KETO COCONUT CAKE

- Preheat oven to 350°F (180°C).
- Grease a 9-inch cake pan with coconut oil or butter. Set aside.
- In a large bowl, using an electric beater on low/medium speed, beat the eggs with coconut cream, erythritol, coconut extract, and vanilla for 30-45 seconds or until slightly lighter in color.
- Beat in coconut flour and baking powder until the batter is shiny and has no lumps. Stop the beater and stir in the desiccated coconut.
- Transfer the coconut cake batter onto the prepared cake pan and spread evenly.
- Bake in center rack for 20-25 minutes on fan-mode or for 30-35 minutes or regular mode. I recommend you insert a pick in the center of the cake every 5 minutes from 20 minutes of baking. If it comes out clean or with a little bit of crumb, it's cooked! This is the best way to prevent a coconut flour cake from overbaking and getting dry (you want the crumb to be soft and moist!)
- Cool 5 minutes in the pan then transfer onto a cooling rack.
- Cool 1 hour on the rack, or wait until it reaches room temperature to frost. Only make the frosting 10 minutes before frosting the cake, or if you want to make the frosting ahead, don't store in the fridge, or it will get hard and difficult to spread.

Absolutely delicious, and a classic. This version is very light.Perfect for summer. I got a low score below for this cake, I would like to say that it is Very IMPORTANT THAT YOU BEAT THE EGGS CORRECTLY. This cake is almost similar to a chiffon, which relies heavily on the eggs for a good outcome. I also recommend that for ANY recipe you make it to try before you give it as a gift or make for a gathering.

- Preheat oven to 350°F Line three 8 inch round cake pans with waxed paper and grease them. In a bowl, sift together the flour and salt, set aside.
- Place 6 of the eggs in a large heatproof bowl set over hot water. With an electric mixer. beat until frothy.Gradually beat in 3/4 cup sugar until mixture doubles in volume and is thick enough to leave a ribbon trail when beaters are lifted, usually about 10 minutes.
- Remove the bowl from the hot water. fold in the orange rind, half the grated lemon rind and 1 tablespoon of the lemon juice, until blended. fold in coconut.
- Sift the flour mixture in three bathches, folding in thoroughly after each addition.
- Divide the mixture between the prepared pans.
- Bake until cakes pull away from sides of pans, 25-30 minutes, then unmold and transfer to cooling rack.
- In a bowl, blend the cornstarch with a little cold water to dissolve. Whisk in the reamining eggs until just blended. Set aside.
- In a saucepan, combine the remaining lemon rind and juice, the remaining sugar, butter and 1 cup of water.
- Over medium heat , bring the mixture to a boil. Whisk in the eggs and cornstarch, and return to a boil. Whisk constantly until thick, about 5 minutes. Remove from the heat. Cover with waxed paper to prevent a skin from forming and set aside.
- For the frosting, cream the butter and confectioner sugar until smoth. Stir in the lemon rind and enough lemon juice to obtain a thick, spreadable consistency.
- Sandwich the three cake layers with the lemon custard mixture. Spread the frosting over the top and sides.Cover the cake with the coconut, pressing in gently.

EGG-FREE TRIPLE LAYER COCONUT CAKE
This is a cool, refreshing refrigerated layer cake with intense coconut flavor. Using coconut milk in the cake batter gives the cake a moist texture, makes up for the lack of eggs and gives the cake a light coconut flavor. I have had success with this egg replacer mixture in other baking recipes. It is the equivalent of using two large eggs. The icing is creamy and delicious with flakes of coconut throughout and sprinkled atop the iced cake. Please note that in order for the icing to adhere properly to the cake, the cake itself MUST be completely cooled.

- Prepare icing eight hours before baking cake to allow enough time for it to set/chill. In a medium mixing bowl, whisk together Cool Whip, sour cream and sugar. Fold in 1 cup coconut. Chill for at least 8 hours.
- Preheat oven to 350°F
- Grease and generously flour three 9" cake pans.
- In a small bowl, whisk together 3 tbs. water, 3 tbs. oil and 2 teaspoons baking powder. Set aside.
- In a large bowl, combine all other ingredients and then add egg replacer mixture.
- With an electric mixer, beat on medium speed until smooth. Pour batter evenly into cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center of each cake comes out clean.
- Cool cakes on a wire rack for 1 to 2 hours or until completely cooled. Carefully turn cakes out of pan.
- Apply icing between each layer and on the top and sides of cake. (Note: Cakes must be completely cool. Otherwise, the icing will not adhere and will melt down the sides of the cake.).
- Sprinkle top and sides generously with remaining coconut.
- Refrigerate until ready to serve. Store left overs in refrigerator.
