HONEY COCONUT ICE CREAM
This is a delightful tropical ice cream recipe that I found in a yard sale cook book. When you are in the mood for something new try this. This makes a gallon, so freeze it in your ice cream freezer in batches, or cut the recipe in half.

Steps:
- Add honey to eggs, mix well.
- Add cream, milk, lemon zest,vanilla and salt.
- Cook over Medium-low heat till reaching a scalding point, chill.
- Pour into ice cream freezer. Following directions on your freezer.
- When partialy frozen, add remaining ingredients.
- When fiished serve or pack into freezer containers.

COCONUT ICE CREAM
Coconut milk, honey and vanilla are the perfect combination to create this smooth, refreshing ice cream. I feel honey and vanilla really enhance the natural coconut flavor. I like to use vanilla bean paste because I love to see the tiny speckles of vanilla beans throughout the ice cream, but vanilla extract would be fine as well. My kids went bonkers for this ice cream--and to be completely honest, I did too. :)

- Into a metal bowl that has been chilled in the freezer, pour coconut milk, honey and vanilla.
- Using a hand mixer or stand mixer with whisk attachment, whisk until all ingredients are fully incorporated.
- Make sure your ice cream maker's freezer bowl is frozen solid (you don't want to hear even the slightest sloshing noise when shaken). Keep in the freezer until absolutely ready to pour mixture into the machine.
- Place mixture into the freezer tub of your ice cream maker and follow the manufacturer's instructions for freezing. It took only 15 minutes for my machine to churn and freeze this concoction into a beautiful, smooth ice cream.
- With a spatula, turn ice cream into a freezer storage container. Freeze for 2-4 hours or until desired texture.

- In a liquid measuring cup, pour one cup boiling water over the tea bags. Let steep for 4 minutes, then remove the bags (squeeze out some of the water they have absorbed).
- Shake up your cans of coconut milk before opening in case the coconut cream has separated from the coconut water. In a Dutch oven or a big, heavy-bottomed pot, whisk together the coconut milk, tea, honey, vanilla, spices and salt until thoroughly blended.
- If you are NOT adding arrowroot starch, you can go ahead and chill the mixture (if the coconut milk cream is still floating around in bits, first heat the mixture over medium heat for a few minutes while whisking until it the cream is incorporated, then cool).
- If you ARE adding arrowroot starch, heat the mixture over medium heat. In a small bowl, whisk the arrowroot starch with a few tablespoons of the coconut milk mixture until thoroughly blended. Pour the arrowroot mixture into the warm coconut milk mixture and bring it to a gentle boil, stirring frequently for one minute.

- 1. Make the almond milk by blending the almonds, dates, and scraped seeds from the vanilla bean with 2 cups of water until smooth. Strain the mixture through a nut milk bag or cloth and set aside.
- 2. Open the cans of coconut milk, being careful not to shake them. Separate off the heavy cream from each can. In a medium bowl, mix the coconut cream with 1 cup of almond milk, sea salt, and raw honey until combined. Pour into the bowl of an ice cream maker and process according to the manufacturer’s instructions.

- In a Dutch oven or a big, heavy-bottomed pot, combine the coconut milk, honey, water, vanilla, cinnamon and salt. Bring to a gentle simmer over medium heat while whisking often. While the mixture warms up, whisk the arrowroot starch with a couple tablespoons of the coconut milk mixture in a small bowl until thoroughly incorporated and no lumps remain.
- Once the coconut milk mixture reaches a gentle simmer, pour the arrowroot mixture into the pot and simmer, whisking constantly, for one minute. Remove from heat, let cool to room temperature, then place the bowl in the refrigerator until the mixture is completely and thoroughly chilled.
- Before you start your ice cream maker, place your future ice cream container in the freezer to chill. Use a spoon to scoop off the thickened top layer of ice cream and discard it. Whisk together the chilled mixture in case the honey has separated from the rest. Pour the mixture into your ice cream maker and freeze according to your manufacturer’s instructions, then transfer it to your chilled container. Freeze for several hours.
- When you’re ready for dessert, bring 2 cups water to a boil and pour the water over 8 chai tea bags. Steep for 4 minutes, then remove the bags (squeeze out some of the water they have absorbed). Scoop your ice cream into small bowls, then pour hot tea into the bowls. Serve immediately!
