COCONUT OIL ROASTED SWEET POTATOES
Here, coconut oil deepens the natural caramelized flavor of roasted sweet potatoes, and it adds a delicate coconut essence. Brown sugar and nutmeg sweeten the dish, and a dash of black pepper makes it for adults. It's just delicious.

SWEET POTATO BAKE WITH SHREDDED PLANTAIN AND COCONUT TOPPING
This was created for Ready, Set, Cook 2006. The sweet potato bake is jazzed up by the topping of the shredded plantain. The fried shredded plantain is known as aranitas. In spanish this means, "little spiders." The little plantain threads are sticking out in all directions, thereby creating the "spidery" look.

SWEET POTATO-COCONUT CAKE
Not sure where this recipe originated, as I found it clipped from what appears to be a magazine. I haven't found a recipe quite like this one. I have not made it yet, however, I wish to make it soon. *Note* in the recipe where fresh coconut is needed, bagged unsweetened shredded coconut can be substituted I guessed on the prep time. The recipe seems a bit involved.
