GERSCHUH'S RESTAURANT OLD FASHIONED SUGAR CREAM PIE

Steps:
- Preheat home oven to 350 degrees.
- Mix the sugar with the flour until completely blended. Add the salt and whipping cream.
- Blend the half-and-half with the yolks and stir into the sugar mixture, then add the vanilla.
- Just blend the mixture; do not beat it.
- Pour into an unbaked pie shell, distribute the cold, chopped butter evenly on top of the pie filling and sprinkle cinnamon on the top.
- Bake the pie until the filling is completely set when the pie is jiggled. Bake "until it bubbles through for 10 minutes." In a convection oven that takes and hour and 15 minutes. In the home oven start checking the pie after an hour.

FLAKY PIE CRUST (DAVID LETTERMAN'S MOM)
This recipe is from "Home Cooking with Dave's Mom" pg. 150. David's Mom says: "The fat content in a fruit pie comes from the pie crust, and there's just no way to avoid it. I don't think you can make a rust without the fat. I discovered this recipe several years ago in 'Thou Shalt Season With.' It's one of the best pie crusts I've ever come across."

Steps:
- In a medium bowl, cut shortening into flour, sugar, and salt until the mix looks like cornmeal or small peas.
- In another bowl, slightly beat egg yolk and combine with milk and lemon juice. Add to flour mixture and mix by hand until it forms ball.
- Roll on well-floured pastry cloth with well-floured rolling pin. This pastry maintains its flaky qualities even after being rolled out a number of times.
OLD FASHIONED CREAM PIE
This is a long time family favorite comfort food (if pies can be a comfort food). I think my mom told me that it originated with her grandmother who was a farmer which makes sense since all the ingredients are basic staple items. For the faster times, we have made it in the microwave and its actually easier because we don't have to worry about scorching... ENJOY!

Steps:
- Melt butter in double boiler. Mix in sugar into butter.
- Mix 1/4 cup of half and half with cornstarch.
- Add remaining half and half to double boiler butter/sugar mix.
- Stir in half and half/cornstarch into the butter/sugar/half and half combination.
- Heat over med-low heat, stirring constantly until thickens.
- Pour into baked pie shell, lightly sprinkle with nutmeg (for garnish).
- Bake at 400 degrees for 5 minutes.
- Refrigerate.
- FOR MICROWAVE - mix ingredients together in safe bowl, microwave for 10 minutes, stirring at 2 minute intervals until thick. Pour into prepared shell, sprinkle with nutmeg and bake at 400 degrees for 5 minutes.

- Roll pie crust into an 11-inch circle. Place in pie pan, pressing out any air pockets. Prick the bottom and sides of the pie crust with a fork. Bake according to your pie crust recipe directions for a single-crust baked pie shell, then cool.
- In a medium saucepan, whisk sugar and cornstarch together. Add cream and butter to the pan and cook over medium heat, whisking continually. Bring the mixture to a boil and then cook one minute longer. Remove from heat and whisk in vanilla.
- Pour cream mixture into the cooled pie crust and smooth using a spoon or spatula. Pour the melted butter over the top of the pie. Combine 2 tbsp of sugar with 1 tsp cinnamon and sprinkle evenly over the top of the butter. Place on the top rack of your oven and broil for 1-2 minutes, until the sugar crystallizes and browns. Watch carefully so you don't burn your pie!
