No Bake Energy Bites image

This No-Bake Energy Bites recipe is easy to make, full of feel-good ingredients, and irresistibly delicious!

Number Of Ingredients 8

1 cup old-fashioned oats
2/3 cup toasted shredded coconut (sweetened or unsweetened)
1/2 cup creamy peanut butter
1/2 cup ground flaxseed
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract

Steps:

  • Stir all ingredients together in a large mixing bowl until thoroughly combined.
  • Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled. (This will help the mixture stick together more easily.)
  • Roll into mixture into 1-inch balls.
  • Then enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.

We like to add chocolate chips to the mix on occasion -we sometimes swap those out for butterscotch chips too. :) Even plain, the combination of the sweet nuttines of the coconut with crunchy nuttiness of the oatmeal is swell. 2 c all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 c butter, room temperature
1 c sugar
1 c brown sugar
2 large eggs
2 tsp vanilla extract
2 1/2 c oatmeal (rolled or quick cooking not instant)
1 c shredded coconut
1/2 c finely chopped chocolate or butterscotch chips (optional)

Steps:

  • 1. While preheating the oven to 350F, lightly grease a couple of mini muffin pans.
  • 2. In a medium bowl, whisk together the flour, baking soda, baking powder and salt.
  • 3. In a large bowl, cream together the butter and the sugars until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Gradually blend the flour mixture into butter mixture. Stir in the coconut, oatmeal and chocolate/butterscotch bits.
  • 4. Fill the muffin cups about 3/4 full with dough - just under a 1-inch ball. The dough will spread during baking.
  • 5. Bake at 350F for 10-13 minutes, until cookies are just golden brown at the edges. Cool in the pan for about 5 minutes before removing cookie bites and transferring them to a wire rack to cool completely. The tops may sink slightly as the cookies cool.

1 cup rolled oats
2 tablespoons honey
¼ cup coconut flakes
2 tablespoons brown sugar, or more to taste
1 teaspoon ground cinnamon

Steps:

  • Bring coconut milk to a gentle boil in a small saucepan over medium-low heat. Stir in oats and honey; lower heat and simmer until milk has mostly been absorbed, about 15 minutes.
  • Sprinkle coconut flakes, brown sugar, and cinnamon into oatmeal. Cook until oats are creamy and flavors are combined, about 5 minutes.

My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

1/2 cup shortening
1 cup brown sugar, packed or 2 tablespoons molasses
1 cup white sugar (or Splenda or 1/2 cup Splenda for Baking)
2 large eggs
1 teaspoon vanilla
1/2 cup butter
2 cups flour
1 cup flaked coconut
1 teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats
1 cup raisins (optional) or 1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350°.
  • In mixing bowl cream shortening,butter,and sugars.
  • Add eggs and vanilla until blended.
  • Set aside.
  • In separate bowl, combine dry ingredients.
  • Withholding coconut until all other ingredients are blended.
  • Add coconut.
  • Combine wet and dry ingredients until moist.
  • Drop on greased cookie sheet about 1-2 inches apart.
  • Bake for 10 minutes or until golden brown.
  • Remove from oven immedietly- if overcooked cookies get HARD.

1 ½ cups brown sugar
1 cup white sugar
¾ cup butter, softened
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt

1 cup oats
1 cup crispy rice cereal (such as Rice Krispies®)
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar, white sugar, and butter together with an electric mixer in a large bowl until smooth. Add 1 egg one at a time, allowing the first to blend into the butter mixture before adding the next with the vanilla.
  • Stir flour, baking soda, salt, and baking powder together in a bowl. Beat into the butter mixture until just incorporated into a dough. Fold oats, crispy rice cereal, and coconut into the dough; mixing just enough to evenly combine.
  • Drop cookie dough by teaspoonful onto baking sheets.
  • Bake in preheated oven until browned, 8 to 9 minutes. Cool cookies slightly on baking sheets before moving to cooling racks to cool completely.
