EASY COCONUT SHRIMP



Easy Coconut Shrimp image

Golden, sweet, and crisp, coconut shrimp is a crowd-favorite finger food and it always flies off the serving platter especially if you serve it with spicy sweet dipping sauce. Coat raw shrimp in a flour mixture, then dunk into beaten eggs, then cover in your coconut breadcrumbs topping before frying.

1/3 cup all-purpose flour or whole wheat flour (spoon & leveled)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 large eggs, beaten
3/4 cup Panko bread crumbs
1 cup sweetened shredded coconut
1 pound raw large shrimp, peeled and deveined with tails attached
3-4 Tablespoons vegetable oil or coconut oil*
optional for topping: 1 Tablespoon finely chopped cilantro
3 Tablespoons Thai chili sauce
6 Tablespoons orange, peach, or apricot jam or preserves

Steps:

  • Start with 3 medium bowls. Combine flour, salt, and pepper in one. Beat the eggs in the second bowl. Combine Panko and coconut in the third bowl.
  • Dip the shrimp into the flour, then the eggs, and then dredge the shrimp into the coconut mixture, pressing gently to adhere. You want a lot of coconut on each shrimp. Set the coated shrimp aside on a plate as you coat the remaining shrimp.
  • Add enough oil to cover the bottom of a large skillet over medium heat. Fry the coconut shrimp in batches such as 7-8 shrimp at a time- do not crowd them in the pan. Flip after 2 minutes and fry the other side for 2 minutes or until golden brown. We prefer ours a little darker, so I fry each side for about 2:30-3 minutes.
  • Place the finished coconut shrimp on a plate lined with a paper towel as you fry the rest. Sprinkle with finely chopped cilantro. Mix dipping sauce ingredients together and serve with shrimp.
  • Cover and store leftover shrimp in the refrigerator for up to 3 days.

Tart, sweet green mangoes are common in Thailand but hard to find in the States. These mangoes are evergreen; they never turn that yellowish orange color. I think green Granny Smith apples are the perfect replacement for this dish if needed. The tart, sweet crunch, complemented by the smoky coconut, pairs perfectly with plump shrimp.

1 tablespoon (15 milliliters) vegetable oil
1/2 pound (240 grams) medium shrimp, sliced in half lengthwise
2 shallots, thinly sliced
2 cloves garlic, finely chopped
1 to 2 Thai chilies, thinly sliced
1/3 cup (80 milliliters) lime juice
1/3 cup (80 milliliters) fish sauce
1/2 cup (95 grams) brown sugar or palm sugar
3 cups (720 grams) matchstick-cut green mango
1 cup (75 grams) toasted coconut chips
1/2 red onion, very thinly sliced
3 scallions, cut on the bias
1/4 cup (35 grams) cashew nuts, roasted

Steps:

  • Heat a medium skillet on medium and add oil. When you see a wisp of white smoke, add the shrimp and lightly saute them for about 1 minute, then reduce the heat to low. Add the shallots, garlic and Thai chilies and cook them for an additional minute, until the shrimp are just cooked through.
  • Turn off the heat. Stir in the lime juice, fish sauce and sugar. Stir it until the sugar is dissolved. Transfer the shrimp and dressing to a serving plate. Allow to cool for a few minutes. When ready to serve, arrange the mango, coconut and red onion in the serving bowl. Toss to combine, and garnish with scallions and cashews.

AIR FRYER COCONUT SHRIMP WITH PINEAPPLE SALAD



Air Fryer Coconut Shrimp with Pineapple Salad image

Some coconut shrimp recipes call for sweetened coconut, but we preferred shredded unsweetened coconut in this recipe. It adds a lot of coconut flavor without making the dish too sweet. Quickly cooked in the air fryer, these shrimp are served with a tangy and sweet pineapple salad and some fresh red pepper to tie everything together.

12 ounces large shrimp, peeled and deveined (tails intact)
Kosher salt and freshly ground pepper
2 large eggs
1 cup unsweetened shredded coconut
1/2 cup panko
2 tablespoons extra-virgin olive oil, plus more for brushing
2 cups cubed pineapple
1 red bell pepper, cut into 1/2-inch pieces
1/2 small red onion, thinly sliced
2 tablespoons fresh lime juice
1 tablespoon Thai sweet chili sauce, plus more for dipping
2 ounces watercress, trimmed (about 4 loosely packed cups)

Steps:

  • Line a baking sheet with parchment paper. Season the shrimp with 1/2 teaspoon salt and a few grinds of pepper. Beat the eggs in a large shallow bowl with a pinch of salt. Toss the coconut and panko together in another large shallow bowl. Dip the shrimp in the egg, letting the excess drip back into the bowl. Then, drop the shrimp in the coconut mixture and toss to coat, pressing with your fingers to adhere evenly. As you coat the shrimp, lay them on the baking sheet.
  • Brush an air fryer rack with olive oil and preheat to 375˚ F. When the air fryer is ready, add half of the shrimp and cook, turning halfway through, until golden brown and cooked through, 6 minutes. Remove to a plate and repeat with the remaining shrimp.
  • While the shrimp cook, combine the pineapple, bell pepper and red onion in a bowl. Drizzle with the olive oil, lime juice and sweet chili sauce; season with 1/2 teaspoon salt and a few grinds of pepper. Toss well.
  • Before serving, add the watercress to the pineapple salad and toss. Serve the shrimp with the salad and more sweet chili sauce for dipping.

2 oranges
1 cup fresh cilantro and/or parsley
2 scallions, chopped
1/4 cup canned unsweetened coconut cream
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 1/2 pounds large shrimp, peeled and deveined
2 romaine lettuce hearts, chopped (about 12 cups)
1 avocado, diced
1/4 cup unsalted roasted cashews, roughly chopped
6 radishes, thinly sliced

Steps:

  • Peel the oranges with a paring knife, removing any white pith. Slice between the membranes to remove the segments; set aside. Squeeze out the excess juice from the membranes into a blender. Add the herbs, scallions and coconut cream and puree until smooth. Add 1 tablespoon olive oil, 1/2 teaspoon salt and a few grinds of pepper and puree until creamy. Set the dressing aside.
  • Season the shrimp generously with salt and pepper. Heat a medium skillet over medium-high heat. Add 1 tablespoon olive oil, then add half the shrimp and cook, turning once, until opaque, 5 to 6 minutes. Remove to a large bowl. Repeat with the remaining 1 tablespoon olive oil and shrimp.
  • Add the romaine, avocado, cashews, radishes and orange segments to the bowl with the shrimp; toss. Drizzle with the dressing and season with salt and pepper.

Canola or safflower oil, for frying
1/2 cup plain bread crumbs
1/2 teaspoon salt, eyeball it in palm of hand
2 pinches ground cayenne pepper
1 1/2 teaspoons Chinese five-spice powder, available on spice aisle
1 lime
1 cup shredded coconut
2 egg whites
1 pound large fantail shrimp, deveined and peeled -- ask for easy peels at fish counter

Steps:

  • Heat 2 inches oil over medium high heat. A cube of bread should brown in a 10 count when oil is ready.
  • Season bread crumbs with salt, cayenne pepper and five-spice powder. Cut the lime into wedges and reserve.
  • Toss coconut with seasoned bread crumbs to combine. Lightly beat the egg whites. Dip shrimp in the egg whites, then coat with the coconut breading. Fry shrimp 5 minutes in hot oil until evenly golden and crispy. Garnish with lime wedges and serve.
  • TIMING: To serve all of the courses together, a mix-n-match, family-style presentation, you can bread the shrimp and wait to heat oil and fry when you are ready to put the chicken stir-fry in the pan. Or, for separate courses, serve the shrimp with the salad, have your rice cooking and your ingredients prepped for the stir-fry, then stir-fry the chicken only when guests are ready for it.

1/2 cup flour
1/2 cup coconut flakes
1 egg (beaten)
2 teaspoons olive oil
1 head romaine lettuce
1/2 cup goat cheese
2 teaspoons walnuts
1 mango
1 avocado

Steps:

  • Preheat oven to 350.
  • Combine breadcrumbs and coconut.
  • Dip shrimp in flour, then egg, then crumb/coconut mixture.
  • Grease baking sheet (Pam) and line the shrimp on there as you go.
  • Brush with olive oil, bake until crisp.
  • Chop Romaine lettuce, set aside.
  • Slice mango and avocado.
  • Toss walnuts, goat cheese, mango and avocado with romaine.
  • Top with shrimp when done.

1 cup coconut milk
1/3 cup honey
2 tablespoons rice vinegar
1 tablespoon canola oil
1/4 teaspoon salt
1 pound uncooked large shrimp, peeled and deveined
SALAD:
4 cups spring mix salad greens
1 cup green grapes
1/2 cup sweetened shredded coconut
1/2 cup dried cranberries
1/4 cup sliced almonds, toasted

Steps:

  • In a small bowl, combine the first five ingredients. Pour 3/4 cup into a shallow dish. Add the shrimp; turn to coat. Cover and refrigerate for up to 30 minutes. Cover and refrigerate remaining vinaigrette., Drain and discard vinaigrette from shrimp. Thread shrimp onto four metal or soaked wooden skewers. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack., Grill shrimp, covered, over medium heat or broil 4 in. from the heat until shrimp turn pink, turning once, 6-8 minutes. ½ cup all-purpose flour
⅔ cup beer
1 ½ teaspoons baking powder
¼ cup all-purpose flour
2 cups flaked coconut
24 shrimp
3 cups oil for frying

Steps:

  • In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. Place 1/4 cup flour and coconut in two separate bowls.
  • Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes. Meanwhile, heat oil to 350 degrees F (175 degrees C) in a deep-fryer.
