Coconut, cardamom, and condensed milk star in this super quick and easy Indian dessert that's great for gifting.

2 cups flaked coconut
1 (14 ounce) can sweetened condensed milk
2 pinches ground cardamom
2 drops vanilla extract
2 tablespoons semolina flour
½ cup flaked coconut, or more as needed

Steps:

  • Place 2 cups coconut into a pan and heat over low heat until lightly toasted, making sure not to burn or change color, 2 to 3 minutes. Remove from heat.
  • Bring a pot of water to a boil over high heat. Place unopened can of condensed milk into the middle of the pot; boil for 3 to 4 minutes. Remove using tongs; let cool slightly, about 5 minutes. Pour into coconut and add cardamom and vanilla extract. Mix well. Let cool enough to handle, about 5 minutes.
  • Form mixture into small balls using oiled hands, as mixture will be very sticky, adding semolina as needed if very wet and runny.
  • Place remaining coconut into a shallow bowl or on a plate. Roll ladoos in coconut and serve.

1 (14 ounce) can sweetened condensed milk
3 -3 1/2 cups unsweetened dry coconut powder
6 cardamom pods
1 tablespoon slivered almonds
1 teaspoon clarified butter, divided (ghee)

Steps:

  • Pour the condensed milk into a heavy saucepan and heat over medium flame for 2 minutes.
  • Add the coconut powder and stir until the mixture leaves the sides of the pan and becomes sticky.
  • Turn off heat and let it cool for 5-10 minutes.
  • Meanwhile, peel the cardmom pods and grind the seeds. If you don't have a mortar and pestle set, just place the seeds between 2 thickly folded pieces of cling wrap and crush it with any flat, reasonably heavy object.
  • Add the cardamom powder to the coconut mixture and mix well.
  • In a small pan, heat half the clarified butter and roast the almonds until golden brown. Set aside.
  • Grease your hands with a little clarified butter from the remaining half and start forming balls with the coconut mixture.
  • The ladoos should be roughly the size of golf balls and smoothened between your greased palms.
  • Decorate each ladoo with a few slivers of the almonds you roasted in step 6.

1/4 liter banana milk
8 g ghee
50 g sugar
1 coconut, grated
1 tablespoon pistachios, chopped

Steps:

  • Bring the milk to a boil.
  • Keep stirring on low flame till it is reduced to half the quantity.
  • Heat ghee in a wok.
  • Add sugar.
  • Reduce the flame when sugar melts.
  • Add the grated coconut and keep stirring it.
  • Add the thickened milk and stir till the mixture leaves the sides of the wok.
  • When cool, roll the mixture into ladoos (small round balls).
  • Serve!

  • Add the desiccated coconut to a frying pan or wok over medium heat. Warm the coconut, stirring frequently, until it just begins to brown. At this point, take the pan off the heat and immediately transfer the coconut to a medium-size mixing bowl.
  • Add roughly 3/4 of the condensed milk to the bowl and stir with a spatula until well-combined. We are aiming for a mixture which is slightly sticky to the touch - the best way to tell is to try to roll a ladoo and see if the mixture holds together. Adjust the consistency by adding more condensed milk or coconut until you can easily roll the ladoos.
  • When rolling the ladoos, I use a two-step method: first press the mixture within your hand (by folding your hand in half), switching between hands as necessary, and secondly use the centre of both hands to roll the ladoo into a perfect sphere.
  • Enjoy the ladoos plain, or coat in sugar after rolling. You can also garnish your ladoo with chopped pistachios, almonds or even rose petals!
