Easy Crab Tortellini image

Here's a super easy, super simple method for making stuffed pasta using wonton wrappers. If you'd rather call these crab wontons or crab dumplings (or even cheater tortellini!), go ahead. No matter what you call them, this is definitely something you want in your bag of culinary tricks. They're loaded with crab and the tortellini shape does a great job of catching and holding on to all the delicious sauce.

7 saltine crackers, finely crushed
1 large egg, beaten
2 tablespoons mascarpone cheese
½ teaspoon Dijon mustard
¼ teaspoon Worcestershire sauce
6 ounces lump crabmeat, very well drained, squeezed dry
6 ounces Dungeness crabmeat, very well drained, squeezed dry
¼ teaspoon seafood seasoning (such as Old Bay®)
salt to taste
1 pinch cayenne pepper
1 tablespoon minced jalapeno pepper
28 (3.5 inch square) wonton wrappers, or as needed
1 ½ cups creme fraiche
1 teaspoon ground paprika
2 teaspoons fresh lemon zest
salt to taste
1 tablespoon chopped fresh dill, or more to taste
1 pinch cayenne pepper

Steps:

  • Crush crackers into a bowl. Add egg, mascarpone cheese, Dijon mustard, and Worcestershire sauce; stir until combined. Let sit until crumbs have absorbed some moisture, about 5 minutes.
  • Add crab meat, seafood seasoning, salt, cayenne pepper, and jalapeno to the cracker mixture; stir until just combined. Wrap and chill in the refrigerator until flavors develop, about 1 hour.
  • Place a wonton wrapper on a work surface to resemble a diamond shape. Wet the top 2 edges with just enough water to moisten. Place 1 tablespoon crab filling right in the center and press to spread it out a bit. Pull the bottom wonton corner up and over the filling, line it up with the top corner to form a triangle, and work your way down the sides, pressing and sealing the wonton edges and pushing out any air. Press your finger right in the center of the long side to create a fold (or bend) in the triangle. Moisten the 2 "wings" and fold around the bend to seal. Repeat to form remaining tortellini.
  • Bring a pot of salted water to a boil.
  • While waiting for water to boil, place creme fraiche in a skillet over medium heat. Add paprika, lemon zest, salt, and a splash of the pasta water. Cook and stir until heated through and just starting to simmer, then turn off the heat and reserve.
  • Add tortellini to the boiling water, giving a gentle stir make sure they don't stick to the bottom. Cook for 1 minute; they may or may not float to the surface. Remove tortellini with a slotted spoon and transfer into the reserved sauce.
  • Turn heat to medium-high and cook, gently stirring and basting, until sauce is heated through and just starts to simmer. Don't overcook or the sauce will reduce too much. Turn off the heat and stir in dill. Serve immediately on warm plates and sprinkle with additional dill and cayenne.

These zesty melt-in-your-mouth ravioli combine a classic ricotta filling with lump crabmeat. The fresh acidity of lemon adds to the delicacy of this dish.

For the filling:
1 cup ricotta cheese (8 ounces)
1 cup lump crabmeat, such as peekytoe (8 ounces)
Coarse salt and freshly ground pepper
1/8 teaspoon red-pepper flakes
For the ravioli:
All-purpose flour, for baking sheet
90 wonton wrappers (two 12-ounce packages)
1 large egg, lightly beaten, for egg wash
Coarse salt
For the sauce:
1 stick unsalted butter
2 teaspoons lemon peel, very finely chopped, plus 2 teaspoons fresh lemon juice
Garnish: fresh chervil

Steps:

  • Make the filling: Mix together ricotta, crabmeat, 1/2 teaspoon salt, 1/8 teaspoon pepper, and the red-pepper flakes.
  • Make the ravioli: Lightly flour a baking sheet. Working in batches, arrange 45 wonton wrappers on a work surface; keep remaining wrappers covered with a damp paper towel. Mound 1 teaspoon crab filling in the center of each. Brush edges of wrappers with egg wash, and top each with another wrapper. Press edges to seal. Cut out circles using a 2 1/4-inch cookie cutter; transfer to baking sheet.
  • Bring a large pot of salted water to a boil. Working in 2 batches, cook ravioli until they rise to the top, 2 to 3 minutes.
  • Meanwhile, make the sauce: Heat a large skillet over medium heat. Melt 4 tablespoons butter, and heat until just bubbling and frothy. Transfer first batch of ravioli to skillet using a slotted spoon, along with about 2 tablespoons cooking liquid. Add 1 teaspoon chopped lemon peel and 1 teaspoon juice, and swirl to combine. Transfer to plates.
  • Repeat with second batch of ravioli. Garnish with chervil.

This is a dish I learned to make at Leith's cooking school in London. It takes a little work, but is divine. You could make the pasta dough, filling and sauce ahead of time, but I recommend cooking the pasta as soon as possible after you've made it. If you must store it for a few hours, then separate the ravioli with plastic wrap or parchment paper to keep them from sticking together.

450 g strong 00 flour
4 large eggs
1 tablespoon oil
110 g cooked crabmeat
110 g cooked prawns, still in their shells
1 egg white
2 teaspoons finely chopped chives
2 teaspoons lemon juice
salt & freshly ground black pepper
55 g prawn shells
1 small onion, roughly chopped
1 garlic clove, crushed
3 tablespoons brandy
2 tomatoes, chopped
1 bay leaf
1 tablespoon tomato puree
1 star anise (optional)
1 liter fish stock
150 ml double cream
chives (to garnish)

Steps:

  • Make the pasta by mixing all the ingredients together in a food processor with the normal blade.
  • You can also do this by mixing the flour and eggs together by hand on a wooden board, but it just takes longer and the end result is the same.
  • Turn the dough out onto the counter.
  • Use your hands to shape it into a ball and draw together any crumbs.
  • Wrap in clingfilm and leave to relax in a cool place for an hour.
  • Meanwhile, make the filling.
  • Remove the prawns from their shells.
  • Put the crabmeat and prawns in the food processor and whiz until smooth.
  • Add the egg white, lemon juice salt and pepper and whiz again until just mixed.
  • Stir in the chives, cover and set aside.
  • Make the sauce.
  • Heat the oil in a heavy saucepan and fry all the shells and onion until they start to brown.
  • Add the garlic and cook for another 30 seconds.
  • Add the brandy, tomatoes, bay leaf, tomato puree and star anise.
  • Add the stock and simmer for 20 minutes.
  • Strain the sauce and reduce to 150 ml by boiling rapidly.
  • Add the cream, reduce to the consistency of single cream and season to taste.
  • Set the sauce aside and roll out your pasta dough as thinly as possible using a pasta maker.
  • You want a strip about 6 inches wide.
  • Place teaspoonfuls of the filling in even rows at intervals of 1 1/2 inches over half of the pasta.
  • Fold the other half over the mounds of filling.
  • Press together, firmed around each mound to make sure you have squeezed out all the air.
  • Cut between the rows, making sure the edges are sealed.
  • You can use a fork to decorate the edges.
  • Cook the ravioli in boiling water for 3-4 minutes until al dente.
  • Place on the serving dish, drizzle over the sauce and decorate with the chives.

Making your own pasta for ravioli takes more effort but it's worth it. Fill with a delicious crabmeat and ricotta filling and serve with a lemon butter sauce

Yield 2 as a main course or 4 as a starter

Number Of Ingredients 10

150g 00 pasta flour
1 large egg and 2 yolks, lightly beaten
½ tbsp olive oil
150g white and brown crabmeat
100g ricotta
½ lemon , zest (use the rest in the sauce)
1 tbsp tarragon , leaves picked, finely chopped
1 tbsp dill , finely chopped
40g unsalted butter
½ lemon , zest and juice

Steps:

  • First make the pasta. Put the flour in a food processor with almost all of your egg mixture, oil and a pinch of salt. Blitz to large crumbs - they should come together to form a dough when squeezed (if it feels a little dry gradually add a bit more egg). Tip the dough onto a lightly floured surface, knead for 1 min or until nice and smooth - don't worry if it's quite firm as it will soften when it rests. Cover with cling film and leave to rest for 30 mins.
  • To make the filling, mix all of the ingredients together, season and leave in the fridge until needed.
  • Cut away ¼ of the dough (keep the rest covered with cling film) and feed it through the widest setting on your pasta machine. (If you don't have a machine, use a heavy rolling pin to roll the dough as thinly as possible.) Then fold into three, give the dough a quarter turn and feed through the pasta machine again. Repeat this process once more then continue to pass the dough through the machine, progressively narrowing the rollers, one notch at a time, until you have a smooth sheet of pasta. On the narrowest setting, feed the sheet through twice.
  • Put the pasta sheet on a lightly floured surface, then spoon teaspoons of the filling 4cm apart on the bottom half of the sheet. Using your fingers, pat water around each blob of filling. Fold the top half over the fillings and carefully squeeze around, making sure to remove any air pockets.
  • Cut between each ravioli using a pasta cutter or sharp knife, then pinch around the edges of each ravioli to make sure it is well sealed. Keep on a lightly floured baking tray while you repeat the process with the remaining dough and filling.
  • Bring a large pan of salted water to the boil. In a large, non-stick pan, melt the butter over a medium heat and cook for 2-3 mins until brown and nutty. Take off the heat and whisk in a splash of the pasta water and the lemon juice. Cook the ravioli for 2-3 mins, remove with a slotted spoon and immediately toss in the brown butter sauce. Serve topped with the lemon zest and a crack of black pepper.

DELICIOUS! This is a great recipe to serve when you are having guests and want to impress them. For a faster, easier recipe, you can use canned crabmeat instead of live crabs. My family thinks it is just as good and it makes it a lot easier for me!

TORTELLINI FILLING INGREDIENTS:
2 pound(s) fresh cooked crab (or canned crabmeat)
1 tablespoon(s) chopped basil
1 tablespoon(s) chopped chives
1 teaspoon(s) morscorpone cheese
PASTA INGREDIENTS:
1 quart(s) all purpose flour
4 - whole eggs
6 - egg yolks
1 pinch(es) of salt
1 tablespoon(s) extra virgin olive oil
1 - egg whisked
VINAIGRETTE INGREDIENTS:
1/2 cup(s) chopped tomatoes
2 tablespoon(s) extra virgin olive oil
1 teaspoon(s) champagne vinaigrette
1 - lemon zested
1 tablespoon(s) vegetable broth
Add - salt and pepper to taste
FINISHING INGREDIENTS:
1 pound(s) bok choy
2 tablespoon(s) olive oil
- salt and pepper to taste
- basil

Steps:

  • TORTELLINI FILLING DIRECTIONS: 1. Pick out crab meat being sure to check for and remove any shells or cartilage. 2. Squeeze extra moisture out of the crab meat. 3. Combine with chopped basil, chopped chives, and Morscorpone Cheese in a mixing bowl. 4. Season with salt and pepper and set aside in the refrigerator.
  • PASTA DIRECTIONS: 1. In a food processor, add flour and salt and start the machine. 2. Slowly add the olive oil, 3. Then add the eggs one at a time. Make sure the eggs are totally mixed in. 4. Kneed on a countertop until the dough is smooth, wrap in plastic and refrigerate for one hour. 5. Using a pasta machine, roll the dough to the zero "0" setting and smooth. (If you don't have a pasta machine, just use a rolling pin and roll the dough out as thin as you can get it.) 6. Using a large circle dough cutter, cut the pasta into 2" or 2 1/2" circles. 7. Place about a teaspoon of the crab mixture in the center of the circle. 8. Brush 1/2 of the outside edge of the circle with the whisked egg. 9. Fold in half to form a half moon shape, push out any air, and then press edges together and seal with egg. 10. Next, wrap the two corners around your finger and turn. (See photo at left) 11. Press ends together to seal shape. (After you do a few, you will get much quicker with putting them together.) 12. Boil in salted water for 3 minutes. (Make sure water is boiling before adding the pasta and don't overcook.)
  • VINAIGRETTE DIRECTIONS: 1. Mix all ingredients together in a mixing bowl. 2. Season with salt and pepper.
  • FINISHING DIRECTIONS: 1. Shred Bok Choy and sauté with olive oil and season with salt and pepper. 2. Arrange the vinaigrette on the bottom of the plate. 3. Place some of the Bok Choy mixture on top. 4. Place tortellini on the top 5. Garnish with basil.
