1 tablespoon finely chopped ginger
1/2 cup pineapple juice
2 tablespoons light brown sugar
1 tablespoon fish sauce
2 tablespoons light soy sauce
2 teaspoons sriracha sauce, plus 1-2 teaspoons for sauce
1/2 cup coconut milk, plus 1/4 cup
2 lbs chicken tenders
1 cup panko breadcrumbs
1/2 cup shredded sweetened coconut, toasted
1/3 cup salted peanuts, chopped
2 teaspoons salt
2 large eggs
5 cups broccoli florets
2 tablespoons olive oil
1/4 cup creamy peanut butter
1 cup fresh cilantro stem
1/2 cup toasted coconut
6 limes, wheels
serve with jasmine rice

  • 9x13 baking sheet.
  • Directions:.
  • Preheat oven to 400 degrees F. In a medium bowl, whisk to combine ginger, pineapple juice, light brown sugar, fish sauce, soy sauce, 2 teaspoons sriracha and 1/2 cup coconut milk. Place chicken tenders in a resealable bag and pour 1/2 cup marinade over. Reserve remaining marinade for peanut sauce. Seal and refrigerate chicken for at least 30 minutes and up to 4 hours.
  • Drain chicken and discard marinade in bag. In a medium bowl, stir to combine panko, shredded toasted coconut, chopped peanuts and 2 teaspoons salt. Place eggs in a medium bowl and whisk to combine. Coat chicken tenders in egg, then completely in the panko breading mixture, pressing to adhere. Place coated chicken on one side of prepared baking sheet.
  • Arrange broccoli florets on other side of the sheet pan and drizzle with olive oil and 2 tablespoons of reserved marinade. Season chicken and broccoli with salt and pepper. Bake until broccoli is tender and chicken is cooked through, about 20-25 minutes.
  • Place remaining marinade in a small saucepan and bring to a boil. Whisk in peanut butter remaining 1/4 cup coconut milk and 1-2 teaspoons sriracha until smooth.
  • Drizzle sauce over chicken and garnish with fresh cilantro, toasted coconut and lime wheels.

This creamy coconut lime sauce simply envelopes the chicken and makes for the tastiest easy dinner paired with steamed rice and some roasted broccoli!

2 tablespoons avocado oil, or sautéing oil of choice
3 boneless skinless chicken breasts, 1 1/2 pounds
1/2 cup minced yellow/white onion
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 red chili, thinly sliced, optional
2 teaspoons lime zest, grated with a microplane
1 can full fat coconut milk, 13.66 oz
1 tablespoon fish sauce
2 tablespoons freshly squeezed lime juice
1/4 cup chopped fresh cilantro and/or Thai basil, optional
Additional lime wedges for serving, and sliced chili for garnish if desired

Steps:

  • Preheat a 9″ skillet (I use cast iron) over medium high heat. When the pan is hot but not smoking, add 1 tablespoon of the oil and swirl to coat the bottom of the pan.
  • Add the chicken breasts to the pan and cook until browned on both sides, 2-3 minutes per side. Then remove the chicken from the pan and set it aside.
  • Add the remaining tablespoon of oil to the pan along with the onion, garlic, and ginger. Lower the heat to medium-low and cook stirring often until the onion softens and is lightly browned, 4-5 minutes.
  • Next add the optional chili, lime zest, coconut milk, and fish sauce. Bring the sauce to a boil, and using a wooden spoon, scrape up the browned bits from the bottom of the pan.
  • Lower the heat to maintain a simmer, and add the chicken breasts back to the pan. Cook for about 10 minutes, then turn the chicken breasts over and cook an additional 10 minutes, or until the chicken is just done in the center.
  • When the chicken is done, add the lime juice to the sauce, and season to taste with salt. Sprinkle the chopped fresh herbs over the top if using, and serve!

1 whole chicken (3 1/2 to 4 pounds), cut into 10 pieces
Cooked jasmine rice, shredded carrot, chopped peanuts, cilantro leaves, sliced shallot, and lime wedges, for serving

Steps:

  • In a large glass bowl, combine lime zest and juice, ginger, garlic, sugar, and 1 1/2 teaspoons salt. Slowly whisk in coconut milk until mixture is smooth. Submerge chicken in marinade, cover, and refrigerate for at least 4 and up to 12 hours.
  • Preheat oven to 475 degrees. Cover a rimmed baking sheet with foil and fit with a wire rack. Remove chicken from marinade and shake to remove excess. I would like to thank everyone who has posted such nice comments, but really Susannah deserves credit for this recipe. The green curry paste is quite hot, so you may want to adjust the curry paste for heat. I've updated the recipe to just reflect a few things noted in the comments as well as my own preparation methods that I've noticed in three years since I published this recipe. Enjoy! April 2009

14 ounces light coconut milk (1 can)
1 tablespoon green curry paste (use red if preferred)
1 teaspoon curry powder
1 teaspoon fresh ginger, minced
1 -2 teaspoon fresh garlic, minced
1/4 teaspoon ground red pepper (optional)
1 teaspoon salt
1 teaspoon black pepper
1 lb boneless skinless chicken breast half, fat removed, cut into small pieces
1 tablespoon creamy peanut butter
1 red bell pepper, roasted and sliced
4 ounces sliced water chestnuts, drained
1/2 cup onion, chopped
1/2 cup chopped green onion (white part only)
cilantro, washed and chopped
1/2 lb fettuccine, look for high-fiber
cooking spray
1 lime

Steps:

  • Slice lime into wedges, juice half the wedges. Set aside lime juice. Set aside rest of wedges for garnish.
  • Combine all sauce ingredients in a mixing bowl and set aside or refrigerate until ready to prepare the rest of the dish.
  • To roast the red bell pepper:.
  • -Cut pepper in half and remove seeds and white part. Place on broiler pan skin side up. Broil until skin just starts to char, about 5-7 minutes. Slice when cool. You could use a torch to char it if you like, or substitute jarred roasted red pepper slices.
  • In a medium bowl, whisk the sauce ingredients until thoroughly combined (milk through black pepper) and set aside.
  • Boil the pasta al dente according to box directions.
  • Coat a large skillet with cooking spray and sauté chicken until browned and cooked through, above 5-7 minutes.
  • Add the peanut butter and move around until it melts and coats the chicken.
  • Add the roasted red peppers, water chestnuts, onions and scallions and season with salt and pepper as you like. Sauté for about five minutes, until cooked through.
  • Pour the coconut milk mixture over the chicken and vegetables and stir gently. Leave on heat for another 3-5 minutes just to warm it all through and thicken a bit. Season with salt and pepper as needed. At the last minute, toss in cilantro & lime juice and stir through.
  • Put linguine in a large deep platter or decorative bowl and pour mixture over the top. Toss gently with tongs. Garnish with limes and cilantro as desired.

1 shallot (finely chopped )
3 garlic cloves (crushed)
2 tsp crushed ginger
4 cups chicken stock
400 g (14oz) coconut milk
1-2 tsp fish sauce (to taste )
2 tsp soy sauce
250 g (½lb) mushrooms (sliced)
500 g (1lb) chicken breasts (poached and shredded )
2 tsp lime juice
1 tsp salt
300 g (10oz) noodles
chilli (to serve)
coriander/cilantro (to serve )

Steps:

  • In a large pot or Dutch oven set over medium-high heat, add a few tablespoons of vegetable oil and cook the shallot, garlic and ginger until fragrant.
  • Pour in the chicken stock, coconut milk and a teaspoon or two fish sauce then bring to a simmer. Allow to cook for 5 minutes.
  • Add the slices mushrooms, shredded chicken, soy sauce and lime juice. Bring to a simmer and allow to cook for 10 minutes. Season to taste.
  • Cook the noodles according to package instructions then drain.
  • Place noodles in large serving bowls.
  • Ladle over the soup then garnish with fresh sliced chillies and cilantro/coriander.
