BASBOUSA: ALMOND COCONUT SEMOLINA CAKE RECIPE



Basbousa: Almond Coconut Semolina Cake Recipe image

Basbousa is an Egyptian semolina cake drenched in syrup. Today, I'm sharing my aunt Maha's special recipe!

1/2 cup plus 2 tbsp unsalted butter
1 cup sugar
1 cup plain yogurt
1 cup fine semolina PLUS 1 cup coarse semolina (or 2 cups coarse semolina or 2 cups original Cream of Wheat enriched farina)
1/3 cup milk
1 tsp baking powder
1/4 cup sweetened shredded coconut or coconut chips
1/4 cup shaved almonds
1 1/2 cup sugar
1 3/4 cup water
1 short cinnamon stick
1/4 tsp lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the butter in a small bowl and melt in the microwave. Set aside.
  • In a large mixing bowl, combine together the sugar and yogurt. Now add in the semolina, baking powder and milk. Finally stir in the melted butter, and let the mixture sit briefly so that the butter is absorbed.
  • Transfer the semolina mixture into a lightly greased 9"-round cake pan or baking dish. Bake in the 350 degrees F-heated oven for about 40-45 minutes. If necessary, broil ever so briefly so that the top of the basbousa gains color. Watch carefully. When ready, remove from oven.
  • While the cake is baking, prepare the cinnamon simple syrup. In a small sauce pan or pot, combine the sugar, water and cinnamon stick. Bring to a boil on high heat, stirring until sugar dissolves. Turn heat to low and let cook for a few minutes until the syrup thickens. Remove from heat and stir in the lemon juice. Let cool completely, then remove the cinnamon stick.
  • As soon as the basbousa is removed from the oven, pour the cool syrup on the hot basbousa. Let cool completely; syrup must be absorbed into the cake. For best result, let it sit for 1 hour before serving.
  • When ready to serve, top the cake with the coconut chips and the coconut and shaved almonds. Slice and enjoy!

1 1/4 cups whole milk, warmed
2 cups desiccated coconut
1 1/2 cups semolina flour
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
2 large eggs, room temperature
1/2 cup sugar
1/2 cup safflower oil
1 cup plain whole-milk yogurt
1/4 cup pistachios, finely chopped

Steps:

  • Make the syrup: In a small saucepan, combine sugar, saffron, lemon juice, and 1/2 cup water. Bring to a boil, reduce to a simmer, and stir constantly until sugar dissolves.
  • Make the cake: Preheat oven to 350 degrees. Butter a 9-by-13-inch pan and line with parchment paper, leaving a 2-inch overhang on all sides; set aside.
  • Add saffron to milk and let steep 5 minutes. Whisk together coconut, semolina flour, baking powder, and salt in a large bowl until combined. In a separate large bowl, whisk together eggs, sugar, and oil until light and fluffy. Add milk mixture and yogurt; stir to combine. Fold in coconut mixture to incorporate.
  • Transfer batter to prepared pan and bake until cake is golden brown and springs back in center when gently touched, about 1 hour.
  • Transfer pan to a wire rack. Pour syrup over warm cake and sprinkle with pistachios. Let cake cool completely in pan on a wire rack. Using parchment overhang, remove cake from pan to a cutting board; cut into triangles using a serrated knife.

1 cup shredded coconut
1 cup canned unsweetened coconut milk
1/2 cup shredded coconut
1/2 cup sugar
your favorite white vanilla icing
sweetened flaked coconut

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease and flour 2 9-inch layer pans.
  • To make the cake: Mix the butter and sugar in an electric mixer until light, fluffy and a pale lemon color, about 3-5 minutes.
  • Add the eggs and the egg yolks, one at a time, beating well after each addition.
  • Combine the flour, baking powder and salt in a separate bowl.
  • Add 1/3 of the flour mixture, beat well and scrape down the sides of the bowl.
  • Add 1/2 of the coconut milk, beat well.
  • Add another 1/3 of the flour mixture, beat well and scrape down the sides of the bowl.
  • Add the remaining 1/2 cup of coconut milk and the vanilla.
  • Beat well.
  • Add the final 1/3 of the flour mixture and beat well.
  • Add the shredded coconut and mix to combine.
  • Scrape down the sides of the bowl (that batter is always trying to escape!) and spoon the batter into the 2 prepared pans.
  • Bake until lightly golden and springy on top, about 35 minutes.
  • To make the syrup: Place the coconut milk, coconut and sugar in a small saucepan and bring to a boil over medium-high heat.
  • Lower the heat to low and cook until the sugar has melted and the mixture has thickened a bit, about 4-5 minutes.
  • Cool the cakes in the pans for about 5 minutes, invert onto a rack and split each one in half with a serrated knif, so you have 4 layers.
  • Prick holes in the layers with a fork and drizzle each layer with the warm coconut syrup.
  • While the cakes are cooling, make (or open) your icing.
  • Spread the frosting on each layer.
  • Re-assemble the cake and frost the outside.
  • Sprinkle all over with the shredded coconut you saved for the garnish.

250 g unsalted butter
1 cup caster sugar
3 eggs (lightly beaten)
1 teaspoon vanilla extract
1 cup semolina (fine ground)
3/4 cup desiccated coconut
1 1/4 cups self-rising flour
3/4 cup sugar
1 cup water
1 lemon (sliced finely)

Steps:

  • Preheat oven to 180°C.
  • Brush a deep 23cm springform pan with melted butter. Line base and sides with paper, grease the paper.
  • Using electric beaters beat the butter and sugar in a small mixing bowl for ten minutes.
  • Add the eggs gradually, beating thoroughly after each addition.
  • Add the vanilla and semolina, beat for 5 minutes.
  • Add the coconut, stir.
  • Using a metal spoon fold in the sifted flour. Stir until the mixture is just combined and smooth.
  • Spoon the mixture into the prepared tin and smooth the surface.
  • Bake for 1 hour or until a skewer comes out clean.
  • Pour cold syrup over the hot cake while still in the pan. When the cake is cool decorate with the lemon slices.
  • Serve with cream.

For the Syrup:
3 cups sugar
3 cups water
1/2 lemon (juiced)
For the Cake:
3 eggs
1/2 cup sugar
3/4 cup vegetable oil
1 lemon (zested)
1 teaspoon vanilla
1 cup plain yogurt
3 tablespoons flour
1 cup uncooked semolina
1/4 cup finely ground hazelnuts
1/2 teaspoon baking soda
2 teaspoons baking powder
Garnish: coconut flakes and ground nuts

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F / 175 C. Grease a 9 x 13-inch baking pan .
  • Before you start making the cake, prepare the syrup to give it time to cool down. Begin by mixing the sugar and water in a medium saucepan. Turn the heat on high and bring the mixture to a boil while continuously stirring it.
  • Once it boils, reduce the heat to low and let the syrup boil gently for about 10 minutes with the cover off. Add the lemon juice toward the end. Turn off the heat and let the syrup cool down while you make the rest of the recipe.
  • In a large mixing bowl, whisk together the eggs and sugar. Whisk the mixture briskly for several minutes until the sugar dissolves. The more you whisk, the better your revani will turn out.
  • Add the oil, lemon zest, vanilla, and yogurt and whisk for several minutes more.
  • Add the dry ingredients-flour, semolina, hazelnuts, baking soda, and baking powder-and mix together well until you have a smooth batter.
  • Pour the batter into the greased baking pan. Bake until the top is nicely browned, and a toothpick inserted in the center comes out clean, about 30 to 40 minutes. Once you remove the pan from the oven, let it rest for about 5 minutes.
  • Cut the cake into portion-sized squares or rectangles while still in the pan.
  • Using a large spoon, slowly drizzle all of the cooled syrup over the cake and let it soak in. Cover the cake with foil and refrigerate it for several hours.
  • Before serving, garnish each square of cake with a pinch of coconut and ground nuts.
