COCONUT STICKY RICE WITH MANGO
Mangoes are available almost all year long in Thailand and there is never a shortage of rice. Here is a sinful dessert that joins the two. I know rice is rarely considered a dessert food, but this is a delicious treat. Coconut sticky rice can be eaten with any fruit and is great by itself. Thai sweet rice, not jasmine, is used to make this dish. What makes the rice stick together is its high starch content. Sweet rice is actually steamed instead of simmered. I use a traditional bamboo steamer insert for this. In the United States, Manila mangos are in season for 3 to 4 months out of the year, their extra sweetness and soft texture make them a perfect accompaniment to the coconut sticky rice.

Steps:
- Put the rice in a large bowl and cover with cold water. Soak for at least 3 hours, preferably overnight.
- Transfer the soaked rice to a cone-shaped bamboo steamer basket. The rice should sit on the bottom of the basket. Add 4 cups water to the steamer pot. Heat the water on high until it is boiling.
- Insert the basket into the pot and cover it to steam for 10 minutes. Flip the rice once and let it steam for another 10 minutes.
- Heat the coconut milk, sugar and salt in a small saucepan until simmering, then remove from the heat. Reserve 1/4 cup and fold the remaining coconut sauce into the rice. Cover the rice for 30 minutes.
- Serve with the mangoes or any fruit in season. Drizzle with the reserved 1/4 cup coconut sauce.
COCONUT STICKS
I saw a recipe on Pinterest, it was for the cinnamon sticks, well I got in the kitchen playing with the basis of that recipe. These Coconut sticks are so good. Kinda taste like a mounds candy bar.

- 1. Preheat oven to 350. Cut crust off of bread, then roll flat with a rolling pin. ( as flat as you can)
- 2. Mix cream cheese and confectioner's sugar together until smooth, then spread on flattened bread.
- 3. In a small bowl pour 1/2 package of coconut and mix with 1/2 of the condensed milk.
- 4. Use as many of the chocolates chips as you wish, place at the top of each slice of bread then top with about 1 teaspoon of the coconut mix. Starting at the end with the chocolate chips roll it up and sorta seal the edge.
- 5. Dip each roll in the melted butter then roll really well in the dry coconut. Place on cookie sheet and bake 25 minutes at 350.
COCONUT FISH STICKS

- Combine the fish and milk in a large bowl; let soak. Mix the chutney, jalapeno, scallions, lemon juice and 2 tablespoons water in a small bowl. Combine the flour, 1/2 teaspoon salt, and pepper to taste in a shallow bowl. Beat the eggs with 1/4 cup water in another shallow bowl. Mix the breadcrumbs, coconut, 1/2 teaspoon salt and 1/4 teaspoon pepper in a third shallow bowl. Drain the fish, then coat each piece in the seasoned flour, dip in the egg mixture and roll in the breadcrumb mixture. Set on a rack until ready to cook. Put the broccoli in a microwave-safe bowl with 3 tablespoons water, cover with plastic wrap and microwave until tender, 5 minutes. Meanwhile, heat 1/2 inch vegetable oil in a large skillet over medium-high heat. Working in batches, fry the fish sticks until golden brown, about 2 minutes per side. Drain on a paper towel-lined plate. Serve with the broccoli, lemon wedges and chutney sauce.

- bring rice and coconut milk to a boil, simmer for 15 minutes.
- take some tin foil and crumple it up so it is bumpy and not flat.
- in steamer over boiling water, add tin foil, add rice mixture and steam for 20 minutes bring sugar, water, salt, and vanilla to slow boil cook for 10 minutes until syrup forms remove rice from steamer, toss with coconut, drizzle with syrup.

- Heat oven to 350. Spread coconut in even layer on large ungreased jelly-roll pan. Bake for 8 to 12 minutes, stirring occasionally, until very lightly toasted. Cool completely in pan.
- Add chopped macadamia nut to tasted coconut; stir. Set aside.
- Place caramels, butter and water in small saucepan. Cook over medium-low heat, stirring ocassionally until melted and smooth. Remove from heat; stir in rum flavoring.
- Working quickly, dip 1 pretzel rod into caramel mixture, using rubber spaula or spoon to coat three-fourths of pretzel. Shake off excess; immediately place into coconut mixture. Use hands to press coconut mixture firmly onto caramel. Place covered pretzel onto waxed paper. Cool completely.
- Store between sheets of waxed paper in container with tight-fitting lid.

- Mix the coconut cream, curry paste, lime zest and juice and 1 tbsp honey together in a large bowl, then spoon a quarter of the marinade into a second smaller bowl and set aside. Add the chicken to the large bowl and leave to marinate for at least 2 hrs, or chill for up to 24 hrs.
- Heat the oven to 200C/180C fan/gas 6 and line a baking tray with foil. Arrange the chicken on the tray, and bake for 30 mins, turning the chicken over halfway through.
- Mix the remaining honey into the reserved small bowl of marinade. Brush half of this over the chicken, then return to the oven for 10 mins more. Turn the chicken over and brush with the rest of the marinade, then bake for another 10 mins. Serve warm or leave to cool completely before packing into a container for a picnic.
