Time 45m

Yield 4 servings

Number Of Ingredients 11

1/4 cup extra-virgin olive oil, plus more for the skillet
3 tablespoons soy sauce

1 tablespoon pure maple syrup
1 tablespoon Chinese mustard

Sesame seeds, for topping

SOY GINGER SALMON

Soy Ginger Salmon image

Baked Soy Ginger Salmon-An easy, foolproof recipe for moist and flavorful baked salmon with honey soy ginger glaze. Simple, healthy, and delicious!

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 20m

Number Of Ingredients 10

3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
2 cloves garlic (minced (about 2 teaspoons))
2 teaspoons grated fresh ginger
1 teaspoon honey
1/2 teaspoon garlic-chili paste (sriracha, or 1/4 teaspoon red pepper flakes)
1 pound skin-on salmon fillet* (at room temperature, cut into 3-4 portions)
2 teaspoons extra-virgin olive oil
Chopped green onions (for serving)
Toasted sesame seeds (for serving)

Steps:

  • Place a rack in the center of your oven and preheat to 425 degrees F. Place a large cast-iron skillet or other sturdy, ovenproof skillet on a burner set to high and heat for at least 10 minutes. You want the pan screaming hot or the salmon will stick to it.
  • In a small saucepan, stir together the soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer over medium high, then remove from heat and stir in the honey and chili paste. Remove a few spoonfuls of the cooked glaze in a separate bowl for serving.
  • Drizzle the salmon with the olive oil and brush so that it is evenly coated. Place the salmon skin-side up on the hot skillet. Let cook for about 3 minutes, totally undisturbed, until the salmon forms a nice crust. When the salmon turns opaque on the sides and starts to turn opaque on top, use a flexible spatula to flip the salmon so that it is skin-side down. Brush or spoon the remaining glaze in the saucepan all over the top. Place the skillet immediately into the oven and let cook for 6 minutes (the salmon will appear a little undercooked in the center but will finish cooking as it rests). Remove from the oven and cover with foil. Let rest 4 to 5 minutes. Serve immediately, topped with reserved glaze, chopped green onion, and sesame seeds.

HONEY GINGER GLAZED SALMON

Honey Ginger Glazed Salmon image

Fresh ginger and orange make the natural salmon flavor shine in this amazing Honey Glazed Grilled Salmon. Easy enough for a weeknight dinner; fancy enough for a celebration!

Provided by Renee

Categories     Main Dish

Time 1h20m

Number Of Ingredients 8

1½ pound salmon fillets (About ¾-1" inch thick)
1 tablespoon butter (for glaze)
¾ ounce fresh ginger (peeled & chopped)
2-3 cloves garlic (minced)
⅓ cup tamari (or light soy sauce (not gluten-free))
⅓ cup orange juice (freshly squeezed if possible)
¼ cup honey
1 green onion (finely chopped)

Steps:

  • In a medium bowl, whisk together chopped fresh ginger, minced garlic, soy sauce, orange juice, honey, and chopped green onion.
  • Lay salmon fillet in large dish or tray.
  • Pour Honey-Ginger Orange marinade over salmon.
  • Turn salmon over so skin side is facing up and exposed meat is immersed in marinade.
  • Cover, refrigerate, and allow to marinate at least 1 hour, and up to 24 hours.
  • When you are ready to cook the salmon, preheat barbecue (or stovetop grill) to medium. Remove the salmon from marinade and place the salmon on the grill mat. Reserve leftover marinade.Cover the barbecue and allow to cook for 4-6 minutes per ½-inch of thickness, or until the internal temperature reaches 125°F [52°C]. If you are using a grill mat, you should not need to flip the salmon unless it thicker than the suggested 3/4-inch. NOTE: If you are using a stovetop grill, you will need to flip the salmon halfway through.
  • Remove salmon from grill and allow to rest for 10 minutes before serving.
  • While the salmon is resting, strain the leftover marinade. In a small saucepan or skillet, bring the strained marinade to a boil in over medium heat, stirring frequently until the liquid is reduced by half.Remove sauce from heat and whisk in one tablespoon of butter.
  • Serve salmon on a bed of fresh greens and top with marinade reduction.

Heat the skillet with a couple of tablespoons of oil over high heat, add the salmon and cook until golden on both sides, covering with lid in between, about 5-6 minutes per side. Depending on the thickness of your salmon this might take more or less time. Aim for the center of the salmon to be 145F°.
  • Serve with rice or rice noodles as a side dish. Steamed broccoli, green beans and asparagus make a beautiful addition to this meal as well.

  • Heat the oil in a large oven-safe saute pan over medium high heat. When the pan is hot, season the salmon fillets with salt and pepper and add them to the pan, presentation side down. Cook 2-3 minutes without moving, until a golden crust forms. Turn the fillets over and transfer the pan to the oven. Cook 5-6 minutes until salmon is just cooked through but still slightly pink in the middle. Carefully remove the pan from the oven and transfer the salmon to a platter.
  • Pour off the drippings from the pan and heat the pan on the stove over medium high heat. Add the soy sauce mixture to the pan and cook 2-3 minutes until thickened. Pour the glaze over the salmon. Garnish with scallions if desired.

  • In a small bowl, whisk together the maple syrup, ginger, garlic, soy sauce, vinegar and 3 tablespoons olive oil. Set aside.
  • Heat a large (12-inch) dry cast-iron skillet over medium-high heat for 3 minutes, until it’s extremely hot (a drop of water flicked onto the pan should turn to steam almost immediately.) Meanwhile, pat the salmon fillets dry with paper towels, brush both sides with olive oil, and season all over with salt and pepper.
  • When the pan is ready, place the salmon fillets skin-side down in the pan and cook over medium-heat heat without moving for 4 minutes. Using a pair of tongs, wiggle the fillets to loosen the skin from the bottom of the pan, then carefully flip. Lower the heat to medium and cook for 4 to 5 more minutes, depending on the thickness of the fillets. Insert a small knife into the thickest part of the salmon to check for doneness. The salmon should be slightly opaque in the center.
  • Transfer to a rimmed plate or serving dish, and pour the glaze over the salmon, making sure to coat the fillets. Sprinkle with the scallions if using and serve hot.Note: I grate the ginger and garlic on a microplane zester. If you don't have one, you can finely mince them with a knife instead.Copyright 2018, Lidey Heuck, All Rights Reserved

  • Place the salmon fillets in a shallow dish and spoon the miso marinade over them. Cover the dish with plastic wrap and transfer to the refrigerator for at least 30 minutes.
  • Adjust the oven rack to 6 inches from he broiler unit and preheat the oven on broil for 5 minutes.
  • On the stove top, heat a cast iron griddle or cast iron skillet over high heat until it is almost smoking hot. With tongs, remove the salmon fillets and allow excess marinade to drip off, place the salmon fillets on the hot griddle and immediately transfer the griddle/skillet to the preheated oven. Broil for 5-6 minutes. This will depend on how thick your fillets are. The fillets will be cooking from the broiler and from the bottom as well because of the hot griddle.
