1 tablespoon olive oil
1 pound small potatoes, halved
2 red onions, chopped
5 cloves garlic, minced
1 (1 inch) piece fresh ginger root, minced
1 teaspoon ground turmeric
1 tablespoon cumin seeds
salt and pepper to taste
1 (16 ounce) can coconut milk
2 tablespoons tomato puree
1 bunch fresh parsley, chopped

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Cook the potatoes in the hot oil until browned on all sides, about 10 minutes. Remove from skillet and reserve.
  • Reduce the heat to medium, and cook the onions in the skillet until translucent, 2 to 4 minutes. Stir the garlic, ginger, turmeric, cumin seeds, and salt and pepper into the onions. Cook until fragrant, about 1 minute. Return the potatoes to the skillet and cook until almost done, about 15 minutes.
  • Pour the coconut milk over the potatoes; stir in the tomato puree and chopped parsley. Cook until potatoes are cooked through and sauce has thickened, about 5 additional minutes.

2 (14-oz) cans full-fat canned coconut milk
1 tablespoon sea salt, or 2 teaspoons regular table salt
2 teaspoons finely minced garlic
2 teaspoons fresh rosemary
2 teaspoons fresh thyme
Freshly ground black pepper
5 lbs gold or russet potatoes, peeled and thinly sliced
3 tablespoons butter , or vegan butter spread
2 1/2 tablespoons gluten-free all-purpose flour, or regular AP flour
3 cups grated Gruyere cheese, or non-dairy cheese of choice

Steps:

  • Preheat the oven to 375° F. Lightly grease a 9 x13 inch baking dish.
  • In a medium saucepan bring Coconut Milk, salt, garlic, rosemary, thyme and pepper to taste, to a boil. Turn off heat and set aside. Note: mixture will taste salty alone but not when combined with potatoes.
  • Wash potatoes well, slice thinly and cover with cold water. Set aside.
  • Melt butter or (or vegan spread) in a medium-size saucepan over medium heat. Whisk in flour until smooth. Cook, whisking constantly, until mixture turns a golden brown color.
  • Slowly whisk in the herbed coconut milk, a bit at a time. Stirring, bring to a boil and remove from heat.
  • Drain potatoes and layer 1/3 on bottom of baking dish, overlapping each slice about half way. Pour 1/3 coconut sauce over potatoes and sprinkle with 1 cup of cheese. Repeat layers 2 more times, only reserving last cup of cheese for later.
  • Cover with foil and bake 45 minutes. Remove foil and sprinkle with cheese. Bake uncovered 15-20 additional minutes. If potatoes are soft and a darker color is desired, broil potatoes until cheese is nicely browned.

1/4 cup all-purpose flour ((gluten-free all-purpose flour if preferred))

1/8 teaspoon black pepper
1/8 teaspoon nutmeg
1.5 lbs yellow baby potatoes ((about 5 cups))

Steps:

  • Preheat your oven to 400F (220C).
  • In a 1.5qt casserole dish (or larger), whisk together the coconut milk, flour, garlic, thyme, salt, pepper, and nutmeg. Add the potatoes and give it a stir to coat. Cover with foil and bake for 50 to 65 minutes until the potatoes are fork tender. Serve hot.

1 can (13.5 ounces) unsweetened coconut milk
2 tablespoons Balchao Masala
1 1/2 teaspoons coarse kosher or sea salt
Vegetable cooking spray
1 pound russet or Yukon Gold potatoes, peeled, cut crosswise or lengthwise (depending on their size) into 1/4-inch-thick slices, and submerged in a bowl of cold water to prevent browning
4 scallions (green tops and white bulbs), thinly sliced crosswise
8 to 10 medium-size to large fresh curry leaves

Steps:

  • Preheat the oven to 350°F.
  • Whisk the coconut milk, masala, and salt together in a small bowl.
  • Lightly spray a casserole dish with cooking spray. Drain the potatoes. Cover the bottom of the casserole with a layer of potatoes, and sprinkle a third of the scallions over them. Stir the sauce (the masala tends to sink to the bottom, so a good stir helps to mix everything evenly) and drizzle a third of it over the layer. Repeat the layers of potatoes, scallions, and masala two more times, using up all the ingredients
  • Spread the curry leaves over the top layer. Cover the dish and bake until the potatoes are fork-tender, about 45 minutes.
  • Remove the cover and continue to bake until the potatoes are browned, 10 to 15 minutes. Then serve.

I recently became allergic to coconut, so I made this recipe up after not being able to find an alternative online or in any cookbooks I have at home. I think the almonds are a nice twist and help maintain the consistency of the ball instead of just omitting coconut from other recipes I've seen. This is a good no-bake recipe. It is simple to make and easy to eat.

2 cups whole almonds
½ cup ground cinnamon, or more to taste
½ (8 ounce) package cream cheese, softened
¼ cup unsalted butter, softened
1 teaspoon vanilla extract
1 (16 ounce) package confectioners' sugar

Steps:

  • Place almonds in the bowl of a food processor; process until finely ground. Pour cinnamon into a rimmed plate.
  • Mix cream cheese, butter, and vanilla extract in a large bowl until evenly blended. Place the bowl into a large pan filled with ice to help mixture stiffen; make sure butter mixture does not spill out of the bowl.
  • Sift confectioners' sugar into the butter mixture. Add ground almonds and stir until combined. Let mixture rest on ice for 5 minutes.
