan from oven; preheat broiler. Broil cod mixture 3-4 in. from heat until vegetables are lightly browned, 2-3 minutes.

- Place asparagus in an ungreased 11x7-in. baking dish; add water. Arrange cod over asparagus. Sprinkle with lemon juice, lemon pepper and garlic powder. Dot with butter; sprinkle with capers., Bake, uncovered, at 400° for 12-15 minutes or until fish flakes easily with a fork and asparagus is tender. If desired, sprinkle with parsley.

PACKAGE-PARCELED COD
Steps:
- Preheat the oven to 350 degrees F.
- Lay out 1 large sheet (about 16 inches by 12 inches) of parchment paper. Place 4 of the asparagus spears in the center of the paper, then 1 fish fillet on top and then a slice of lemon. Season with salt and pepper, 1 tablespoon of the lemon juice, 1 tablespoon of the olive oil and 1 sprig of the thyme. Fold over the ends of the parchment to enclose the fish. Place on a rimmed baking sheet. Repeat with the remaining ingredients.
- Bake for 12 to 15 minutes, or until the fish reaches 130 to 135 degrees F on a thermometer.

- Method 1. Heat your oven to 180°C/Fan 160°C/Gas 4. Scrub the potatoes and chop them into bite-sized pieces, around 2cm across. Pop them in a large ovenproof dish. Peel and halve the shallots, then add them to the potatoes. Drizzle the veg with 1 tbsp olive oil and season with a pinch of salt and pepper. Toss to mix. Slide into the oven and roast for 15 mins. 2. While the veg roast, measure out 2 tsp horseradish mustard and place in a bowl. Grate in the lemon zest and squeeze in the juice from half the lemon. Season with a little salt and pepper and stir to mix. Set aside. Bend the asparagus spears till they snap. Discard the woody ends and keep the tender tips. 3. When the veg have roasted for 15 mins, take them out of the oven, add the asparagus tips and toss to mix. Return the dish to the oven for 10 more mins. 4. When the veg have roasted for 25 mins in total, take the dish out of the oven. Make 2 spaces in the veg and nestle in the cod fillets, skin side down.Brush the lemony mustard mix all over each cod fillet. 5. Return the dish to the oven for 10 mins, till the cod is opaque and flakes easily when pressed with the fork. The veg will be tender and browned. 6. While the cod and veg roast, whisk 1 tbsp aged balsamic vinegar with 1 tbsp olive oil and a pinch of salt and pepper to make a dressing. Toss the salad leaves with the balsamic dressing. 7. Pick the parsley leaves off their stems and roughly chop the leaves. 8. Serve the cod and veg with the dressed salad leaves on the side, garnished with the parsley leaves. Serve the remaining lemon half, cut into wedges, on the side for squeezing, and the leftover mustard for an extra fiery kick.

Taken from Rachael Ray's 30-minute meals, this is amazingly quick, fresh, and light - can be made with any type of fish fillet. Of course, my usual salad-in-a-bag is a lifesaver here, and fresh broccoli steamed in the microwave or asparagus roasted alongside the fish completes the meal!

- Preheat oven to 400°F Line your pan with aluminum foil and lightly brush with olive oil, or use a bit of cooking spray.

- Preheat the oven to 400 degrees F.
- Season the cod on all sides with salt and pepper and set aside. Heat a 10-inch cast-iron pan over medium-high heat. Add 2 tablespoons olive oil and swirl to coat the pan. Add the shallot and garlic and cook, stirring, until softened and lightly browned. Add in the asparagus, artichoke hearts, olives and capers. Cook, stirring frequently, until the garlic is fragrant, about 1 minute. Add in the wine and let it reduce slightly, about 1 minute. Add in the lemon juice.
- Gently nestle the cod into the vegetables. Transfer the skillet to the oven and cook until the cod easily flakes apart, 15 to 20 minutes.
- Plate the cod and vegetables and spoon any juices from the bottom of the pan over the fish. Garnish with lemon wedges and serve.
BAKED COD IN FOIL
Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Combine tomatoes, bell pepper, onion, olive oil, basil, and garlic in a bowl and mix well.
- Lay 4 sheets of aluminum foil on a work surface and place 1 cod fillet in the center of each. Spoon tomato mixture evenly on top of the 4 fillets. Drizzle with lemon juice and season with salt and pepper. Place a second sheet of foil on top and seal the edges to make a parcel. Repeat with the remaining fillets and tomato mixture.
- Bake in the preheated oven until cod flakes easily with a fork, about 20 minutes. Remove from the oven and carefully unwrap the parcels. Spoon onto warmed plates and serve immediately.

- Heat olive oil in a large frying pan over medium-high heat; cook and stir onion, garlic, and lemon pepper until onion is slightly tender, about 3 minutes. Add cod to the frying pan, flipping the cod over to coat both sides with oil.
- Cook cod in the onion mixture until it flakes easily with a fork, occasionally sliding fish around so it doesn't stick, about 4 minutes per side.
- Pour wine into the frying pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Slide the cod around the pan, flip it over, and slide around again until coated in wine, about 1 minute.

- Cut asparagus tips into 2-inch-long pieces; set aside. Peel asparagus stalks. Cut stalks into 1-inch pieces. Cook stalks in large saucepan of boiling slightly salted water until very tender, about 10 minutes. Using slotted spoon, transfer stalks to blender. Add 3/4 cup cooking liquid to blender. Blend until very smooth, adding more cooking liquid to thin sauce. Blend 2 tablespoons butter into sauce. Season with salt and pepper. (Sauce can be made 8 hours ahead. Cover and refrigerate.)
- Transfer sauce to medium saucepan. Bring sauce to simmer. Remove from heat. Cover to keep warm. Cook asparagus tips in boiling salted water until crisp-tender, about 4 minutes. Drain.
- Sprinkle fish with salt and pepper. Melt 2 tablespoons butter in each of 2 heavy large skillets over medium-high heat. Add 3 fish fillets to each skillet and cook until golden and opaque in center, about 4 minutes per side.
- Spoon warm sauce onto plates. Top with fish. Garnish with asparagus tips. Sprinkle with fennel seeds and serve.
FILLET OF COD WITH ASPARAGUS AND PROSCIUTTO

- Cook asparagus in large pot of boiling salted water until crisp-tender, about 3 minutes. Drain. Transfer to bowl of ice water to cool. Drain well.
- Mash garlic and 1 teaspoon salt to paste in small bowl. Melt butter with 1 tablespoon oil in small nonstick skillet over medium heat. Add garlic paste; stir until pale golden, about 1 minute. Stir in lemon juice, peel, and 1/2 teaspoon black pepper. Remove from heat.
- Preheat oven to 500°F. Cut out six 12-inch squares of parchment paper. Place 1 parchment square on work surface. Drizzle 1 teaspoon oil over parchment. Place 1 cod fillet in center of parchment. Spoon 1/6 of garlic-lemon mixture over fish. Cover with 1/6 of asparagus spears. Arrange 1/6 of prosciutto slices over. Fold 2 opposite sides of parchment in over fish and vegetables, then fold in remaining 2 sides, enclosing completely. Fasten parchment edges together with paper clips to seal packet. Place on large rimmed baking sheet. Repeat procedure with remaining parchment, oil, fish, garlic-lemon mixture, asparagus, and prosciutto. (Can be prepared 6 hours ahead. Refrigerate.)
- Bake fish until just opaque in center (parchment will turn golden brown), about 12 minutes. Transfer 1 parchment packet to each of 6 plates. Open parchment packets and serve.
COD AU GRATIN
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x 12 inch baking dish. Bring a large pot of lightly salted water to a boil. Add cod fillets and cook for 4 to 6 minutes; drain.
- Melt margarine in a medium saucepan. Remove from heat and mix in the flour and milk. Return to stove over medium heat, and stir until thickened. Season with salt and pepper.
- Flake fish into baking dish, alternating layers with sauce. Sprinkle top with shredded cheese.
- Bake in preheated oven for 20 to 25 minutes, or until cheese is browned.

- Parboil (approx 3 minutes) asparagus in 1 cup water.
- Discard water, set asparagus aside.
- Sear shallots in olive oil set aside.
- Sear fillets in same pan of olive oil 2 minutes each side.
- Add juice, dill, pepper, asparagus, and garlic.
- Allow to reduce slightly.
- Add remaining water.
- Cover and cook over medium heat 8 minutes.
- Turn fillets allow to cook another 4 minutes.

PERFECT TEN BAKED COD
Simple, fast, and delicious describes this baked cod recipe. Bake for two sets of 10 minutes each and you have the perfect ten dinner! This recipe was a favorite request from a local restaurant. They closed after years in business and we are happy to share a version of their most requested recipe. I serve this with rice pilaf and fresh spinach that has been lightly seared in olive oil and garlic. Yummy!

- Preheat oven to 400 degrees F (200 degrees C).
- Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
- Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
- Coat both sides of cod in melted butter in the baking dish.
- Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
