Caribbean Prawn and Sweet Potatoes in Coconut Sauce image

This recipe makes delicious use of the 'so good for you' sweet potato. Yams are a white version of sweet potato and can be used equally well. Try serving this with steamed rice, mixed with cooked peas ad sweetcorn. Taken from "Hot And Spicy Cooking": Colour Library

450 g sweet potatoes, peeled and diced
1 large onion, chopped
1 garlic clove, crushed
1 inch piece fresh ginger, grated
1 red chili peppers or 1 green chili pepper, de-seeded and chopped
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon ground allspice
2 tablespoons coconut cream
570 ml water
120 g peeled prawns
120 g chicory lettuce, shredded
225 g bok choy, shredded
1 tablespoon dark brown sugar
2 tablespoons lime juice
salt
desiccated coconut, to sprinkle

Steps:

  • In a large saucepan, mix together the sweet potatoes, onion, garlic, ginger, chilli pepper, spices, coconut cream and water.
  • Bring to the boil and simmer until the potato is almost tender.
  • Add the prawns, chicory and chinese leaves. Simmer for 4 - 5 minutes, until the ingredients are warmed through, but the leaves are still crisp.
  • Add the sugar and lime juice, and season to taste.
  • Serve sprinkled with the dessicated coconut.

2/3 cup canned cream of coconut (such as Coco Lopez)
1/2 cup fresh lime juice
6 tablespoons minced green onions
2 teaspoons curry powder
1/2 teaspoon cayenne pepper
1/2 teaspoon salt

Steps:

  • Whisk cream of coconut and fresh lime juice in small bowl until smooth. Stir in green onions, curry powder, cayenne pepper and salt. (Can be made 1 day ahead. Cover and refrigerate.)
  • Brush half of sauce over chicken or seafood before and during grilling. Pass remaining sauce separately.

6 small sweet potatoes (about 3 1/2 pounds), peeled and cut into 1-inch-thick pieces
2 1/4 cups unsweetened coconut milk
6 cups chicken broth, homemade or low-sodium canned
1 teaspoon kosher salt, plus more to taste
1 1/2 tablespoons fresh lime juice
3 tablespoons minced fresh ginger
3 tablespoons fresh lemon juice
2 tablespoons canola oil
1/4 teaspoon kosher salt
1 1/2 pounds large shrimp, shelled and deveined
4 large bananas, peeled and cut across into 1/2-inch-thick slices
1 cup unsweetened coconut flakes, lightly toasted
1 cup sliced almonds, toasted
1/2 cup coarsely chopped cilantro
Tabasco sauce

Steps:

  • To make the soup, combine the sweet potatoes, 1 cup of coconut milk and the chicken broth in a large saucepan. Bring to a boil, lower heat and simmer until the potatoes are soft, about 15 minutes. Place in a food processor and puree until smooth. Mix in the remaining coconut milk and the salt. Reheat before serving, and stir in the lime juice and additional salt, if needed.
  • To make the condiments, combine the ginger, lemon juice, oil and salt in a shallow dish. Add the shrimp and toss to coat. Refrigerate for 1 hour. Preheat the broiler. Remove the shrimp from the marinade and broil until cooked through, about 5 minutes. Set aside. Place the bananas on a greased baking sheet and broil until nicely browned, about 3 minutes. Place the shrimp, bananas, coconut, almonds and cilantro in separate bowls.
  • Ladle the soup into 6 bowls. Serve, passing the condiments, including Tabasco, separately.

125g coconut oil
2 onions , chopped
5 dried red chillies (Scotch bonnet work well)
thumb-sized piece ginger , grated
4 garlic cloves , grated
6 dried curry leaves
½ tsp mustard seeds
30g tomato purée
½ tsp hot chilli powder
½ tsp turmeric
2 x 400g cans coconut milk
300g cauliflower (1/2 small one), broken into small florets
1 large potato , peeled and chopped into 2cm chunks
600g raw peeled prawns
1 bunch spring onions , finely chopped
1 bunch coriander , chopped
100g salted peanuts , chopped
lime wedges, to serve

Steps:

  • Heat the coconut oil in a casserole or wok over a medium heat and add the onions, dried chillies, ginger, garlic, curry leaf and mustard seeds, fry for 12-15 mins until the onion is soft, then stir in the tomato purée, chilli and turmeric and continue to cook for 1-2 mins more. Pour in the coconut milk and 200ml water, simmer the sauce for 20 mins, then blitz in a blender or with a hand blender until smooth.
  • Pour the sauce back into the saucepan and bring up to a simmer. Stir in the cauliflower and potato, cover and simmer for 15 mins. Add the prawns and poach for 2 mins, or until they turn pink. If freezing, cool and freeze, then defrost and reheat when you're ready to eat. To serve, scatter the spring onions, coriander and peanuts over the curry and squeeze over a little lime juice.

2 cups onions, chopped
2/3 cup celery, chopped
1 tablespoon canola oil
1 tablespoon fresh ginger, grated
1 teaspoon curry powder
1/4 teaspoon nutmeg, ground
2 bay leaves
1/2 teaspoon salt
3 cups water or 3 cups vegetable stock
4 cups sweet potatoes, peeled and cubed
1/2 teaspoon lemon peel or 1/2 teaspoon orange peel, grated
2 tablespoons dark rum
1 cup pineapple juice or 1 cup orange juice
1 3/4 cups coconut milk
2 tablespoons lime juice (to taste)
chopped cilantro (optional) or scallion (optional)
toasted coconut flakes (optional)

Steps:

  • In a soup pot, saute the onions and celery in the oil until the onions are translucent, about 10 minutes. Cover the pot and stir often to prevent sticking.
  • Add the ginger, curry, nutmeg, bay leaves, and salt. Saute for another minute, stirring constantly. Add the water or stock, sweet potatoes, citrus peel, and rum. Cover and bring to a boil. Reduce the heat and simmer until the vegetables are tender, 15 - 20 minutes.
  • Remove bay leaves. Add the juice and coconut milk. Puree the soup in batches until smooth. Reheat gently if needed. Stir in the lemon or lime juice.
  • Serve with garnishes of your choice.

2 small sweet potatoes, diced into 1 inch cubes (about 3 pounds)
2 1/2 cups unsweetened coconut milk
6 cups chicken broth
2 medium limes, juice of
3 tablespoons ginger, finely grated (or minced)
2 tablespoons fresh lemon juice
1 tablespoon fresh lime juice
1/4 teaspoon sea salt
1 1/2 lbs large shrimp, peeled and deveined
4 large bananas, peeled and cut into 1/2 inch thick slices
1 cup unsweetened coconut, lightly toasted
1 cup sliced unblanched almonds, lightly toasted
1/2 cup cilantro, chopped
1 lime, cut into 8 wedges

Steps:

  • For the soup, place sweet potatoes, a cup of the coconut milk and the broth in a stock pot. Bring to a low boil and simmer 15 minutes until the sweet potatoes are soft.
  • Place potatoes and liquid in a food processor and blend until smooth, adding lime juice and the remaining coconut milk as needed.
  • For the shrimp, mix together the ingredients in a plastic bag. Marinade the cleaned shrimp for one hour in the fridge. Broil or grill shrimp for five minutes until done.
  • For the bananas, place banana slices in a single layer in a shallow baking pan. Broil 2-3 minutes. Turn bananas over and broil another minute or two until they are a bit soft and lightly browned.
  • Ladle soup into bowls and top with shrimp. Serve condiments in small bowls on the side.
