Soft and chewy healthy oatmeal cookies are made with oats, honey, coconut oil, chopped nuts, raisins, chocolate chips, and much more! They're super nutritious and make a great snack or even breakfast.

1/3 cup honey or maple syrup (can use 1/2 cup for sweeter cookies)
1/4 cup coconut oil or unsalted butter ((melted))
1 large egg
1 tsp vanilla extract
1 cup instant oats
1/2 cup whole wheat flour ((or all-purpose flour))
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 cup chocolate chips ((optional))
1/4 cup raisins

Steps:

  • Preheat oven to 350F. Line a baking sheet with parchment paper, foil or silicone baking mat and set aside.
  • In a large bowl, whisk the honey, coconut oil, egg, and vanilla. In a medium bowl whisk, all the dry ingredients then stir them into the wet mixture.
  • Drop cookie dough onto the prepared baking sheet using a medium-large cookie scoop and flatten to about ¾'' thickness. Bake 10 minutes then allow in the pan for at least 5-10 minutes and enjoy!

This recipe was inspired by Anzac biscuits, a popular cookie in Australia and New Zealand that is packed with coconut and oats. Oats enhance the nutty flavor and crisp-chewy texture of coconut but to make sure the coconut is the star in these cookies, I added ground and flaked coconut to the batter along with a bit of coconut extract and garnished with a sprinkling of toasted coconut.

Number Of Ingredients 10

1 1/2 cups unsweetened coconut flakes
1/2 cup granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter
1/4 cup packed dark brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon pure coconut extract
1/2 cup rolled oats
1 cup all-purpose flour
2 ounces semisweet chocolate, chopped

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350˚ F. Line 2 baking sheets with parchment paper. Combine 1/2 cup coconut flakes with the granulated sugar in a blender and process until the sugar is finely ground and the coconut is in very small pieces.
  • Put the butter in a large microwave-safe bowl and microwave until melted; let cool slightly. Stir in the coconut-sugar mixture, brown sugar, salt, baking soda and coconut extract, then stir in the oats. Add the flour and 1/2 cup coconut flakes and stir to combine.
  • Scoop heaping tablespoonfuls of dough and gently shape into balls. Arrange about 2 inches apart on the baking sheets. Bake, switching the pans halfway through, until the cookies are set around the edges and the centers are puffy, 16 to 18 minutes. Let cool 3 to 5 minutes on the pans, then remove to a rack to cool completely. (For crunchy cookies, gently flatten the dough balls and bake until browned all over, 18 to 20 minutes.)
  • Put the remaining 1/2 cup coconut flakes in a medium skillet and cook over medium heat, stirring, until toasted, 5 to 7 minutes; let cool. Put the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until melted and smooth. Transfer to a small resealable plastic bag and snip a corner. Drizzle the chocolate over the cookies, then sprinkle with the toasted coconut. Let the chocolate set, 10 to 15 minutes.

My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

1 cup brown sugar, packed or 2 tablespoons molasses
1 cup white sugar (or Splenda or 1/2 cup Splenda for Baking)
2 large eggs

1/2 cup butter
2 cups flour
1 cup flaked coconut
1 teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats
1 cup raisins (optional) or 1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350°.
  • In mixing bowl cream shortening,butter,and sugars.
  • Add eggs and vanilla until blended.
  • Set aside.
  • In separate bowl, combine dry ingredients.
  • Withholding coconut until all other ingredients are blended.
  • Add coconut.
  • Combine wet and dry ingredients until moist.
  • Drop on greased cookie sheet about 1-2 inches apart.
  • Bake for 10 minutes or until golden brown.
  • Remove from oven immedietly- if overcooked cookies get HARD.

Steps:

Coconut oil, honey, oats....And tons of flavor options. Get creative with the add-ins....Dried cherries, cranberries, chocolate chips, coconut, raisins, cinnamon, almond extract, almonds...I do lots of variations! My favorite combinations are almond extract with almonds and dried cherries, and vanilla with chocolate chips, coconut and dried cherries. My husband's favorite is cinnamon with raisins. 1/2 cup brown sugar or 1/3 cup agave nectar
1/2 cup honey

  • In large mixer bowl with paddle attachment, cream coconut oil (not melted), brown sugar, agave and honey (or whatever combination you like of sweetener. Sugar is fine, too, but remember that agave and honey are sweeter than sugar.
  • Mix in the eggs, water and extract.
  • Stir together dry ingredients and add to wet ingredients.
  • Add your mix-ins (chocolate chips, coconut, dried fruit, nuts, etc).
  • Let cookie dough rest for a few minutes to let the whole wheat flour absorb the moisture. If your coconut oil was very liquid, you may refrigerate for a SHORT time.
  • Drop by tablespoons onto cookie sheets. (I use a #50 cookie scoop).
  • Bake at 350 degrees for 9-11 minutes.
