COCONUT CURRY SHRIMP

Steps:
- Heat the butter in a large skillet (I used nonstick) over medium-high heat. Add the shrimp and cook, turning them over halfway through, until fully cooked, 2 to 3 minutes. Remove to a plate and set aside.
- Add the garlic and onions to the skillet and stir to cook for 2 minutes. Sprinkle the curry powder over the onions and continue cooking, stirring, for another couple of minutes. Reduce the heat to medium low and pour in the coconut milk, stirring to combine. Add the honey, salt and lime juice, and allow the sauce to heat up until bubbling gently. Add the shrimp to the sauce, tossing to coat, and allow it to simmer until slightly thickened, 2 to 3 minutes. Taste the sauce and add more salt, lime juice or honey, depending on your taste. Stir in the basil. (Add hot sauce if you want a little kick.)
- Serve the shrimp and sauce over a bed of cooked basmati rice, garnishing with more basil. Delicious!
COCONUT SHRIMP AND MANGO DIPPING SAUCE

- For the mango dipping sauce: Add the mango, BBQ sauce, honey, lime juice and salt to a blender and blend until smooth. Transfer to a small bowl; set aside.
- For the shrimp: Heat about 1/2 inch of vegetable oil in a nonstick skillet over medium heat to 350 degrees F.
- Combine the cornstarch, flour, salt and pepper in a bowl. Beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the coconut flakes and breadcrumbs.
- Bread the shrimp by dipping them first in the flour mixture and shaking off any excess, then in the egg wash and finally in the coconut breadcrumbs, pressing to make sure each shrimp has an even coating.
- Fry the shrimp in the oil in batches of 8 to 12 until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate.
- Arrange on a platter and serve immediately alongside the dipping sauce. Garnish with lime wedges.
CURRY-COCONUT SHRIMP
Jumbo shrimp in a lightly spiced coconut curry sauce. Serve over hot cooked brown rice.

- Heat oil in large, nonstick saucepan over medium heat. Saute onion, red pepper, and garlic until vegetables begin to soften, about 3 minutes.
- Season with cumin, coriander, and curry powder. Cook for 1 more minute. Stir in coconut milk, sugar, and crushed red pepper flakes. Bring to a boil. Reduce heat, and simmer, uncovered for 2 minutes.
- Stir in shrimp, and increase heat to medium-high. Cook and stir until shrimp is cooked through, about 4 minutes.
- In a small bowl, combine cornstarch with 1 tablespoon water. Stir into shrimp mixture, and cook until sauce has thickened, about 1 minute. Stir in cilantro, and remove from heat.

COCONUT SHRIMP CURRY WITH MANGO

- Preheat the oven to 375 degrees F (190 degrees C). Place sweet potato on a greased baking sheet.
- Bake in the preheated oven until fork-tender, about 30 minutes.
- Meanwhile, cook shrimp in boiling water until pink, about 5 minutes.
- Stir coconut milk, yogurt, tomato paste, curry powder, garlic, ginger, and cayenne together in a large skillet. Bring to a boil and then turn heat to low and add red bell pepper, mango, and cauliflower. Add sweet potato once done. Simmer for at least 20 minutes.
- Serve curry over cooked rice.

COCONUT SHRIMP CURRY
From "Faster, I'm Starving; 100 Dishes in 25 Minutes or Less" by Kevin and Nancy Mills. This is a new cookbook I found at my library and I wanted to post this before I return the book. This recipe calls for 1 lb. cooked or raw shrimp. Note: sweetened coconut is found near the chocolate chips at the market in the baking isle and unsweetened coconut may be available in the Asian food isle, either works with this recipe.

- Peel the onion and cut into 1/2" pieces. Put oil in a wok or large frying pan and begin heating over medium-high heat. Add the onion and cook about 5 minutes, stirring occasionally, or umtil the onion begins to soften.
- Add the garlic, coriander, cumin, turmeric, cinnamon, chili powder, ginger, salt and black pepper and stir until the spices have dissolved. Add the water, tomato sauce and coconut and bring to a boil. Turn down to medium heat and cook, covered, about 5 minutes.
- Add the shrimp. If the shrimp are uncooked, cook about 3 minutes, or until they are pink and just begin to curl. Then add the sour cream. If the shrimp are cooked, add them and quickly stir in the sour cream. Continue to heat until hot.
- Serve immediately or set aside until ready to eat and then reheat breifly.

BAKED COCONUT SHRIMP WITH SPICY MANGO SAUCE
In baking the shrimp instead of frying you save on loads of calories without sacrificing taste. Cornstarch helps the coating to adhere much better to the shrimp instead of flour. This recipe works best with extra-large shrimp, 15-20 to the pound. Do not butterfly the shrimp or they will come out tough.

- Preheat oven to 375°F
- Place coconut and panko crumbs in a food processor and pulse a few times to blend.
- Place crumb mixture into a shallow dish or bowl.
- In a 2nd bowl beat egg whites lightly.
- In a 3rd bowl, add cornstarch.
- One at a time, dredge shrimp in corn starch, shaking off excess, then in egg whites, then dredge in crumb mixture, pressing to adhere to shrimp.
- Pour any leftover egg white evenly over each shrimp.
- Place shrimp on a lightly greased baking sheet.
- Spray each shrimp lightly with canola oil.
- Bake at 375F for 10 minutes then spoon some of the mango sauce over each of the shrimp.
- Then continue baking for 10 more minutes. (Do not over bake or shrimp will be tough).
- Serve with Spicy Mango Sauce or bottled Sweet Chili Sauce.
- To Prepare Spicy Mango Sauce:.
- In a small sauce pan, heat 1 tablespoons oil.
- Add onion, ginger and garlic and saute 3 minutes, stirring.
- Add mango nectar and Scotch Bonnet pepper sauce and bring to a boil.
- Cook 10 minutes to reduce to 3/4 cup.
- Remove from heat and let stand 10 minutes.
- Place mixture into a blender and process till smooth.
- Stir in lime juice and salt. Cool.

- Pulse mangoes, shallots, garlic, ginger, curry powder and salt in a food processor until pureed. Add coconut milk; pulse until well combined. Transfer mango mixture to a bowl; stir in coconut water and lime juice. (Thin with tap water if desired.) Cover and chill until cold, 1 hour. Divide among 4 bowls; garnish with shrimp and cilantro before serving.

- Clean and devein the shrimp. Skin and slice the mangoes thin. Slice the shallots, ginger and garlic into thin strips. Slit the chilies for spicy curry or leave it whole. Grind the coconut into a smooth paste with a few table spoons of water.
- If the mango is tart add ½ C to a pot along with ½ C sliced shallots , ginger, garlic chilies, turmeric powder and chili powder. Add 1 C water and bring it to a rolling boil. Simmer for 5 minutes. Add salt and taste , if needed add more mango slices to make it more tart.
- In a small sauce pan heat 1 tbsp of oil. When hot add all the ingredients for tempering. Once the mustard splutters turn off the heat. Pour the hot oil and the seasoning over the curry. Stir just before serving

- Put the corn starch in a bowl. Combine the curry paste, cream of coconut, and about 1 TBSP water in a bowl; stir to combine. In a third bowl, combine the panko and coconut.
- To dredge the shrimp, start by coating them in corn starch, and then in the curry paste mixture, and then finally in the panko mixture, pressing that in to ensure it sticks and adheres to all sides of the shrimp. I like to do a bunch of shrimp and set them on a baking sheet, so they’re all ready at once when it’s time to fry them.
- When all of your shrimp are breaded/coated, add enough oil to a large, deep-sided skillet to coat the bottom. Keep the oil nearby, as you will probably need to add more in between batches. Set the heat to medium high (should get to about 350 – 360 degrees F, if you have a thermometer).
