SAN ANTONIO CEVICHE

San Antonio Ceviche image

I lived in San Antonio in 1980 and this recipe was posted in the local newspaper then. Found it in an old recipe box and want to put it here so I don't lose it again.

Number Of Ingredients 11

Ingredients

1 lb sole fillet
1 cup salad oil
1/4 cup chopped fresh cilantro
1 cup sliced pimento-stuffed green olives
2 cups minced onions
2/3 cup fresh lime juice
2 garlic cloves, minced
2 bay leaves
2 -3 pickled jalapeno peppers, minced
salt and pepper
lettuce and thinly sliced celery

Steps:

Cut the fish filets into one-half-inch cubes.
Combine remaining ingredients and pour over fish cubes; cover and refrigerate for 12 to 24 hours.
Remove bay leaves before serving.
Serve on a bed of shredded lettuce and thinly sliced celery.
